"Execution of great food continues at GB, with innovative small dishes and entrees beyond the usual Santa Fe fare. We had the remarkable shrimp crabcakes, the wonderful gorgonzola tart with crusted walnut, and an exciting etoufee. The service was attentive and the food came quickly. When some friends decided to join us for dessert, the owner arranged a new larger table for us all, where we enjoyed splendid, delicate semifreddo. Highly recommended."

"Overrated. The only impressive food I tasted there was the lamb appetizer; the shrimp/crabcakes were overcooked and lacking in flavor, served over a bed of wild rice (again, little flavor), and a single (delicious) asparagus. The seafood pasta was fine but overly rich. Service was spotty; the duck liver pate came with six thin toasts; we used them up and were offered 3 more, which still wasn't enough. Fortunately by then we received a bread refill. Oh, but the Sangria (which we opened our meal with) was absolutely delicious! Yes, stop by the bar in the early evening for Sangria (and maybe an appetizer), then dine elsewhere."

"This was our 3rd time for dinner at Galisteo Bistro, and it has been wonderful each time. We were a party of 3, had a great table, and wonderful food for appetizer, dinner, and dessert. The chef circulated by our table (and all the others) to see how everything was. One of my dinner companions asked him to tell the story of founding the restaurant, and he did -- very interesting on top of all the great food."

"Great restaurant with a great menu and a very good wine list. Best service I have had in any restaurant in Santa Fe (where I live). Tried Martin's Restaurant the same week. Martin's is pricier and the food is not as good. Martin's is all about presentation, but their food is somewhat on the bland side. Galisteo Bistro is less expensive and it is all about the food and taste."

"We could not say enough about this local downtown Santa Fe Bistro!! Bob has such a wonderful quirky sense of taste and décor!! The Onion Soup starter must be the best "Since Paris in '82" quote our companions a few nights ago!
The wine from a small Napa winery was over the top great... and such a steal!
I could go on and on about the tastes and menu items we have tried, -- try and give the lamb shank a try with the butternut flan. OMGO! Yet there are so many great and fun things on the menu.
Ask your server -- they are all knowledgeable and attentive and enthused to be helping you enjoy your Galisteo Bistro experience!

"I would love to give this place 5 stars (and I would've after our last visit; I just didn't follow up), but this time, we were seated in an area where there should be 2 diners, maybe 4, but they decided to seat 6. My girlfriend had to lean one or or the other every time a waiter came to take care of the diners next to us. It was almost impossible to have a quiet conversation, as our neighbors were literally _right next_ to us. This is a popular restaurant, and I understand their effort to increase the seating capacity, but that, in a word, was ridiculous."

"We tried Galisteo Bistro on recommendation from TripAdvisor. It was the highlight of our trip to Santa Fe and we go there in large part for the food! It was a wonderful experience. Every dish we ordered (including dessert) was excellent; both in taste and presentation. It was worth every dime. And the service was exceptional; friendly and very attentive but not overly so. Our 16 yr old droppped her knife and it was picked up and replaced almost before it hit the ground. They were just as nice to our teenagers as to us. Ambiance was great and their wine list was comprehensive (which we like) with a wide range of varietals and prices; from good value to pricey."

"There is so much to like about the Galisteo Bistro--great location in downtown Santa Fe, friendly staff, wonderful service and ambiance, nice menu and wine list. Unfortunately, the food was disappointing. Although the presentations on our eggplant parmesan and shrimp/crab cakes were lovely, the food itself was bland and unexciting. We probably won't go back."

"My wife and I both had the March prix fixe menu. The appetizers -- oyster shooters and sweet and spicy mussels -- were nicely prepared, with fresh and delicious flavors. The "muddy waters" dish had some minor flaws -- the salmon was just a touch overcooked and the orzo did not have much flavor. But the sausage and fennel ragu was terrific. Ended our meal with a large french press coffee, which also was very good. Service was fabulous; extremely professional. While not flawless, our meal was excellent overall and we already have recommended the restaurant to others."

"Though Galisteo Bistro has been open for a while, this was our first visit. Yes, we'll return! With a reservation, we were promptly seated, the server was freindly and knowledgeable, offering us a nice wine list, and a prix fixe menu, as well as regular offerings. It was all delicous! We informed that waiter that we were going to the theater after dinner and were served in a timely manner to make curtain call. When we left, there were people lined up waiting for a table. Make a reservation and enjoy yourself!"

"If I really write what I think about dining at Galisteo Bistro, we will probably never be able to get a table there again--because they will be filled to capacity at all times. One should always save room for dessert--they are all wonderful. Come to think of it, all the entrees I've eaten are wonderful. And the appetizers. The wait staff is attentive in the best way, and seem to share the responsibilities so that we were never ignored. The overall experience is one of warmth and goodness, and I can't wait to go back."

"We have a second home in Santa Fe and we eat at Galisteo Bistro often. We are never disappointed and we believe this is one of the best restaurants in town. "Sheri and I had decided on dinner here based on all the good online reviews. We were not disappointed.
First off, parking is impossible in this area so arrive a little early. It was a full house for a Thursday night. The wait staff were attentive and pleasant, however, I'm not a big fan of open kitchens in such small spaces. The kitchen noise added to the already unpleasant noise level and it was difficult to carry on a normal conversation. Combine that with the heat from the kitchen and how closely tables are spaced and it subtracts one star.
We ordered from the 3-course prix fixe menu and nearly everything was perfect. I had the meatloaf and Sheri had the snapper. Some dishes needed a bit more salt but otherwise the flavor was goo"

"Wow! We had a wonderful dining experience at Galisteo Bistro! The food was amazing. My husband and I wanted to try different things without leaving stuffed. We had the shrimp/crabcake and lamb appetizers, split the blue cheese New York grass-fed beef steak and ended with the flourless chocolate cake with almond crust. It was all great! The service was awesome. We had 3-4 people who waited on us. Though we had one main waiter, they all worked as a team. And the ambience was fantastically romantic. We definitely recommend Galisteo Bistro!"
