RM, simply put, is Grower Champagne. The designation RM is derived from the French wine Appellation d'Origine Contrôlée (AOC) system’s classification of Champagne Houses; Récoltants Manipulants (RM), signifies an artisanal farmer who bottles his own wine. Celebrating this passion and care, the salon will pay homage to these growers that rely solely on fruit from their own vineyards with inherently distinct terroir. Bringing a balance of knowledge and passion that will be an enriching testament to Chicago’s forward-thinking wine community, Wagner will tailor an obsessively curated portfolio, which will feature a large selection of estate-grown wines from these vignerons who are intensively involved from bud-break to bottling.
"It was too cool to sit outside but indoors was fantastic. Very intimate-feeling - really nice space. The food was a bit disappointing - nothing 'bad' - just expected a little more. I would still go back...especially to try the desserts."

"This place is beautiful! The atmosphere was great and the customer service was also nice. The food had a beautiful presentation but I was not very "wowed" by he flavors. I may not come back for dinner but definitely to enjoy a glass of wine on date night! Ordered items: vegetable ragout salmon tartar trio sufle"

"We stopped here for cocktails before dinner. We were seated promptly and ordered cocktails and the cheese platter. Although expensive we thought the food, service and atmosphere were fantastic. I realize they are known for their champagnes; however, we would recommend the inclusion of a Malbec wine and Deaths Door vodka for a more inspired bar menu."

"This place is fantastic on a warm summer night. The outdoor space is incredible! The wine list is very nice and has some great domestic offerings. The French offerings tend to be a little high. The food is ok, nothing to write home about. The service is attentive, but not incredible. The cheese list is pretty nice and offers a great selection of cow, sheep and goat cheeses. Overall, I would recommend this as a great place to go for a bottle of champagne and some cheese on a warm summer night. I wouldn't spend the money on having dinner here, spend it on a nicer bottle of champagne and a larger selection of cheese!"

"This restaurant is intimate, clean, and highly professional. Our server, Lauren, is spectacular. The food is excellent, the wines are very nice. Given that it not an open, lofty, big space, but is an out of the way oasis, it makes one feel like one is not in Chicago, and is a nice break."

"Had a great time! RM Champagne is a sexy little spot with a 'secret' entrance (you have to know that the lounge is around back; there's usually someone standing near the alley to let you know where it is). Great wine list and fun little desserts. Perfect for a group, girls night or date."

"The menu was pretty basic French/New American. Had some nice oysters and lobster deviled eggs, an awesome croquet madame and trout meuniere. The trout was a bit oily but very tasty and well prepared - whole on the bone. Definitely was biased towards groups of ladies having cocktails and dates, so go for that. The champagne cocktails were great - and the wine and champagne list is extensive."

"I had come earlier this week with a friend for dessert. It was so nice and the desserts were delicious! I had a date later in the week and was asked to pick the place and so I immediately thought of RM. To say t hat we enjoyed ourselves would be an understatement. The food was so sensual and the ambiance was absolutely perfect: intimate yet casual. Everything was perfection. Him and I tried things we never have before and it was all delicious. I would reccommend this place for anyone as a date spot or just to catch up with friends. I live the vintage French inspired decor and the candles give everything a warm glow."

"Excellent food, compliments to the chef. We shared the Plat de Mer and foie gras, had trout for dinner. All excellent. But service was so horrible, we will probably not be back. Our server did not know the menu or the champagnes, could not make recommendations. She literally just kept walking up to us (after finally giving us a menu) and saying "do you know what you want yet?" She did not notice we did not have menus, did not offer recommendations or pairings, did not review an extensive but confusing dessert menu, did not offer coffee or espresso after the meal. When I ordered the espresso, she forgot and brought the bill, but not the drink. This restaurant could benefit from a serious education of their wait staff"

"RM Champagne is a hidden gem within the West Loop. Every aspect of this quaint place was contagious; from the hidden walk way leading to the grand entrance to the wooden fireplace. Places like RM are rare to find in Chicago. I am excited to go back this summer in hopes to experience the outdoor seating. Definitely recommend for a great date night to a wonderful place to unwind with a close friend after a long day of work."

"In general a very nice place for a drink and a pre-dinner bite - not recommended for full on dining...yet. Champagne selection was wonderful, cheese options were extraordinary, but the entree selection was limited and there weren't enough options for small plates to really satisfy a party of four. In its current format, it couldn't be more ideal to precede a reservation (or wait list) at any of Randolph Street's other amazing eateries. The atmosphere, both leading up to the front door and once you're inside, are truly charming. Great service as well."

"Here is the most important thing to know about RM: the least expensive champagne by the glass is $34. The bottles start at $90. There are lower priced Prosecos but it's a champagne salon after all. There is a VERY limited menu. Maybe six small plates, cheeses and salads. The food was good but the portions were ridiculously small. Most annoying: our server came by three times to ask if she could go over the menu and served the amuse buche before our party was complete. (Our friend was late but the place was empty) Ultimately RM is confusing. The prices and birdlike portions are wrong for a group (unless you're a Kardashian). It's too loud and trendy to be romantic. Hope the young hipsters have trust funds."

"The food was great our server was extremely knowledgeable and the bartender was extremely pleasant. Only sour point of the night was the hostess. She was rude and entitled. We arrived 45 mins early which was fine because we wanted to sit and enjoy a glass or two at the bar. From the moment we arrived to the moment we were sat there were four tables that were empty and the hostess made it very clear we would be seated at our designated time. Your in customer service, acknowledge body language and try to resolve an issue not start one."

"I wanted to find a place that resembled Paris, France - a place we just moved from - for a romantic evening. It was wonderful. The only thing we noticed was you don't get much for the cost of what you pay. The next evening we went to a romantic restaurant with a full food menu and got so much more for around the same money. So, just know that it is expensive and mostly great for atmosphere. The wine & champagne list was impressive with more than just French options. The oysters were great, but know if you want crackers, they won't be saltines, but more fancy homemade buttery ones. It changes the taste. The desserts were good too. You get a selection of tiny bites, so if you can't decide, it's good."

"Here's the deal. I was going to write a long review but I ran out of characters so here is the abridged version. The positives are that the ambiance is awesome, the wine list is good, wait staff are friendly and knowledgeable. The negative was having a $150/person fixed dinner and wine pairing for Valentines day. They were supposed to send out an email explaining this beforehand but I didn't receive it nor did I feel this an appropriate medium of notification. It was an 8 course meal that my girlfriend wasn't really into and being that we were in a restaurant off an alley in the west loop and not downtown chicago, I thought the price was too high for what this place was. Good place and good staff, I just hope they learn from this."
