A very nice place in the heart of Old St. Augustine. The menu selections are unique with wonderful presentation and taste. The various courses are spread out over time; you are never rushed or hurried. Staff are attentive, without being annoying. Recommend reservations. Be prepared to relax and enjoy wonderful food, in pleasant ambiance, in the heart of Old St. Augustine.

We had heard good things about Collage and wanted to try for ourselves. Collage is located in the middle of the old city on Hypolita Street. There were three of us and we each ordered something different. All of us enjoyed our meals trendously. Everything was cooked to perfection and the flavors of the sauces were incredible.

Great staff. Great food. Fantastic wine. Too often fine dining can be stuffy or come across as "trying too hard" whereas collage has a welcoming vibe that feels like old friends coming for a nice dinner. My husband and I went to celebrate our first night out since our son was born and our server, Meghan, was the best mix of helpful and attentive while letting us enjoy the night out. Whatever the occasion, a simple weeknight dinner or a special occasion, i would recommend giving Collage your business.

Collage offers a very contemporary cuisine with more than enough creativity that would never be described as boring or unimaginative. This applies throughout to include appetizers,salads, main entrees and desserts. A trip to Collage offers a very enjoyable and relaxing fine dining experience without going over the top. The service is very personal and attentive which complements the whole ambience of serenity that is offered here. It's definitely a destination dining experience for those "special" occasions that you want everything to be just right ! We have never been disappointed anytime we have dined there. Although the pricing is on the high side, the value delivered does not make one think twice about returning for another special evening out.

Incredible service and food.We will return.The quality of the food and the waitress Teresa was so spot on.We had heard that this was better than the Floridian,Press, and The Preserve and we can now confirm this. We moved here from Miami Florida June of this year and drove down from our new home in Palencia and it was well worth the drive.

My girlfriend and I made dined at Collage to celebrate her birthday. From start to finish, our dinner dining experience was more than spectacular. The staff went above and beyond to ensure everything was to our liking and it was. Thanks Collage for making my girlfriend's birthday dinner in St. Augustine grand and memorable.

This is by far the best restaurant in St. Augustine. The food is well prepared and the service is outstanding. It is apparent that the staff has been well trained and that in itself is a rare treat in this region. The atmosphere is sedate but not stuffy...a perfect place for a special meal. Even though expensive, the total dining experience is worth the price.

We arrived at the restaurant 15 minutes early and were told it would be a awhile before they could seat us. As we sat down outside the hostess came and told us our table was ready. This is a wine and beer only establishment with an extensive wine list. As this was our first visit we took a few minutes to review the menu and look at the surroundings.
The restaurant is quite small hosting no more than 50 guests and all but one of the tables were occupied. The menu had 5 appetizers, 4 salads and a dozen or more entrees. We ordered some bottled water as the local water is not particularly drinkable and when it came we ordered our meal.
We each ordered a salad and my wife ordered the New Zealand lamb rack while I the veal Orleans in a sherry wine sauce. I observed the table beside us as a patron received a very nice plate of sautéed scallops and commented on them to her.
We were served a very nice little loaf of warm bread with a roasted garlic head and a tasty bottle of olive oil. The bread was excellent. I ordered a bottle of Pinot Noir and it arrived at a good temperature and taste.
My wife's lamb was very nicely done and tasty even though it was not American lamb. My veal however was absolutely unacceptable and certainly not worth $32. There were three medallions of meat covered with a reasonably tasty sauce served on a mound of mashed potatoes. The "veal" scaloppini was CUBED meat. They were just like you get in a diner when you order chicken fried steak. I could not believe it. If the veal was not tender enough to serve without cubing it -- don't serve it!
As we were celebrating our 50th wedding anniversary (which we told the waitress and got sort of a smile ) and my wife's entree was quite good I chose to not make an issue of it.
Total price with the wine was about $130 which was what we expected to pay for our meal.
We will definitely try the restaurant again next year when we revisit St. Augustine but I won't order the Veal again.

Everything was great, nothing I 've experienced in the area comes close, really good, the servers are really professional, well trained, highly recommend.
