Etch is the newest culinary venture from Chef Deb Paquette. Located in the ground floor of the Encore tower in downtown Nashville, Etch offers a private dining room, full bar and an open kitchen with bar-style seating.

In her 13 years as Chef/Owner of Zola, Deb received accolades for Nashville’s best chef and Nashville’s best restaurant multiple times. Nashville restaurants are many, but Etch sets itself apart with bold flavors and colorful presentations.

The cuisine at Etch is complemented by our comprehensive wine list, featuring an extensive collection of wines from around the world. Guests can also enjoy our modern take on classic cocktails, along with a variety of eclectic beers and regional drafts.

"We were excited to try this restaurant in light of recent reviews. The starters and appetizers (roasted cauliflower and beet salad) were both very good, but the main courses did not live up to expectation. The pork tenderloin was cooked well and was very tender, but it was drenched in sauce and the seasoning was overpowering after a while. The fish was cut into seared strips and presented over a donut. It was not appealing to look at and the idea of cutting salmon into strips was not a good one. The fish ended up overcooked and overseasoned."

"We began at the bar with fantastic drinks that set us in a happy mood for our anniversary dinner. Our waitress was amazing--so helpful in reminding us of the tons of ingredients and layers of flavors. She told us a story about our wine selection and how the vintner had come to Nashville and how proceeds go to help animals, which made us feel even better about our delicious choice of syrah. The food was decadent. We both ordered the duck confit which is amazingly balanced between sweet and savory--the citrus bread slathered with a rich fois gras butter, blackberries, duck confit, and the shavings of candied orange peel and spicy pepper. WOW. I'll end there and just say that dinner and dessert were of the same vein."

"I don't know when I've ever had such beautifully presented food, in addition to its spot-on flavor. Most everything I tried (cocktail, shrimp and filo app, beet and berries salad, cobia entree, side of charred Brussels sprouts) was truly yummy. The one criticism I have involves the bread/pastry element. The rolls in the bread basket were uninspired (but, hey, at least a bread basket was served!), and both our desserts were misses, with unbalanced flavors and sorbet that just didn't belong. Eating out just once every month or so and having so much to choose from here in Nashville, it's hard to justify visiting any restaurant twice, but I feel sure I'll go back to Etch."

"This is my second trip to Etch and they did not disappoint. The food is simply amazing - as beautifully presented as it is delicious. The wait staff goes out of their way to make the evening special and always seems to find a way to do something extra to distinguish the restaurant. When the wine we selected did not meet our expectations, the waiter cheerfully replaced it with one to our liking - with no attitude. Etch is among the few "Go To" restaurants in my little black book I would select when an evening absolutely must be perfect."

"As others have said, this is one of Nashville's best. I don't know when I've ever had such beautifully presented food. Loved my cocktail, app, salad, side, and entree (yes, I went crazy this particular night). The pastry side was a disappointment, though: uninspired rolls (but, hey, at least they give you some!) and lackluster desserts. There are so many places to try in town now, it's hard to give any one place more than one shot, but I will go back here."

"My friend's scallops were delicious and plentiful...my pork tenderloin not as good. Cauliflower was excellent appetizer as was the duck confit. Butter tasting was fun but wish they had more choices of bread to try them on (wouldn't get this again). Dessert was amazing! Had the Panna Cotta and Chocolate Hazelnut Crunch. Chocolate was not too sweet and really good! The two desserts complimented each other well. I would come back just for the dessert!"

"Deb Parquette (spelling?) has outdone herself this time. We loved Cakewalk and dined frequently at Zola's, but Etch is a huge step up in terms of environment, polish, and food. It competes successfully with great restaurants in New York, San Francisco, or any other big city I've dined in. We entertained out-of-town friends at Etch and they were also impressed. "The food at Etch was good, but a bit overdone. While the menu was certainly inspired, and the quality was very good, the large number of ingredients that went into each dish in some cases did not blend as well as one would hope. The menu did not seem to focus on the main part of the dish, but rather on the accoutrements to the main dish. Some dishes has over 10 ingredients on the side of the main dish and in some cases did not showcase the excellently prepared fish, or beef. I would have preferred a more simplistic preparation which highlights the excellence of the food. But all in all, the taste was good, but as I said before, a bit over-embelished."

"One of the best dinners I've ever had. The roasted cauliflower appetizer was fantastic...smoky taste with a hint of truffle oil and a smoked pea pesto. The beet and berry salad was nicely portioned, with goat cheese complimenting the beets. The star of the show was the pork tenderloin...smoked tenderloin on a sliced potato bed, topped with chorizo sausage, porcini mushrooms, and mangego cheese, finished with a brown wild mushroom sauce and more of the pea pesto. Absolutely outstanding. Paired it with a Bonaccorsi pinot noir from So. Cal. Panna cotta with blood orange sorbet for dessert, and dinner was over way too soon. Our service was excellent...our waiter was very well-versed on the dishes and what went into them."

"Etch has now added a few of the dishes from the Chef Paquette's Zola Restaurant, which gives a great Turkish/Mediterranean influence that is much enjoyed. My only advice is for them to be careful to get too many starters in the $14 category and entrees in the +$30 area. While the food is excellent, the portions can be somewhat small, which while not always bad, can cause some concern over virtually always spending $150 for two people with two starters, two entrees and the most reasonable bottle of wine."

"Chef Deb and her crew turn out wonderful food full of interesting flavors. Our server James was fabulous and his recommendations were excellent. Wine list is interesting (especially champagne) if a bit pricey so corkage at $20 not a bad way to go; upon request, my wine was decanted tableside. We will return!"

"Had the filet this time, amazing! Anybody can just grill a steak, but Etch layers it with flavors by using the sous vide technique, finishing on the grill to medium rare, and adding accompaniments such as ribbons of perfectly fresh asparagus and duck "butter." Paired with the vegetable of the day, the "Southern Mushrooms," it was a perfect celebration meal."

"A spectacular dinner from start to finish. Very unique and delicious food. We never had sparking Riesling before and it was excellent. The duck confit was superb as was the Etch salad. We both had the venison. Interesting blend of flavors that actually worked together extremely well. Service was impeccable."

"Interesting experience... almost like they are trying too hard.
Most food was excellent, they incorporate creative use of ingredients. One drawback on the pork dish... the filet was served medium-rare. Explanation was that its unnecessary to fully cook pork if you have a clean filet. Nonsense.
Lots of fanfare over the food, but lackluster wine list... glass & right angles ambiance. Not my favorite in Nashville."

"Great dining! Have been there twice and have not been disappointed either time. The cobia dish is outstanding as well as the beet and berry salad. Then timing of bringing out the order is perfect and the temperature of the food is just right. Will highly recommend to anyone looking for a great meal!"

"We had a really enjoyable evening. The service was outstanding and we felt we were in New York, not Nashville, TN. We did not order the cobia dish because the diners at the next table said it was too sweet for their palate. Our dinner guests said this was typical of Cakewalk and Zola that I understand were the other restaurants that the chef/owner has had."

"I moved to Nashville in 1974. Divorced in 1979...single since, ...eaten out a lot!

I have eaten at ETCH twice. Both times were memoriable.

The food was excellent....the many different flavors, perfectly blended to provide a unique dining experience.

This is not an "inexpensive" restaurant, but I always come away thinking it was well worth it!

I do think this is the best meal in town! Need to polish up on their service...they are so very busy because they are so very good!

"I would have to rate this one of my top restaurant choices in Nashville or any other city! The short rib appetizer was phenomenal. The roasted cauliflower with pea pesto was a "must have". There were four in our party and everyone claimed to have the best dish even though they were all different. The waiters were knowledgable about the food and wine. The service was as awesome as the food."
