Matthieu is Executive Chef at the InterContinental Montreal, and will now also direct the kitchens of the Pommery Ice Restaurant, the first ice restaurant of its kind in North America.
The Pommery ice Restaurant is the city’s top spot for romantic tête-à-têtes, meals with friends or for celebrating private events with flair.

"The place is visually beautiful but the food is terrible…actually inedible! Our waiter was also extremely rude. It’s a great place to look at but I would not recommend actually dinning there"

"Great experience to try once. Food was ok, not great, and the courses moved too slowly. This isn't exactly a dinner you want to linger over...it's freezing! It wasn't even crowded so I don't know why service was so slow."

"Amazing & Gorgeous restaurant, made from ice & snow.It's like winter wonderland.
I had lunch & dinner. Greet immediatly by Host & waitress Milana.Milana was super nice & professional,always with smile.....besides they work in freezing t.-7 C (minus) .Unbelivable...even they work double.Lunch was very nice,but Dinner was just amazing !!!Very romantic atmosphere,,,Chesnut soup was delicious,& chicken with stew veg. was fantastic,,,,+ I got dessert on the house, lovely compliment from Ice Restaurant.I met Executive Chef Matthieu Saunier & he showed me kitchen & how they work.Plus, everybody speak French & English,I don't speak French.

"The concept is great. The place is cool but complete lack of execution. The menu sounds good but the service is very slow and it is too cold to linger. We went for lunch and had to pay admission fee on top of high lunch cost. The hotel itself is neat to see but again just does not live up to description. I would not go again."

"Eating in a restaurant made entirely of ice is certainly an amazing experience! While it is very expensive, the price is worth it for this one-time opportunity. The food is par (although the warm cheese fondue and the Cornish game hen were delightful). The biggest issue was our server was rather unpleasant. Perhaps it is a cultural thing because a majority of the waitstaff we had in Montreal weren't friendly. Either which way, the ambiance was incredible! You need reservations (otherwise you'll have to pay the entrance fee to get into the Snow Village) and dress WARMLY! If you think you have too many layers on - you're wrong!"
