The new restaurant, opened by Chef Tyler Stokes, who has a spontaneous, open minded approach to food, has built a reputation the last five years in the valley as someone who cooks with passion, integrity and respect for food and the diner alike. Dashi will focus on modern Asian cuisine with a strong New American influence and a commitment to local products and farmers The menu at dashi will be dictated by the seasons and the inspiration that each one brings. The freshest, most sustainable seafood will be presented in sushi rolls, sashimi, salads and plated entrees designed to show the qualities and versatility of each individual fish. Local, organic and natural meats will be featured as well as wild game and fowl.
"Visited with trained Chefs and they felt the Asian Fusion menu was interesting, had local and international appeal and very well done. The presentations were amazing and the menu includes several very trendy preparations. This is certainly a must visit in Ketchum if you are a foodie!"
