Tilth
Tilth features New American cuisine prepared with certified-organic or wild ingredients sourced from as many local farmers we are able to support. Our executive chef and owner, Maria Hines, is a James Beard Award winner for Best Chef of the Northwest, as well as one of Food & Wine Magazine’s 10 Best New Chefs of 2005 and this year she is a semifinalist for Outstanding Chef. In 2008, the New York Times deemed Tilth one of the best new restaurants in the country. Tilth received its organic certification from Oregon Tilth, an unaffiliated organization that promotes sustainability.

"This was my first visit and I still have to learn about the dishes, but my impression is that this restaurant serves small, or even tiny, portions of delicious food that are exquisitely prepared and presented. I would go back with less of an appetite and more prepared to focus my attention on each little item, the better to savor the experience."

"We thoroughly enjoyed our brunch. The quiche was made with very creamy eggs and thin strips of poblano chiles. Bloody Mary was great and had a kick. We were advise re: portions and were able to order accordingly. Everything was great. They were very helpful in suggesting activities for us to enjoy while in the Seattle area. We will return."

"We have been to Tilth about 5 times now over the past 3 years. The food is always excellent, the service is wonderful and wine pairings are spot on. Being gourmet, they are extremely expensive and we always spend about 6 times more than if we were to go to dinner at any other restaurant, but we expect that because eating gourmet is a special occasion for us.
The staff are extremely friendly and make you feel special when you're there. There seems to be very little turn over in waitstaff, which says a lot for the quality of the restaurant and of the people who work there."

"A restaurant that has simple, sophisticated food. I've been wanting to dine at this restaurant because it is owned by Chef Maria Hines--a James Beard awardee and winner of Iron Chef (vs. Morimoto). It certainly didn't disappoint. We were a little early for our reservation but were seated right away. I went there with my husband and kid. They have full and have sizes for entrees; half size was perfect for my daughter. There isn't a children's menu so picky eaters don't have much to go on. Staff was pleasant; didn't rush us through our meal. Good wine selection. Tilth adheres to very seasonal, local and organic ingredients so the selection is very limited and sticks to very traditional fare--steak, tuna, clams. Wonderful, delicious food."

"A charming atmospheric spot in a converted old house charnlngly lit. The casual ambience is counterpoint to the ambitious food which offers organic, locally sourced ingredients either a la carte or as part of several tasting menus, geared toward the carnivore, the vegetarian and even the vegan. "At home we go to great lengths to eat organic foods, local and seasonal whenever possible. Unfortunately there are not many restaurants that offer these qualities so we don't eat out much anymore. We heard about Tilth - a restaurant in Wallingford that serves only organic seasonal and local foods and had to give it a try. The food is offered in the form of small plates, so you can try many different foods. Everything we had was amazing! This is where I will go when I want a special night out with my spouse from now on!"

"I went with high hopes, & was a bit disappointed in the experience. Some of the food *was* excellent ( the yogurt flan, the pea soup, the desserts) but some was just so-so (the gnudi were wonderful, but the fiddlehead ferns were tough & tasteless) & some was just plain unsuccessful (the roasted clams were overwhelmed by the chorizo, some of the cheeses were dry & tasteless). The service was friendly & obliging, but a bit inept, & insufficiently knowledgeable. Could use a more helpful menu: details on which ingredients are part of dishes & which on the side. It was by no means a bad experience, but for the the price it should have been a better one. I'll try the owner's other restaurants, but I doubt I'll go back to Tilth."

"We had a super meal at Tilth. The food was excellent and inventive. Two constructive pieces of feedback. The first is Tilth will cost you more than you might expect. Four of us with one glass of wine each, no dessert and a couple of appetizers was $50 per person. Also, we were surprised at the small size of the meals given the high prices. My wife got the small order of tuna that was really really small and my $25 ricotta gnudi (pasta) had only around 6 or 7 of the small ricotta dumplings. Everyone at the table thought they gave me the appetizer portion it was so small.
With those caveats in mind tho our meal was super."

"The place to go for a true dining experience. We chose the Spring 8 course dinner and it was fresh and so flavorful. The dishes were spread out perfectly with portions at just the right amounts and each were described as far as ingredients and even suggestions on how to best enjoy each dish. Our server Jen suggested the perfect wine that was in our price range and taste preference that went perfectly with our dinner. This was a birthday dinner for my husband and I made a note on the online reservation regarding the special occasion. I was not sure if it would be noted - again I was pleasantly surprised with complimentary glasses of champagne at our seating and dessert with, of course, a lit candle."

"Although we started out with our hostess being somewhat prissy about just EXACTLY where our table should be positioned, the rest of the evening turned into our kir royale just the way we asked for them, an absolutely stupendous dinner and attentive service. The space is a bit "bistro small" but it really didn't get very noisey until halfway throught the night and then it was still moderate. If you like people watching AND having a phenomenal meal, with potentially more space and slightly less noise, ask for a table outside along the sidewalk."

"1st time for both of us. Have wanted to go here since I saw M. Hines beat Morimoto on Iron Chef-impressive. Worried that it would be overhyped but we weren't disappointed. Small, cozy restaurant in homelike setting. Started w/ smoked yogurt flan w/c was light, unique & interesting citrus/greens flavor. This was followed by short ribs over some greens, cooked so it fell off the bone. The pana cotta dessert was a perfect ending. My friend had the pea soup with creme fraiche, roasted chicken & creme brulee - all very well-prepared & well-seasoned. Wine list had a nice selection by the glass or bottle. I like the fact that the menu promotes local, seasonal ingredients. Will return. Highly recommended."

"Enjoyed a great meal at Tilth with friends during Seattle Restaurant Week. I was disappointed that the bean cassoulet was taken off the menu between the time we got the Restaurant Week notice and our visit, but our server explained that this is considered a "winter" dish and had been taken off two nights before we ate there. She assured us it would be back later in the year - which is good news as this is one of the most amazing dishes I've ever eaten. I tried the smoked yogurt flan, which was really delicious and different - never had a dairy item that had a smoky flavor to it. The marinated tofu and quinoa was also very flavorful and presented nicely. Can't beat the Theo chocolate pudding for dessert."

"We were disappointed. Overall the food was good, but not inspired. We had been there before and had very good food. This time, we had the 8 course grand tasting. The spinach salad was excellent, as was the yogurt flan. The pea soup was bland, the risotto a little under-cooked,the tuna not particularly tasty, the hanger steak, cheese plate, and dessert were all OK. It seemed that the same crispy greens were on several of the courses. The wine list was alright, but not a lot of big names. The prices were reasonable. We would recommend Tilth with reservations."

I found the flavors intriguing, however, I can't say I would want to return to experience them again. The server was endearingly attentive and informative, yet the atmosphere had an edge of stuffiness. I was impressed by the wine pairing, it was probably my favorite feature. "The food was excellent. The service was very good. A quant little restaurant that because of the limited size tends to seem a bit loud on an occasion. I don't mind paying for a great meal so when I eat out I expect to spend a few hard earned dollars. If I had a complaint, it would simply be that this restaurant is just a bit over priced. I know I can spend the same amount in a few places in town and feel like my money has gone a bit further. Kudos to the chef and the staff because they have a great product. If they could find a way to price it a bit more appropriately, I would have given them 5 stars."

"My love affair has officially ended. I have had high hopes that Tilth would be able to maintain its high quality and its vision but its execution has slowly declined over the years. During our Restaurant Week visit, the highlights were the risotto (though it was missing the pine nuts, theo chocolate pudding, & bread/butter. The amuse bouche (fergola with mini garnish) was bland, the rib entree was missing the rhubarb sauce, the clams in the penn cove clams dish were so dried out that 3 grains of rice side by side would be larger than any of the clams and the accompanying chorizo had no other taste than salt. We were embarrased by the meal since we were treating a partner in one of Washington's well known wineries. Too bad."

"I haven't had dinner there yet, however I am head over heels with your brunch. It's quiet, bright, and the food/coffee are absolutely delicious. The staff is great too. I never felt rushed and felt very taken care of. Favorite brunch in Seattle."

"It is always a special night when I get to eat at Tilth. My friend and I participated in restaurant week, meaning we had three courses for a set price from a selected menu. I have never been disappointed by a dish at Tilth, and most of the time am left wondering how the cooks can make the food taste the way they do. Delightful!
After our meal - to fight off a food induced coma - my friend and I walked a couple blocks to the Good Shepherd Center and through the Seattle Tilth demonstration garden. It seemed fitting to see local Cascadia plants thriving after partaking in their delicious bounty."

"Cosy place with great service. However, food was average only- dishes were inventive but lacked flavour and some, overcooked.We had the yogurt flan and risotto for appetizers; manila clams and pork ribs for our entrees. Not sure if the food was subpar as we had the seattle restaurant week menu, and the place was packed. Saving grace were the desserts- maple creme brulee and chocolate pudding, both were delicious. Being food enthusiasts, we were disappointed as the reviews were good and we were looking forward to a great meal."

"This was my first time here and found it easy enough but it had the appearance of being closed at first look. Upon entering - the place was packed! Food was good - healthy options that also taste good, but portions and selections are minimal. I enjoyed everything we ordered (we share) but was still a little hungry when it was over. Wouldn't mind seeing a few other side dishes as options. Went on Restaurant Week, so that might have something to do with options. Service was friendly. If healthy food options is your priority I would recommend it, if you want a side of beef - not so much."

"We went to Tilth for brunch and it was terrific. Food was spectacular - hearty portions, not pretentious, and I had the chicken gravy and biscuits. Far and away the best biscuits I have had in my life. Dining partner had the mini duck burgers and a half order of French toast, duck cooked perfectly and house-made condiments were the highlight. They make a house-made bloody mary mix...I want one right now, also the best I ever had. We had reservations, which I recommend, as the brunch business was booming!"
