"As the name implies, everything was way too over seasoned. A good analogy would be to dip your $60 strip steak in balsamic glaze and throw some sprouts on top. Wouldn't recommend to anyone I know."

"Vegas is full of famous chef's who just put their name on the door and most of those places are lousy, over priced and lack class. Sage is the opposite. It is by far one of the best places to eat in Vegas. The wine list is extensive but if you ask the sommelier for the best bang for you buck you will get a great bottle. I can't wait to go back."

"I really can't say enough good things about this restaurant! My husband & I shared the oyster appetizer, and for the main course I had the short ribs, and my husband had the veal cheeks. Both of us were in agreement that it was one of the best meals we've experienced. Each course was seasoned to perfection, and the presentation & service were outstanding. Our only disappointment was the fact that we had late reservations - 10pm - and felt it was too late for us to do the Chef's Tasting Menu. We are from Chicago, and will be making reservations soon for the Green Zebra!"

"Aria Hotel offers many options for dining, but sincerly, I preferred Sage. Vibrant scenic view at the bar, quite noisy for romantic moment but it's really impresive the view at the bar. The food is superb, the foie-gras is exquisite and the octopus too. The red snapper was delicious but the lobster mezzalunas were quite disappointing. Good place and prices are just reasonables. Good service."

"This was a beautiful taste experience. We both had the $89 tasting menu and each and every course was to die for! I supplemented the first course for the fois gras bruele which was decadent and unlike anything I'd had before. The Waygu tartar was very complex in flavour and for my dinner guest who did not think he liked raw beef, he gobbled this right up! The rabbit sadle and bay scallop were equally decadent, and the 48hr beef belly was melt-in-your-mouth heaven (I do not like fatty meats, but this just completely melted into pure rich ecstasy, I didn't mind). I substituted the snapper for their third course options as I wanted fish and this was divine! One side crisp almost like deep fried brioche and had a melody of flavours dancing....."

"This restaurant was reccomended by a friend. I had high hope for it because they are foodies and love what the eat. I was not disappointed the atmoshphere and the service were excellent. "We reserved a table at Sage for a special occasion. Both myself and my significant other ordered the seasonal tasting menu, and then basically split the choices. The food was excellent, well-prepared, rightly portioned, and comfortably seasoned, with a couple of excellent little twists in each course. Nothing mind-blowing, but here was not a bad item on the menu. Our service was perfect.
The ambiance was a touch too new school for my tastes. Popular/dance music played at a somewhat muted volume seemed to rush or pulse people in and out, and we were much more inclined to talk the night away at the table. The music, and the general feel seemed to push you out the door. That being said, it is a beautiful set-up."

"We were disappointed with the food. After reading great reviews the anticipation was for an amazing food experience. Unfortunately, that was not the case. The food was uninspired and really not very good. Lamb dish tasted like something our of a can or something one find in a buffet at a lousy event. I know that sounds harsh but it is truly what we thought at the time. The sauce on the lamb was not good--gross actually and the lamb (one of our favorites)had a not-great texture and was pretty bland. the whole thing reminded us of stroganoff which is not good."

"My evening at Sage was certainly one of the finest dining experiences I have ever had. I was greeted warmly by two beautiful hostesses and by a gentleman who appeared to be the manager. My reservation confirmed, I was immediately whisked away to a great spot in view of the bar area. The seating was very comfortable and relaxed. The food was course after course of delectable and exquisitely prepared and perfectly presented plates served with style by a gentleman waiter that was knowledgeable about everything Sage. The Maine Diver Day Scallops were the best thing I can recall ever eating. Ever. The presentation and enjoyment of my induction into the "Absinthe Club" was the culmination of an amazing experience. My highest recommendation."

Spanish octopus was as unique a dish as I have ever tried. Pork Loin, Scallops, and Short Ribs all mind-blowing.
Great booze as well, the dessert we had was amazing- although it was the only one out of 5 on the menu that sounded appealing."

"Our 3rd dinner at Sage and our 3 perfect dinner there. It's that simple - perfection on the plate, on the tongue, in the wineglass, in the ambiance and the service. Aria has the strongest lineup of restaurants in Las Vegas and each is phenomenal, with Sage being our favorite. Even though we want to try other tables in town, we insist on one dinner at Sage every visit."

"I ordered the chef's selection with my date, and with each course the food got better and better. It was topped off with a very interesting hazelnut dessert with olive oil ice cream and a touch of sage. Strange but extremely delicious."

"My girlfriend and I both ordered the Chef tasting menu (4 courses). It was perfect. Just the right amount of meticulously prepared food before a night on the town. The service was amazing and the drink pairings allowed us not worry about making any decisions. We capped the dinner off with some Absinthe (very unique and worth a try).
As a side note: My girlfriend is Gluten Free and Sage had no problem accommodating."

"Arrived at 7:30 for our 8:15...checked with reception then had a couple of rounds at the bar.they were busy & behind it seemed. @ 8:30 I asked how much longer. They apologized and asked for 5 minutes. No problem. I returned to my guests, paid our bar tab & waited 15 more minutes. I again returned to reception & they said, "oh, we can seat you now". Took us to a great table but there were several other open tables in the area? Service was average at best. Our waiter was pleasant & knowledgeable. I poured my own wine though & they looked to clear the plates far too soon. Ambitious menu & very creative. High quality ingredients. I'd recommend to 1st timers to see if their experience was different/better than mine."

"Too popular for its own good. Almost an hour late for a reservation made months ago. Husband's beef belly was almost entirely fat. The fois gras brûlée is to die for. The service is not congruent with a fine dining experience and very disappointing for a $400 meal. After an hour wait to be seated, it was another half hour to order. I forced my husband to wear a suit and tie and the guy sitting next to us was wearing sweat pants. I came back here because the first time I dined here, it was fabulous in every way. This time I was dissatisfied. Don't go here on a Saturday."

"My boyfriend and went there for my birthday and had the Signature tasting menu. I'm a foodie and have experienced many tasting menus at fine dining restaurants around the world. I thought it was excellent and a good value. Our favorites were the foie gras brûlée and the 48 hr pork belly. We both tried different desserts and they were both delicious. They had a great beer and wine selection too.
The service was impeccable and somebody was always there to clear your plate the second you finished. We would definitely go here again."

"Disorganized and overpriced. Rudely called us asking us why our group was fifteen minutes late when another hostess checked us in and asked us to wait at the bar. Ambiance was pretentious, not exactly fitting for Vegas. Food was good but overpriced for the portions and ingredients used. Very cool absinthe menu, unique. We were fortunate to have a great waiter and waitress, they redeemed our experience."
