The plates are made "in the moment", using fresh ingredients from local markets. The chefs claudette and lauren write a suggested menu for the evening. Guests can recreate their dish to accommodate personal preferences and dietary needs. The menu allows for gluten-free, vegetarian and vegan choices.

"The ambiance is warm and inviting. Each time that I have dined at Via 45, the food has been exceptional! A true culinary experience. Service is very personal. "1st time customer. Friday night May 6 at 6PM Service highly attentive. Menu varies..so you are always anticipating "what's cooking tonight". Limited (but in a very good way that they can concentrate on making it great) selection, but something for everyone. I reserved online and got a call back the day before dinner to confirm, and ASK IF I HAD ANY FOOD ALLERGIES SO THEY COULD PREPARE AHEAD FOR US!!!!!!! Have none -but amazed that they cared to adjust cooking to ANY NEEDS!. But, that is how these folks work. these gals are destined for a bigger venue. Have the ingredients of healthy seasonal flare, coupled with perfecting sauces, food quality, and value. BYOB. Really great night and VERY pleased..you will be too. Enjoy!"

"The owners of the restaurant are also the chefs, and they use local ingredients in their made-to-order dishes. It's the perfect date spot, or a great place to go out with friends. I'm not so sure how kid friendly it is, though it's not exactly kid un-friendly (we've brought our little ones there once or twice). My wife & i get there about once or twice a month & have never been disappointed."

"If you do not appreciate the painstaking effort of assuring freshness...you should not be eating out! To be greeted (Table by Table) personally by the proprietor is a "A". I never ever eat pork outside of my wifes cooking (she was born in Cuba, enough said) I had the 14oz. Pork Chop, It was PERFECT especially after seeing this 1 1/2" chop itwas PERFECT! My wife had the Skate fish that was the best seafood dish shes' had in awhile. With four adults plates being cleared to nothing left...Veggies, Deserts to ream about till my next visit!

"The menu is crafted daily and our selections this evening were salads, fish, pasta, desert. Food selections were all quite good. The owner/chefs are ever present in the kitchen and dining rooms engaging their guests, wonderful people. This is a BYOB establishment, which we like. If you want very good food, nice people, and friendly but unobtrusive service VIA 45 is for you."

"We had heard a lot about this restaurant and finally gave it a try. It was a great experience, the ingredients are top quality and prepared simply resulting in a delicous meal. "First and foremost the food was delicious. All four of us enjoyed the appetizers and meals. Our only issue was the seating. Do not sit at the first table by the hostess stand. Every single person walking in goes by you and bumps the table; even the hostess and waitress had some trouble getting by. They should not have a table there; it was quite distracting and bothersome especially to my friend sitting in the aisle. We will be back, but won't be sitting there."

"Consenus split on the food--two very good, two good. Round table in front of piano is too large for area and several times, servers passing through bumped my chair. This was distracting particularly since other party at adjacent table got up often leaving their chairs out. While the food is prepared when ordered and ingredients are always fresh, time lapse between ordering and being served took too long particularly if you do not order an appetizer. The chef sending a salad to our table was a definite plus while waiting. This may have been just an off night (Saturday & very busy) Our first visit was a Sunday and everything just seemed better."

"We had been to Via 45 before and had a pleasant dinning experience but on this occasion sufficient time was not allocated between sittings any our dinner was a rushed. To make matters worse during our conversation after desert, we were asked to vacate the table. Total meal/sitting time 2-hours."

"Our experience was extremely rewarding. The food was thoughtfully conceived, perfectly prepared, and artfully served. We were disappointed to learn that the waiter who had taken care of us the last few times had left but our current waiter was an excellent replacement. He was knowledgeable, friendly and helpful. "It has been awhile since my last visit to Via 45. I was a little put off by the lack of coordination of the servers roaming around.We were asked no less than three times by different people if we wanted water.It was Easter and it wasn't very busy so they didn;t know what to do with themselves. But ultimately I had to ask to have our plates taken away.So go figure. The food was good as usual although I didn't get the Canadian Bacon and fired egg on top of the petite Rib Eye steak I ordered.I agreed to have it that way but it really made the meat too salty and the egg added nothing of value.The broccoli rabe was prepared better than I've had in the past in that the bitterness was not overwhelming."

"Living in Red Bank, we have many excellent restaurants to go to and during our 2 years there, we have visited many, but NONE like Via 45. In a word it was OUTSTANDING ! The food was fresh, prepared to order, served with a smile and our overall experience on Easter Sunday was excellent. Coming for a family in the restaurant business my standards are high and I must say the restaurant exceeded my lofty expectations. I would recommend Via 45 without any hesitation or reservation and look forward to dining there again and again and again !!!"

"We had a nice meal at via 45. We thought the prices were a bit steep, but the food was tasty, well presented and the wait staff was attentive. My daughter is gluten- free and they are very accommodating.The scallop dish was very good and the desserts were devoured to their last drops."

"My husband and I had a concert at the count basie - made reservations at Via 45 - oh, my goodness it was outstanding - I ordered short rib ravioli with cream mushroom sauce, the best ravioli I have ever had - the olive oil dipping sauce was excellent - my husband ordered the tuna, it was a little over cooked for our taste, but that was probably due to fact we were not clear to the wait staff. I would go back again and again."

"My husband and I have been to Via 45 about six times now, and each visit was memorable. All the entree choices are wonderfully prepared, and the menu is handwritten and changes daily, depending on what is available at market each day. It is a BYO restaurant, and the ambiance is friendly and cozy. It's very eclectic in decor, and I feel like I'm dining in someone's home. Via 45 is chef-owned and operated, and the attention to detail is obvious in every dish they prepare. You won't be disappointed. Remember to save room for dessert!"

"We always look forward to our visits. This time we brought some friends that are vegetarians. We had been touting the restaurant to them, as we were certain that they would have lots of fresh choices. While that was more than true, I felt that the kitchen and the service was a bit less exciting and precise than on past visits. The servers are always friendly and helpful, but they should also strive to be professional and not too much a part of the guests dining experiences.
Everyone can have an off night, and I really hope that was the case, rather than a real decline in the kitchen's enthusiasm."

"Beautiful atmosphere....feels like a Tuscan farmhouse. We were a group of five and every dish was fresh and delicious....arugula, blueberry and watermelon salad (never would have thought it could be so yummy), mussels in white wine and garlic (bread to mop up broth), shrimp,asparagus, tomatoes and garlic over penne (intensely flavorful), barramundi with lemon and herbs (fresh and simply prepared) and eggplant paremsan prepared perfectly. Excellent restaurant....highly recommend."

"Some initial confusion over our reservation done on open table and confirmed with discussion via phone - however quickly resolved. Limited appetizer for group sharing - no flatbread or toast options that would have been good for our group as we sipped our wine and chatted. The fish was good and the vegetables, cauliflower and chard, excellent. Only one desert was ordered and it was good. Overall good meal and well served."

"I really enjoyed dining at Via 45. The staff was warm, knowledgeable and helpful. The food was even better than that! I am no foodie but I know good food when I see it. The food was not heavily seasoned but not bland either; each ingredient was allowed to shine on its own. I had the pork chop Milanese and Broccoli Rapia and chickpeas in garlic and oil."

"Via 45 has been my favorite restaurant in Red Bank since it opened. I have dined here countless times and have never had a bad experience. The food as well as the service has always been outstanding, until this last visit. The food is still outstanding, however, our server lacked training. She rushed us saying said that there were reservations after us so be ready to order by the next time she came back?? Seriously? We barely just sat down. Via 45 is known for it's cook to order meals. You have to plan to be there for several hours if you are ordering several courses. It's a slow & relaxing dining experience which is one of it's assets. Not so if with the server we had. The owners need to be mindful of their servers-it can be a detriment."

"We loved our dinner at Via45! Our waitress was very nice and helpful. She explained that the menu changed everyday, but the chefs were willing to create whatever we wanted as long as they had the ingredients. She recommended the chicken parmesan, which was not on the menu (eggplant parmesan was and they had chicken), so I ordered that. It was so delicious! My husband had the pork chop which he enjoyed every last bite of. We split an artichoke appetizer and an apple tart for dessert - and everything was made with attention to detail - and you could taste it! The restaurant felt very homey and cozy, and we are looking forward to going back again soon!"

"Food was outstanding and service was fantastic. We had reservations and upon arrive we were sat at a small table for two that was what my husband and I like to call "the wild card table": bad spot, constant distractions and no room to move. My husband wasn't happy and asked the hostess if we could be moved - without hesitation they found an open table (large corner) and accommodated us without question. After that every staff member in the restaurant stopped by our new table to say they are so happy we were able to be accommodated because they want to make everyone happy when they walk through the door. What a wonderful experience. The food was top notch and the best I've had in a very long time. Tuna Steak melted in my mouth! *****"
