Defined as a laid back neighborhood dining spot as well as a culinary destination, the Pullman provides imaginative simple food and drink, caring hospitality, comfortable surroundings and exceptional value.
Our cuisine is simple American, tuned to farm to table movement...innovative and inspired.
"Took my husband and daughters (ages 9 and 11) here for Father's day and had a wonderful dinner. I had the arugula and beet salad and the scallops - both were absolutely delicious. The girls both had the noodles with butter and Parmesan from the kids menu and declared it "the best that they had ever had!" My husband had the trout on the bed of lentils and said it was excellent.. Our waitress was very friendly and attentive. I would definitely have dinner here on my next visit to Glenwood!"

"My husband and I live in Redstone, CO - about 30 miles from Glenwood Springs and this is what we can say about The Pullman: it is the very BEST restaurant in the Roaring Fork Valley (and we've tried them all). You literally can't go wrong with any of their menu items."

"Second time here, again, creative menu, good quality, love the smaller plate options so you can try a few different flavors, an indulgence at good prices. Many friends have also recommended."

"Ordered the gruyere fritters and flank steak. Had the mac and cheese for dessert. Absolutely mouth watering and delicious! Wish I could duplicate this meal in my own kitchen. Service was efficient and timely! Food was served at appropriate temperatures. Looking forward to my return visit."

"Love, Love this place. Cannot wait to return, I want to work my way through the entire menu. We had Oysters from British Columbia, complimented by Martinis. The Burrata appetizer with grilled asparagus. I had the duck meatballs with a pepper cavatelli, oh my that was fabulous. It will be hard not to order that again. The scallops sounded great, and someone else had the steelhead trout, which she thought was fabulous. Desserts are also excellent."

"This was my first visit to the Pullman and I was very pleased with the service and the menu. The ambiance was fun but it was a little loud and voices carried. I will visit the Pullman again to try some of their other dishes. Parking was an issue, but the free municipal parking lot two blocks away was acceptable."

"When we walked in we were very skeptical, but that all changed by the time we had left. From the fun drink to the uniquely seasoned oysters, this was a culinary experience. We ordered hangar steak and roasted chicken. The meats were tender and delicious= perfectly cooked with really unique and delicious complimentary sauces. We would definitely recommend this restaurant and willingly return!"

"We recently ate at the Pullman on a a quick getaway to Glenwood Springs. Service was outstanding and food was equally good. They had creative food combinations and be ready to try something a little different. You will not be disappointed, we actually went back the next night as well!"

"I always love going to the Pullman as there is always something a little different on the menu & the food is very innovative, fresh, & yummy! Loved the strawberry rhubarb ravioli for dessert. My companion & I were a little late making our reservation time & the staff made us feel like this was not a problem at all & seated us promptly. Love this place & bring all my guests to the Pullman."

"The dishes have really well thought-out flavors. Probably the best part of dining here is the way the food tastes. The kitchen does a great job mixing and matching interesting flavors. We really enjoyed our meal."

"Had a superb dinner at the bar here. Ingredients were high quality with creative preparations. Bartenders were very helpful and did a great job of pairing the food and the wine. Nice cocktail list, too. I guess our only issue we had was they don't take reservations for seating between 6:30PM and 8:00PM - this is their stated policy. We never really got a good explanation for why they do this. We had reservations for 8:00PM, but were hungry earlier, so we ended up at the bar. The maître d' said something about needing reservations for the 6:30-7:00 range, but when we pointed out we couldn't, we clearly put him on the spot, so we just opted for the bar."

"We requested a quiet table and we got the best one, slightly off by the window. The food was inventive and delicious. An array of small plates provided endless conversation with our dinner companions as we compared our enjoyment of street food around the world. The staff was knowledgeable and friendly. The service was impeccable."

"Have been a number of times and was quite dissapointed in the Service. The service was slow and the waiter was aloof, disinterested and didn't introduce himself. Food was great but poor Service quite a letdown for a usual Star restaurant."

"One of the best restaurants in Colorado, hands down. Spectacular, always-evolving menu and cocktail menu. Local spirits, farm to table meals. Totally amazing. You MUST make reservations in advance!! Love the atmosphere and bar. Staff are also exceptional. You cannot do better than The Pullman on the western slope."

"Food quality at the Pullman has deteriorated over the past few years. Service was poor; the chairs uncomfortable and the atmosphere far from relaxing. This once quality restaurant is now geared to "move 'em in and move 'em out." Too bad....but it's not too late to revert to its previous "fine dining" status."

"We live in Denver, and one of the highlights of a trip to Glenwood is enjoying a meal at the Pullman. The food is always creative, delicious and made with excellent ingredients whose flavors are allowed to "sing." The sourdough bread is also excellent. On this occasion we had eggplant cannelloni in a wonderful marinara, chicken with mustard greens and gnocchi, and sides of a scrumptious cauliflower couscous and creamed spinach. The cauliflower was amazing and must be tried. For dessert we shared slice of salted chocolate pie with a delectable peanut anglaise. When in Glenwood, try the Pullman!"

"We were a group if 5, at 8pm in a weeknight. The service was very friendly but not attentive. There was one young man for many tables. Our water glasses were empty for most if the dinner, our bread came out after the entrees and there was a noticeable wait for our food. The rabbit got a thumbs down, the mussels were good, the chicken was ok, The lamb meatballs and gundi was very good. The portions were very small. Three out of the 5 of us were hungry after dinner and dessert."

"OMG we love the Pullman and a great value as well! We usually like to try different restaurants when traveling and dining out, but had to return the very next night for another fabulous dinner. Started both meals with roasted bone marrow/red onion relish. Hadn't eaten marrow before, it was absolutely divine! Spread on a toasted baguette and top with relish and marinated greens. A rich, beefy delight! The Jambalaya was thick and spicy. A savory sensation. The world's creamiest mac and cheese caressed the taste buds. Extremely flavorful hanger steak was cooked perfectly and tender enough to cut with a fork. Try the salted chocolate pie. Both meals with drinks and deserts were well under $100 including tip."

"The Pullman is always good and our latest visit was no different. We drive up from Grand Junction and stay overnight in Glenwood for special occasions, and dinner at the Pullman is the reason why. My husband always orders the duck meatloaf, which comes with a to die for creamed spinach. I try different things each time. We also really enjoy the bone marrow appetizer. The atmosphere is genial, a bit like a warehouse, but clean and fun. The wine list is really small but we have always been able to find something we liked."

"The Pullman has wonderful food, a friendly staff, and I thought it was reasonably priced for the quality of the food. This restaurant is definitely on my must-do list for future trips to Glenwood Springs.
I'm a vegetarian, and sometimes I'll have one choice on a menu. Not so at The Pullman! I chose pierogis with gruyere and carmelized onions, and a beet and arugula salad with feta. My partner had striped bass with couscous. I can't remember the exact combo, but there were almonds and currants involved. He also had roasted potatoes with creamy horseradish sauce.
I also got a glass if red wine. He had a Colorado brewed birch beer and a cup of tasty Ink! coffee, and the meal still cost right around $60. We were very impressed!"
