ChoLon Bistro
ChoLon Market, the largest Chinese-influenced market in Saigon, helped serve as inspiration for Chef Lon Symensma’s Cholon Bistro. The LoDo restaurant showcases his passion for Asian ingredients and French cooking techniques in a striking, eco-friendly space. ChoLon serves lunch and dinner, as well as a small bites menu that is available throughout the day, in a welcoming environment for all ages. The menu features inspired interpretations of traditional Asian dishes. "Many of my dishes are twists on classical Asian cuisine," says Symensma. "I enjoy sharing my own personal perspective on the flavors of Asia." The menu offers several categories designed to allow guests to sample and share many different tastes and flavors during their meal. The bar and lounge serves handcrafted, artisanal cocktails developed to enhance Symensma's creations. The venue is also ideal for business meetings and presentations, featuring a large projection screen in the lounge area.

"My hubby and I brought an out-of-town guest to Cholon because it's one of our top thee favorite restaurants, and everything was fabulous, as usual. The salmon and kung pao chicken were to die for, and the Brussels sprouts were so good we had to order a second batch, We'll be back soon, with or without out-of-town guests."

"The service was great and the appetizers were excellent. However, my wife and I both found the entrees lacking something. While they were decorated very well, I felt that my chicken was lacking flavor. I also am Americanized and prefer only good meat, rather than "The Whole Chicken". While I realize this is more of a European preference, it's just not for some people. Otherwise, the dumplings rocked and the chili crab rolls were delicious. The kaya toast was also very unique and worth a try. While I wasn't fond of the soy sauce in the kaya toast dip, I still give them an "A" for this meal, for creating a very interesting combination of sweet and salty."

"This is the best restaurant in Denver. The food is interesting but recognizable and delicious. The flavors explode in your mouth like the soup dumplings. We loved the short ribs that came out covered in a sauce that made them look rather black but that black sauce was delectable. Don't forget to leave room for the fresh doughnuts!"

"I have neer been disappointed after eating at ChoLon. We shared several small plates including: the Brussel sprouts, crab rolls, and pork belly buns. We shared the fish tacos for our main dish and paid the extra 2$ for the French fries, which were worth an extra 5$!! So crispy and that sauce.... Amazing. Everything was delicious and our service was top notch."

"We went on a tues at 9pm and there were just enough ppl to make it seem alive, but not overcrowded. Loved the unique ricebread and spicy tomato sauce. The salmon and avocado was tasty and pleasing to look at, crab wraps were excellent and the seafood/noodles were good. Service on top but not intrusive. Ambiance great. Def will return."

"Many people had recommended this restaurant, so we were anxious to try it. The food was very good (interesting combinations) and the waitstaff was very accommodating. We were there on a Saturday night and the place was completely full, but the noise level of the restaurant was so high that it was difficult to carry on a conversation in the bar or the dining room."

"The food was incredible. Our waiter was very knowledgeable and offered several good suggestions for first time diners. We were a large group so we were able to share 14 different dishes. We didn't find one that we didn't really like. We loved the Kaya toast and Soup Dumplings as appetizers, the Salmon Crudo, grilled ribeye, the Yellow Curry Mussels with french fries, and the brussel sprouts with ground pork and mint as part of our shared plates. We are still talking about the experience days later!"

"The food was great but sparse. The wine expensive. Our biggest problem was that paying the bill was very difficult. Three of us were charged twice . It was corrected eventually But when we all called to get an explanation we did not get the curtisy of a call back. So with all the choices in Denver avoid this one."

"I went with my family (5) to celebrate my graduation. Service was excellent and they gave me a free sorbet with "Congratulations" written in chocolate. We had the pork potstickers and duck spring rolls for apps. Both sauces were excellent. We then shared 4 large "share plates" -the salmon, lamb, scallops and ribeye. They were all good though I would have expected larger portions and some veggies with them. My aunt is pregnant so she couldn't eat anything without sending it back to be cooked. I would've liked some more of the amazing appetizer sauces... I'm not usually a dessert person but I'm glad I didn't pass it up here. The sorbets and coconut cake were phenomenal. Overall, this was a memorable and enjoyable celebration experience."

"Second trip to Cholon and food was as wonderful as before and as artfully presented. Service was top notch. Only negative was that the restaurant was uncomfortably warm. W had the early reservation on a Sunday and maybe the air hadn't been on all day and it was a very warm day. We had to leave before dessert because of this. We'll come again for sure."

"I took my NOT husband there to celebrate his birthday. We really had a wonderful time, in all aspects....except for the noise level. It was incredibly loud, and as we were also sitting next to the windows (Which we loved!) we got noise bounce-back from all directions. It certainly did limit any private, personal conversations. Maybe drop some interesting sound panels from the ceiling???

"As I travel for business, I'm always looking for something a little different to entertain the highly sophistocated palettes of my customers. Unique local cuisine in Denver was not hard to find, but a location with an open reservation was. After reading the reviews on ChoLon, I decided to give it a try. Overall, the food lived up to its great reviews, but my only complaint was the noise level. It was hard to hear conversations at our table of 7. This location is great if you're looking for delicious family style restaurant to spend a casual evening."

"We went because the buzz was good but frankly, we weren't turned on by their web site. Their web site doesn't begin to let you know what a great surprise is waiting for you. We can't wait to return. Every item we had was superb. We shared several small plates and still had a reasonable check at the end. Soup dumplings, pork belly buns, rib eye skewers will be repeated."

"To start with, the food was good. They had some interesting twists that made it fun. I went there for a business meeting and the noise was very loud. This made it difficult to discuss much of anything. The service was also slow, but they were polite. I will probably not return."

"On our first visit, we ordered 2 small bite, 2 small plates, and one large plate for the two of us. Each dish was creative , beautifully presented and delicious. The service was just right, and we enjoyed Chef Lon dropping by our table for a relaxed conversation.
ChoLon is a restaurant that we will visit again and again."

"Cholon provides as great a dining experience as we have in Denver. Let me qualify that by saying that Cholon is within the category of " Live wired, fun and urban environmen." The food and atmosphere touch each of your senses with a
Playful Joy. There are certain single
bites that stop you in your tracks. We run in a pack if folks who are all excellent home chefs and you will hit several points in the meal where you admit, "I don't think I can replicate that at home!" When you add in caring and knowledgable servers who want to connect with each diner, you have the whole
package of a unique and memorable meal. Great job!"

"Fabulous food! Loved the small plates and sharing so many wonderful textures and tastes! We each ordered 2 small plates and shared with the table of 5! Wine is a bit expensive, but certainly good. Would prefer having more of a selection (types and prices) to choose from."

"I took my boyfriend and his family here for his birthday. We had been wanting to try ChoLon for awhile and I'm so happy we finally did. You can share all of the dishes or order your own. We did the prix fixe menu and ordered some extra dishes that looked good on top of it. The food was great and the waiter was great on suggesting what/how to order. I especially loved that a lot of the food is unique."

"Friends trust my food recommendations as they send me photos of food from around the world saying....we were eating "fill in the blank" and were thinking about you. They also ask me to make reservations for them when in Denver. This is what my friends say about me and I can whole heartedly tell you ChoLon Bistro gets my endorsement. Last night we had guests from Venice (IT) who also are foodies, (we tend to flock together) and they were also gave ChoLon high marks. This is a trust me!"

"It was my third visit; husband's second. Server asked if we wanted all of our selections at the same time, and we said yes. However, nothing came out together. At one point we tried to get the server's attention and he looked at us but let his manager come over instead. His level off service didn't match the prices. That said the support staff was good. Next time we want Asian fusion, we'll opt for Izakaya Den."

"Food was outstanding as always; however, the server was one of the worst I've experienced in quite some time. He tried to rush us into ordering 100% of our selections at one, was quite rude and didn't bring us wine glasses after we ordered a bottle of wine. We had to get the glasses from a busser as he only visited our table about 3 times over the duration of the meal. This server took my experience from a 5 star to a 1 star. I understand people have bad nights, but his service was a joke and not up to the standard of this restaurant."

"We came for dinner on Saturday and had a great time. Our waiter was very friendly and helped explain the menu to us. He also made some great recommendations. It was tough to choose - everything on the menu sounded so good - but everything we had was absolutely delicious: French onion soup dumplings, beef tartare, short ribs, brussel sprouts, etc. Great ambiance, however, it was very loud - difficult to hear the person next to you at times. All in all, it was definitely one of the best meals we've had out in a while."
