The goal at Bistro C.V. is to celebrate and showcase the freshest ingredients of the season. We love the region we live in and pride ourselves on supporting our local and organic farmers. Our food is a reflection of our belief in cooking simply, honestly and innovatively. "Impeccable service and really imaginative and delicious food. Even the desserts did not disappoint. However, the particular night we dined there, two tables were occupied by ridiculously loud parties of 4. One poor lady at a table next to them had her hand cupped over her near ear and seemed truly to be in pain. An elderly couple was startled a few times by sudden outbursts of truly deafening laughter. I felt sorry for those people. Meanwhile the raucous folks were oblivious. I've read other complaints of same kind. Perhaps these parties could be seated in the separate dining room, or shushed by the staff."

"Bistro CV remains one of the best 2 restaurants in Steamboat but is Inconsistent. One night it will the the best ever, then, the next time
you go there its not so hot. Last time we were there they had changed the menu and had omitted their very popular bowl of mussels
and replaced it with a dish of 2 mussels and 2 oysters. The creme brulee was very watery, like melted ice cream. Sometimes the
service is great and, then, we have waited almost an hour for our entrees, with no explanation. They do some dishes very well and
it could be a truly great restaurant but they have some kinks to work out!"

"I expected to leave hungry. After a Yellowfin tuna taco, the elk stone salad, gnocchi with blue prawns, and the seafood entree, I was comfortably full. My wife and I had a very nice evening. I enjoyed watching the chefs work their magic. I was able to get out of there for under $150 with tip. I can't wait to go back, once I make some more cabbage!"

"Quaint bistro. Perfect place to enjoy a good wine paired with surprisingly good small-ish plates. Too many great dishes to name them all - we had six people so were able to try a number of them. Only criticism was that our waitress was not helpful in scoping out meal. As first timers we were concerned about size/sharability of dishes and it turned out we WAY over ordered. Not that anyone way complaining. Will definitely return."

"I went with my son for an after skiing dinner. We were both impressed with the food, although the decor in the back area was pretty austere. The basil fed escargot were very rich and very tasty. The chicken-chorizo pot pie was very good, but had very little chorizo flavor. The Berkshire pork duo was excellent. The meat was very tender and flavorful. I ordered the wagyu hanger steak. It was perfectly cooked and very tender, but unfortunately the entire plate was served lukewarm at best. It clearly had been left sitting too long before bringing it out.
Overall a very good meal, but I had to take off a star for the decor and the cold entre."

"Great if you're on an expense account or you want to get laid. Probably top table in Steamboat. Expensive but really worth it if someone else is buying. Really worth it if you're with the right person. Great wine list at bottom with good selections at fair pricing. Absurd pricing at the top of the wine list.
Grilled Caesar salad is tremendous. Huge mussels. Terrific burger. Strong selections up and down the menu. Best place to take my wife when I've done something and I need forgiveness."

"From before we arrived to the end of our meal-we couldn't have been treated better. The hostess was informative and gracious trying to accomdate a tme change. Our server Frank was exceptionally knowledgeable-don't miss the chicken pot pie or the steak tartare if they are on that nights menu. Wish they were where we live instead of where we vacationed."

"We had a very novice server, and when we complained to management they didn't take appropriate action. We ordered appetizers and a main course, and it took over 2 hours from start to finish. In addition, when one of the main courses we had ordered was no longer available, it took the server over 20 minutes to get back to us with that information. Other tables in the room came and went while we languished; even our water glasses went unfilled. In addition, when asked for recommendations on three different items, the server invariably suggested the most expensive item in the category. Very disappointing."
