Elevation
Elevation, the student operated restaurant at the Cascade Culinary Institute, connects the public and students as an integral part of the curriculum. Patrons are actively engaged via an e-survey, where they can provide feedback about their dining and service experience. The guest feedback is then integrated into the instructional process on a daily basis to influence both individual and group learning. On a quarterly basis, students present on what they have learned from the feedback and how they have used this input to enhance their cooking and service skill development.
Learning outcomes within Elevation associate with developing confidence in cooking and service techniques, effective communication skills, and teamwork as they prepare for a transition to their career path in the hospitality industry.

"I received a gift card to Elevation as a present. It took me six months to go, and now I wish I hadn't delayed my visit for so long! The meal, service and atmosphere was top notch! As soon as our meet was over we met friends for drinks and immediately recommended dining at Elevation to them! We will be back!"

"This place has a great atmosphere. Went there for our 5yr and it was perfect. Great wines, we both had cab's and they were delicious. I would definately recommend to anyone that wants a special evening. Crab cakes and pork tenderloin was brilliantly cooked. The salmon and halibut had good flavor."

"We moved from Seattle 3 years ago and finally made here. We should have come earlier. We loved dining out in Seattle at fun, trendy, eclectic, gourmet restaurants. We never thought anything in Bend could rival Seattle. We were wrong! Elevation was the best restaurant that we have eaten at in Bend and it compares wonderfully with anything in Seattle!! The food was beautifully prepared and presented.....very tasty!! We will definitely be back and we will be telling our friends!! Superb!! We would love to hear about any special events that are planned..."

"Really enjoy the whole experience. A fancy lunch is a decadent treat, but affordable when Elevation prepares it. The servers and kitchen crew did another outstanding job which our group appreciated. When you visit, just ask questions about the menu descriptions and plates you are served, you will learn a lot from the students this way.

"This was our second visit and there was a notable difference in service. The first occasion was in February which is the middle of the term. Service, food and atmosphere were all great. The second visit was at the begining of the current
term and once again the food was great in selection, presentation and taste. But the service was slow and the staff seemed to be bickering over who,should do what. "This was our first time at Elevation, and our visit was in celebration of my husband's birthday. We thoroughly enjoyed the evening. The waiter was charming and answered our questions about the food menu in a knowledgeable way. The appetizers and the entrees were exceptional -not only delicious, but beautifully presented. We each had something different and both were very happy with our choices. The only disappointment was that the restaurant had run out of one of the desserts, leaving us with only the apple fritter. Neither of us liked it much. However, we will definitely be back and will recommend the restaurant to our friends. Thank you for a wonderful evening!"

"Like Hyde Park in New York and Greystone, in CA,(restaurants of the CIA), Elevation is a restaurant run by the community college in Bend, Oregon. The students are under supervision of a professional staff but do all the tasks necessary to get the inspiring food to your table. They work every station in the modern kitchen as well as every aspect of the front-of-the-house from greeter, to waiter, to busing. Don't expect perfection, especially with the service, but the desire to please, the pure enthusiasm, and generally the level of good service made the entire meal a huge pleasure. Elevation has been open for less than a year and it is hard to find. The entire area of the campus is new and was not on our GPS. The food was excellent!"

"Wow! This meal goes on my top 10 list of all-time best meals ever. And I eat out a lot, traveling on business. The place is a little hard to find, but well worth the hunt. The food was imaginative, and great-tasting, and the service was very attentive, if maybe just a little too stiff and formal - but then they're students, so that's OK. The night I was there, it was a prix fixe of $25. Something of this quality would easily have been twice that, or more, anyplace else. These students aren't "practicing" on their guests. They've got it! At the end of the meal, they even brought me out an iPad on which to take a survey about the experience. How cool is that? The next time I'm in Bend, Elevation will definitely be one of my stops."

"Our 4-person table had one guest with hearing loss so the quieter atmosphere helped her a lot. I cleaned my plate(s) which I seldom do -- food was extraordinary. The menu choices meant I could bring my husband here because there was a nice selection of vegetarian/fish/low fat. You're doing a great job and I think I'd like to try dinner with you!"

"Food was good, though the potato dish was not heated through. All in all a nice lunch. One note though - lunch ran 1 hour and 15 minutes, not good for those of us with a one hour lunch break."

"I love the atmosphere and the lovely staff at Elevation. Everyone is working really hard to make the dining experience a positive one, and it always is for me. This was my first lunch at Elevation, and I loved it as much as the dinners I have had there. From salad to dessert, the food was all delicious (sturgeon with three different dipping sauces, an apple kimchi salad, sweet potato gallettes)."

"This place was great. Elevation is a teaching restaurant run by the students of the Cascade Culinary Institute. Although the semester just started everything about our visit was great. Everyone in our party was blown away with the quality of the food. Between us we had most of the items on the menu and all of it was prepared well and presented elegantly. If you haven't tried this place you really should. You won't be disappointed."
