Hill Country is proud to have opened in DC! Named "Best Barbecue in NY" by both New York Magazine and Time Out New York, "Top 10 Barbecue in the U.S." by the Wall Street Journal and "Best New Restaurants of the Year" by New York Magazine, Hill Country takes its "cue" from legendary Texas barbecue joint Kreuz Market and its distinctive dry-rub style. Hill Country's brisket, sausage, ribs and other meats are smoked low and slow over Texas post oak. The barbecue is served in butcher paper, counter-style by the pound, with traditional trimmings.

"Only one negative, my friend and I felt rushed because two of the waiters kept asking us if everything was alright while we were eating (understandable, but it was a little overkill), and not long after we finished our meal, but were still drinking our beverage. I finally asked if one was getting ready to leave for the day and wanted us to check out. One was leaving, but she stated that everything was fine and that she just wanted to make sure that we were alright. I asked who should I leave the tip with, her or the guy who was working with her. She said they share so I could give it to him. Otherwise, both waiters were very nice, service was good, so we left our usual 20% tip and stayed until we finished our meal and a little beyond."

"Some of the best BBQ I've had in DC and also the most expensive. It's made a little more reasonable by getting all you can eat since you don't have to get sides a la carte, but at $20/pp still pretty pricey. Probably best way to eat here is with a large group so you can order large sides and share them. Otherwise, you can't get enough variety to make the meal interesting."

"The music was fantastic! My only complaint is the service: We arrived and stepped up to the host stand to claim our reservation. We received a blank stare and no answer from the 4 employees standing at the host stand. We stood confused for a few moments until the host mumbled something and basically ran downstairs. Our waiter was okay, and we paid our tab so he could close out our table. He spent a full 5 minutes inspecting our signed credit card receipts at the table next to my face. When he realized how well we tipped, he walked away. It was honestly the most unprofessional and rude behavior. I waited tables for years in college, and I never acted this way. I probably won't return despite the awesome show."

"Don't be put off when you read the menu and see they apportion pork ribs 1 or 2 at a time. They are larger and meatier than the standard half rack at the local "all-American" cuisine. Patterned after the serious smokehouses in Texas, HCB pulls it off fairly well even if the smoke stains on the wall are painted on. The food is authentic, not glopped over with sauce, and a good smoky flavor. So we have Texas style BBQ in DC served by a lady from Serbia - who bythe way was outstanding with her help and friendly connection. Go figure! But go to eat."

"This is back to the basics barbeque. Great pork, ribs and beef selections, served in a no-frills setting. Can get crowded most nights after 6 PM , so come early if you can."

"I had heard so much about Hill Country. However, between the 15 min wait at lunch -- with a reservation, being told that what I wanted to order they ran out of, and confusion in how to order for a first timer, I was thoroughly disappointed.
The chicken and potato salad that I did end up with was totally not worth the money. That is something that I could do in my own kitchen for a lot less.
Not impressed and won't be going back!"

"The meat market concept was not a winner for me. When I spend good money for a meal, I don't want to fetch my food from a cafeteria. The brisket was terrible...very dry! I am not a spicy food lover, so I was very dissatisfied with the odd flavoring of the potato salad and the corn bread was the absolute worst I have ever eaten! Quite honestly, I would not feed this food to my worst enemy! There are far better restaurants; spend your money wisely and go elsewhere!"

"Food was expensive for what you get and the meat, while smoked, was somewhat overcooked. Service was slow, though our server was cheery and hospitable. But the biggest weakness is the long line to the meat counter where every item is weighed and you pay per point for a la carte. They really need to take your drink order at the outset and speed up the cafeteria-type lines. There are many other Texas-style barbecue options in the area that are more economical and better service. Seems well-suited for large bus groups.
The bar menu and drink selection are better than the dining room. If I go back, it will be to the bar only. There are dedicated tenders there who are working hard and friendly."

"Amazing! Best brisket outside of Texas. All the side dishes were great too. We had the mac and cheese, baked beans, green bean casserole, and potato salad. We happened to sit upstairs, but they usually have live music downstairs, which is always fun."

"First time dining here and it took a little time to understand the process. The menu does not offer a wide range of choices but we were only looking for a pre-hockey game dinner so it sufficed. I had the brisket special; meat was good but dry and it wasn't immediately clear what options there were to spice it up. The sauce at the table was ok, nothing spectacular. My spouse had the rib special which he also thought was ok. So not outstanding but adequate for our purposes. And convenient to Verizon center."

"As it was my first time at the restaurant, I opted for the all you can eat special so that I could taste all the sides I was interested in. None of the sides were spectacular. I did like the corn pudding and the cornbread. However as other reviews have stated, all the meat that was served came cold. There must be some barbecue rule that was broken here. How can a barbecue joint serve cold barbecue? All the meat was tender, but it was cold. That just doesn't make sense. Overall, I feel like I have had better barbecue at backyard family gatherings than I did at Hill Country."

"So...it's very well organized in cafeteria-style, which means that everyone can go up and get what they want, so it works well for groups and families. We also had great service. However, I'm not a fan of the barbecue. I'm a 'don't spoil my ribs with sauce' person, and that's how they serve their ribs----so I should have enjoyed them, but I didn't. The only flavor that seems to be going on is smoke."

"Well,I was not impressed by this popular BBQ joint. The pork ribs were overcooked with little meat on them, and the beef ribs were also tough. The pork loin was tender but bland. Their special sauce to add was not so special. Atmosphere was like at a indoor picnic, I suppose. You go up and get your own food as in a cafeteria. No wipes for your greasy fingers nor plates to put your food on. The 2 of us had to lean over to use the shared tray."

"I'm a born and bred Texan and this place fulfills the Central Texas BBQ craving. The meats were very well done. I would recommend the moist brisket and the chicken. The pork rib was heavily spiced with pepper and not alot of sweetness. There is even have Blue Bell ice cream! The pecan pie was okay, nothing too exciting."

"The ordering process is clunky and makes it difficult to have a relaxing meal, in my opinion. Fortunately, the food is good and the servers are nice - but I wish it could just be less of a hassle to obtain my food. Why should everyone in the restaurant have to move through that line? It would be far easier to just have servers take the order and handle the rest."

"After a friend who's a native Texan recommended this place to me, I was excited to find out why she raved about it. I soon realized that Hill Country offers the most authentic Southern dining experience in all of D.C. The food was delicious, the staff were warm and personable, and dinner as a whole was totally memorable. While the cost of Hill Country may be a bit too prohibitive to frequent this place, I definitely will return as soon as my wallet permits. I've already given Hill Country an enthusiastic endorsement to two friends of mine."

"HCBBQ offers a great AYCE option on Mondays for $20 per person & everyone at table must do the deal. I can easily load up on the tasty sides: endless Mac & Cheese, Texas Chili, Cucumber Salad, Corn Pudding, German Potato Salad, Deviled Eggs - just to name my favorites. Everything comes with a great serving of bbq'd chicken, brisket, pork & beef ribs. Really it's a great deal if you just need that comfort food! My only complaint is that the BBQ has come out either cooler than room temperature or just barely warm. And I hate not having hot food! Service is awesome if you get there right server."

"I lived in Austin for a while and made it my mission to try just about every BBQ place in Central Texas before I moved back here. The fatty brisket at Hill Country is by far the best I've had outside of Texas.
The ticketing system for buying your food is unnecessarily quirky and confusing, and I wouldn't waste your time on the chicken or ribs, but the brisket, sausage (both kinds) and most of the sides (collards especially) make this one of my favorite spots."

It was our first time going to the restaurant so the all you can eat was a great way for us to try all of their food! "I ate there based on a discount voucher. That voucher made the experience worthwhile. Otherwise, while the food is good, it is very costly. On top of that, the method of service (waiter for drinks and dessert only - you have to proceed through lines to get main and sides) does not engender an interest in my tipping large.
The food is worth it if you like Texas style BBQ - though a bit salty due to the rubs used. The beer comes in small mason jar style glasses that are certainly not a pint. The rest is served in/on paper. Good sides.
Overall a good experience for good food, but costly for what you get."

"The food at Hill Country is phenomenal. The a la carte style menu is perfect for groups because everyone gets their own check. We went for dinner with a group of 7 and have a great table downstairs where all of us could sit, talk, and enjoy our meals, and then had a prime seat for live music. The performance set up was fantastic, very intimate with an upbeat vibe. My only complaint was the service. We saw our waitress, at most, twice the entire night, after waiting for 45 minutes, we finally canceled our last pitcher of beer and just asked for the check. She was slow and unavailable, and blamed the poor service on the bartenders, which we could see from our table was not the case. Thank goodness we only had to order drinks from her!"
