Chefs Club by Food & Wine - St. Regis Aspen
The St. Regis Aspen Resort has partnered with FOOD & WINE Magazine to debut Chefs Club, an innovative new restaurant concept that will bring the FOOD & WINE pages to life through their signature Best New Chefs Awards, which honors the country’s most promising up-and-coming chefs. Chefs Club will select a group of FOOD & WINE's Best New Chefs to curate a unique menu of seasonally-inspired, American Regional cuisine for The St. Regis Aspen Resort. George Mendes (2011) of Aldea, New York, NY, James Lewis (2011) of Bettola, Birmingham, Alabama, Alex Seidel (2010) of Fruition, Denver, Colorado and Sue Zemanick (2008) of Gautreau's, New Orleans, Louisiana, were chosen to inaugurate the menu for the summer of 2012, which will rotate bi-annually. New winter chefs will be announced in November of 2012.
"I can not express how amazing this place is. My friend and i spent the day at the remede spa and then headed up to the chefs club for dinner. we were early so we hit up the bar for a glass of wine. the bartender was so nice, he carried a conversation with us, told us about his time in aspen, what brought him there, and then showed us the menu. He explained to us the menu and all the chef's on there. Once we were ready to sit, the hostess sat us at a table of our choosing. The hostess asked if we wanted to meet the chef, w/o a hesitation we said yes. He was amazing, very nice and so sweet. He told us we were in for a treat.. the food was AMAZING!!! everyone needs to go!"

"Lovely dining experience here. The waiter's explanation of the signature styles of the different chefs and help navigating the menu with recommendations were very helpful. We tried a number of different dishes including some more unusual combinations like a raw tuna with vanilla and pear which was surprisingly delightful. Portions were small enough to allow us to share three starters all of which were memorable, but large enough to leave us feeling sated by the end of the meal. We enjoyed the variety of styles and ingredients on the menu. The staff were extremely attentive and professional and we felt very well attended throughout. A good choice for a party looking to experiment with new tastes but also have some deftly handled fallbacks."

"I loved the concept but the execution was poor. The ribeye had the look of a $64 ribeye but was almost flavorless. The duck was good, not great. The kale salad was the best thing I had all night. Not a foodie but don't mind paying for an exceptional meal. For the price, this was not exceptional."

"Excellent restaurant experience overall with an intriguing concept of big-name guest chefs creating the menu items, which were very interesting and creative. All four of our choices were delicious and prepared in a beautiful state-of-the-art open kitchen. Sadly the wine selection did not live up - limited, often uninspired selection with very narrow price ranges (high). And please, send your sommelier back to California - she does not know her stuff nor does she seem to care."

"the concept of this restaurant appealed to me but the prices did not. some of the entrees were way overpriced - even for aspen. the fish was great (and one of the less expensive choices). we could barely taste the truffle in the truffle appetizer - skip this for sure since it's one of the more $$$ items and falls flat. wine, cocktails very good and very pricey. love the decor and art. i guess if it's going to cost this much, i want it to knock my socks off which it did not."

"From beginning to end, Chef's Club was a disappointment. We weren't seated for our 8:00 reservation until 8:40, and were left sitting at the bar with others who were also annoyed and seated very late. Once we received our food, it came along with a chewy morsel of cardboard that ruined the meal. When we were presented with the bill we were charged for 2 glasses of Rose when in actuality had one glass of white, and finally, when leaving was presented by the hostess with 3 different coats before having to go and find mine myself. I might add that I found it piled up on the floor. Chef's Club was an unorganized, unprofessional mess."
