Parma, Italy is located in northwest Emilia-Romagna and is known widely for its food, namely Parmigiano Reggiano cheese and Prosciutto de Parma. It is also famous for signature pastas that you fill, such as tortellini, ravioli, and anolini. Parma is an architectural hub as well, featuring one of the oldest universities in the world-the University of Parma. Parma's great fortune with good meats and cheeses is due in large part to the Po River plain, which lies within Emilia-Romagna's boundaries and happens to be one of the most fertile tracts of farmland in Italy. As the seasons change, so do the various crops and the flavor of the Parmesan.
In tune with the value's of the Emilia-Romagna's region, Parma Trattoria's philosophy is to use organic ingredients from local farmers, and green, unaltered products whenever possible.
"We went to Parma for the first time on recommendation by a friend. The food is AMAZING! Best Italian food I've had in a long time. My only complaint is it took about an hour and a half from arriving to get our main courses. We did have bread and appetizers. We were celebrating a birthday and it happened to also be Father's Day so I think they were just slammed. We will definitely give Parma another try."

"I really like this place, but for lunch, there was no table service. Each diner orders at the counter and then choose a table. Your food is delivered as soon as it is ready, so my friend and I got our food delivered at different times. This restaurant seems too nice for this level of service, but I suppose it's necessary if there are not enough wait staff."

"This was our second time here. I've had several people rave about this restaurant so wanted to give it a couple of chances. For being run by first generation Italians, it was a bit of a let down. The red sauce had very little seasoning and was incredibly acidic. Tasted like some tomatoes were poured out of a can, heated up and put on pasta. The salads were good. The calamari had no seasoning on it whatsoever, so we added a ton of salt and pepper. Dessert was also not great. For the record, I've been to Italy 9 times, to all areas of the country. Not sure we'd go back to this restaurant. (Service was also excruciatingly slow, and the restaurant was only 1/2 full.)"

"My wife and found a true Italian food emporium! Having spent over 6 weeks in Northern Italy over the last 20 years, Parma has been transported from there to Superior, Colo. The menu has something for everyone who enjoys Italian foods. The salads were excellent portion size, fresh, crispy and a nice mix of flavors. We both selected an entrée that Forno style Polenta. The Polenta is creamy, cut into triangles and baked to have a crusty outside. My entrée was a Gargonzola and mushroom sauce on Forno Polenta. What a pleasure to the eye and tastebuds. My wife's entrée was Veal Piccata with the Forno Polenta. Having been raised in an immigrant family of N Italy, we never had polenta like this or I would never left home if we has meals like this."

"We are a group of senior citizens. Parma has become one of our favorite places for a group lunch. The service is always good, there are lots of delicious food choices, it is easy to get to, and there is plenty of parking."

"The food is above average, the polenta appetiser is fantastic, but the service ruined our meal. We waited nearly 25 minutes for our bottle of wine, one of our our appetizers arrived cold and our server was flat out rude. The place was busy, almost frenetic, but 1/3 of the tables were empty. Unfortunately, I can't justify a return trip until I hear their service has improved."

"We decided to eat family style so that we could try several dishes and salads. The descriptions of the dishes sounded wonderful but unfortunately the food wasn't quite as good as it sounded with the exception of the Parma salad which was excellent. We shared a carbonara, fruitti di mare, and ravioli spinaci. All were good but none were exceptional. The use of olive oil seemed heavy handed and rather than adding to the flavor it detracted.
The server was very pleasant but seemed rushed and a bit inattentive. The atmosphere is a bit noisy but in a pleasant, Friday night out sort of way.
Although I certainly wouldn't write this place off I'll be less inclined to rush back again. It was pleasant but not remarkable."

"Went with 6 (4adults 2 kids). Definitely recommend reservation on wkends as this place is pretty busy. App from mozzarella bar was fantastic. Could have had that as my whole meal. We had pasta, pizza, chicken dishes. Perhaps best pizza in Denver. Thin with lots of great cheese. Should have expected nothing less from a mozzarella bar! Will definitely be back soon. Can't wait to try dining on the outdoor patio and coming in the winter when the central fireplace is on."

"I had the chicken broccoli dish several weeks ago. It had a lot of liquidy creamy sauce at the bottom of the dish; I loved that the chef had been generous with the sauce, and that I could wipe up the sauce with a little bread. This time the sauce wasn't so liquidy and the chef wasn't that generous with the sauce.
It was the first time at the restaurant for the rest of the people at the table; they all thought the food was very good."

"We had a fairly large party to celebrate Mother's Day (9 people +kid) and had a fantastic time! We met at lunchtime, which does not have full service (more counter service, where you get your own drink refills, etc.) but it worked out great for our family. This restaurant is so fantastic that my family regularly talks about traveling from Highlands Ranch area to come for dinner."

"I very nearly did not find a place for my graduation dinner with my family, but Parma Trattoria has space available. Our waiter was amazing; he gave lots of excellent wine and food recommendations. In addition, he graciously took as many pictures as my mom asked for! I ordered the spaghetti carbonara, it was rich, salty, and the pasta was well cooked. My dad got a special with chicken stuffed with sausage, sooo good. I would highly recommend this restaurant for an excellent down to earth meal, with a good atmosphere!"

"Originally from Boston, where the Italians didn't just immigrate to the USA - they brought Italy to the USA. Nowhere was this more apparent than the exquiste cuisine that still prevails in the city's North End. Shortly after moving to Boulder two decades ago - locals directed me to two mainstreet Louisville restaraunts that represented "the best" the area had to offer. I thought I had moved to another planet. "Really???? This is Italian????" Finally - Parma delivers what Italian cusiine is all about - authentic, consistent, with dishes that bring you to there origins in Milan, Naples, Florence, and Rome. Awesome food, very well run establishedment by people who know what they're doing - and care a bunch about the product they deliver!"

"A tale of two dinners. My wife ordered the lamb chops and they were great and cooked perfectly, just as ordered. I ordered the NY Strip, one of the "House Specialties", and at $20, one of the most expensive items on the menu. Steak was ordered medium rare. It came out medium well to well, barely a glimpse of pink. To her credit, waitress offered to have another steak cooked, but I am not a big fan of sitting while my wife eats and then eating while she waits. I asked her to instead let the kitchen know the degree to which they had overcooked the steak. At that point, I would have expected a visit from someone such as the manager. So why would I recommend this restaurant after this experience? Because my wife's dinner was exceptionally good."

"Excellent! Good service, great food, generous wine and beer selection, reasonable prices - definitely a repeat. Porcini-truffle homemade ravioli - best I've ever tasted.Mozzarella bar with lots of options for appetizers plus great appetizers. Great for dinner or quick lunch (order & pay at bar, find a seat, and wait for server, convenient for getting back to work). Can't wait to spend some summer eves on the patio."

"We went to Parma with a group of 12 friends on a Saturday evening. The food was excellent, some of us had a couple of small plates others chose from the entres. Everything was fresh, I loved the seafood salad and polenta appetizer. Our young waiter was outstanding, although all the couples were sitting separately, he managed to provide us with separate checks. He was attentive and friendly. The only thing I didn't like this time was the location of our table. We were seated right at the entrance next to the bar area, I would have preferred a more intimate setting at the back of the restaurant. But I didn't specify this at the time of booking, so not a big deal. We come to Parma often and have never been disappointed."

"Mozzarella is not why to go here. Excellent homestyle Italian main dishes, decent winelist, friendly efficient waitstaff, beautiful fireplace & atmosphere, trattoria sound levels & family friendliness - those are why to go here. This is a wonderful place for a special occasion - we were 7 & a baby for an 86 year old's birthday. She was greeted by name - the bubbly was on the table on ice before we got there - and our waitress was as efficient and happy along with us as you can imagine. We are in love with Parma!"

"Parma was good, not fantastic, but good. The happy hour menu is generous with lots of variety. Overall, I felt the food lacked salt - including their signature mozzarella, which we had paired with roasted beets and greens. The meat plate (we had prosciutto and felino) were very good, but the arancini was (gasp) soggy. That's not a nice thing to do to an arancini. The service was stellar and when you're inside you can't tell the restaurant is on the corner of McCaslin and Hwy 36. Overall, I probably won't go again, but I would encourage people to give it a try!"

"This is my new favorite restaurant! Close to home, delicious food, casual but still upscale environment. The mozzarella bar is to die for! The green tomato marmalade is like candy, and the bread and oil/pesto mix is addicting (and makes great french toast the next day), and the entrees were great. The Saturday crowd was heavy but did not detract from the experience. There were quite a few well-behaved babies and toddlers (but note - no kids menu). We couldn't wait to go back, and it was just as good the next time."

"I'd definitely return if I'm in the area. The food was very good and the restaurant very vibrant on the Friday night that we visited. The service was a bit slow and haphazard once the restaurant got busy. It took a long time to track down our waitress at one point. The Happy Hour food and drink specials were a good value and allowed us to try and share several item, including pizzas and a variety of veggie appetizers. It would have been nice if the waitress informed us when Happy Hour was ending, so we could have placed a follow-up order while the special pricing was in effect. Happy Hour ended at 6 p.m."

"We visited on a Friday evening - Parma was packed! Luckily, they take reservations, so my party (of 2!) was seated as soon as we arrived. The menu is interesting - some familiar Italian fare for those out for a traditional meal, and lots of "Parma specialities" for those wanting something a bit out of the ordinary. The service was outstanding, as was our food. Parma was a great choice for a meal with a friend!"

"We had never been to Parma before and were a little taken back by the location within a strip mall type setting. Once inside, our concerns quickly passed. The food was excellent! The service was friendly and well orchestrated. Both entrees that we tried were unique recipes and very tasty. We will be back to try the Mozzarella Bar."

"My husband I were pleasantly surprised to eat at Parma Trattoria Mozzarella Bar. The food was outstanding and they were more than accomodating about my gluten free and dairy free diet restrictions. The wine they recommended was just so delicious. We couldn't finish drinking it so we took the wine home. We both will be back to Parma and are so glad we listened to our son, John, for recommending this wonderful restaurant."
