EVO, short for evolution, represents a dream inspired by my mother to bring the familiar feeling of family to you, by showcasing my Italian home-style cooking from the freshest ingredients incorporated into my family’s recipes that have been passed down from many generations. My Sicilian mother and grandparents raised me to respect the heritage and tradition of the Italian culture. The draw of family brought me to south Florida where I opened Evo to continue to share my family’s secret recipes and the warmth of the Italian way of living. Through hard work and perseverance I climbed the ranks of some of the most well respected and popular restaurants in New York so that I can bring you Evo. So please come and join us. Sit back, relax and be part of our family. Evo, my dream come true!
"Just got back from 8 days in Italy and compared every dish to Evo's, especially the lasagna. We found one restaurant in Italy with lasagna comparable to Evo's. Every dish we have had there is outstanding! It's one of our favorite places."

"It was perfect in every way. The Hotel staff at the Jupiter Beach Resort recommended it to us as we were on vacation there. It had great ambience, appetizers and exceptional main dishes. You pay a bit more, but it was worth every dollar. The staff was knowledgeable and very friendly. The food was prompt and freshly prepared. We asked for a change to the menu and they were very happy to accommodate our request. We will always remember the best veal we ever had and we're both grew up on Long Island NY Mike and Lori Pinto."

"I'm not a fan of Italian restaurants normally. Some tend to be stereotypical Italian places and some try too hard to impress with things like lasagne. This was not like that- thankfully. This was a beautiful setting for a wonderful meal. Criticisms? I only have a few: Tables are slightly too close- despite the curtains; chairs could be more comfortable- they are ones you'd expect at a pizza place; and the food was very good- not fantastic (my fish was slightly overcooked, the lobster with risotto was very rich, the chicken with potatoes was fine but it was really just chicken & mashed potatoes, the brownie promised to be "the best I've ever had" by the waitress was really not). Compliments?: Great outdoor area; great service, pretty."

"Let me first say that I enjoy a relaxed dinner. Got to the resturant on time, the place wasn't packed. We were seated right away. Thhen the waitng game began. Water service nonexistent if we didn't request it . 45 minutes for our first drink:( Long spaces between courses. The food was delicious. Everything just took to long."

"This was our first trip to the new location -- I'm not sure why it took us so long to revisit this restaurant. The beggar's purse ravioli, eggplant rolatine and chicken gorgonzola were outstanding. The Sunday sauce combo entree was also very good. Bread was crispy on the outside and soft inside. I kept thinking about our meal the next day. This is a great special occasion place, and we will definitely be back!"

"My wife and I were celebrating our 12th anniversary and I wanted to take her to a restaurant that we had not tried before. We truly enjoyed our experience at EVO. The restaurant was cozy and perfect for our night. My wife and I are both Italian and enjoy true Italian food. EVO did not disappoint, the food was superb as was the service. Great desserts and coffee topped off a wonderful night. Can't wait to try the other dishes...."

"We sat outside in the gazebo which was a delight. It's so nice being outside in March comfortably. The waitstaff was attentive and helpful. After dinner, we had a drink on the couches outside. The firepits make for a great nighttime effect, flowers everywhere, make for a very special evening. We had people from Massachusetts with us, so they were thrilled to be outside with color all around them."

"EVO has been a favorite of ours for awhile. However, the mistake I made was accepting a table in the bar....As a Saturday night, it was so loud that each of us-4- were relieved to get out of the room. RELIEVED. That said, our main course took upwards of :45 to be served to us....We all ordered the same dish. While it was good, it was only ok for $33...It was tender veal,a generous portion but lost under an ocean of VERY rich "gravy"... Because it took so long and was extremely loud that night, there was NO way we would've spend another penny there OR another minute....so no coffee or dessert...This review is coming from someone who LOVES that restaurant. There for the first time since the move to the new location..."

"Don't let the outside fool you. Back behind the less than stellar stores is a real gem. Awesome food, very friendly staff and a really great atmosphere. We are only part timers in Florida and this is the second time we were there this month. We brought friends and out 20 year old who loved it as well. They have beautiful outside dining are and a humidor to enjoy an after dinner smoke. We had to wait a bit for our main courses but they were vey nice about it buying coffee and dessert for us. We will certainly be back next time we are down."

"EVO is consistently a great Italian restaurant. Though the menu is a bit pricey, the quality of the food, the excellent service and great wine selection make it well worth the price."

"The present restaurant is the second iteration of a well known Tequesta restaurant previously in a much smaller facility. It has not lost any of the features which made it so popular. The food is outstanding comparable to the best NY and NJ Italian restaurants, not surprising since the owner and chef at Evo is a native Long Islander who trained at the Culinary Institute of America. The service is impeccable and the setting is elegant. I had pasta and my wife had fish, both of which were terrific. If you enjoy a truly fine Italian dining experience, you cannot do better."

"Excellent! Food was phenomenal, service was perfect (server didnt bug us every 5 mins). Took my wife here for Valentines day dinner, on the recommendation of a friend, and our first time was amazing! We will be back as there are at least 4 more items I have to try. Table by the fireplace was a cute touch. It was a romantic evening. Great wine selection too."
