The philosophy at SALT is simple; a belief that the best food travels the shortest distance from farm to table, that menus should change with the seasons and that the locally sourced ingredients, combined with European technique and innovative thinking make for a truly remarkable experience. Chef Bradford Heap and his staff have made a commitment to source local, organic and fresh ingredients whenever possible. The menu reflects this mind-set, simple, yet elegant and delicious. The wines, while sourced all over the world offer our guests some classic profiles, while introducing them to some new and exciting choices as well as a pre-prohibition cocktails with a twist. "We had a great Mother's Day brunch at SALT. The table was ready when we walked in, the Make-Me-Mimosa was a great idea and JUST enough champagne for two people to have a nice time of it. The food was fantastic and would have been taken home, but we were in town only for the graduation. I had the flatiron steak-- OMG! We ordered from a prefix menu-- and as a pickier eater, I can say that I was satisfied. YUM! All in all it was a nice place, wtih attentive staff, great atmosphere, and we had a very nice time!"

"My husband, vegetarian daughter and I had lunch here. Fresh local produce. The tomato soup special was exceptional, as were the spicy chicken tacos. Decor is open, but noise level was not too bad on a busy day. Specialty drinks were very good, especially the expresso martini my husband ordered."

"Food was good - probably better than good. The service was very good; in fact almost too much checking on how we were doing. It's got an upscale, but laid back ambiance. The drawback is that it's on the expensive side. There are a number restaurants within a block or two that can offer the same experience for a lot less cost. It might be a special occasion place, but not my go-to restaurant in the west Pearl St. area."

"The food is very good here, but the portions could be more generous. I am not a big eater, but I was wishing for more accompaniments to the salmon I ordered. My 20 year old son had the delicious tomato soup appetizer and the ahi entree, and he announced that he was on his way to Taco Bell (yecch) after our dinner because he was still hungry.

"We mentioned in the comments section when reserving on OpenTable that it was our anniversary celebration, and the hostess brought us two complimentary glasses of champagne as soon as we sat down. "Salt wasn't too crowded when we were seated at 1pm on a Saturday, so we can't be the first to have realized how it has slipped. Service was amateurish and slow; a cappucino and a beer took 15 minutes to arrive; the famous pink salt sprinkled on butter accompanied by foccacia was never offered...we won't be back."

"Changed for the worse. We waited 20 mins to be seated for our reservation, then had to be seated outside because no tables inside were available. Warm beet salad served cold as was the salmon entree. My soup was great and the steak just OK. The couple seated next to us waited 15 mins after being seated before they even saw a server. Something has gone wrong with the management of SALT, and a fine restaurant has suffered. This once was a special place; not sure I'd go back."

"With a notable chef and an historic location and ready-made walk-by customer base, Salt could be a real gem. And it is a fum spot in downtown Boulder. But the food should shine and it falls just a bit short. Our steak was wll cooked but an inferior cut. The lovely bolognese had several chunks of gristle. Our salads were competent but unimaginative. If apps amd entrees were 20% less in price, I'd have no objection. Compared to neighbors The Kitchen and 10-10, Salt fails to sit at their table."

"We had been to Salt a year ago and loved it, but this time we were disappointed. The food was uninspired and just not up to par with what we'd experienced last time. The tempura oyster mushrooms were way too salty and overpowered the taste of anything else on that plate. The veggie assortment entree seemed like a bunch of random chunks of stuff sitting next to each other, none of which being particularly amazing, and the bouillabaisse soup had an uncomfortable "fishy" taste to it, although we are from the coast and are pretty picky about our seafood. The service and atmosphere were good, but the dishes did not live up to the mass of fancy culinary terms in their descriptions. It was not worth what we paid, and we won't be coming back again."

"I am sad to say that our experience at SALT last night was highly disappointing. We have eaten there many times and always loved it. So, we took our daughter and four others for her birthday. I had the cassoulet, it was like eating chili mac. Sure, plenty of great sounding ingredients but the taste was ordinary and the presentation sloppy. Two others got the bouillabaisse and it was mediocre, my husband described it as a soup he could have gotten at a chain resturant. The service was slow, and even though it was busy we didn't get offered a refill of water until we were getting ready to leave. Since the water is delivered in a prefilled bottle I felt that was inexcusable. It still hurts to have dropped $271.00 for a really poor meal."

"We had all heard great things about Salt, and it lived up to the expectations. The food was amazing (we were there for brunch) and they have a fun, customizable drink menu that we took advantage of. We would definitely return and/or recommend Salt to anyone asking! It is pricey, but great for a special occasion. We look forward to checking out the dinner menu next time..."

"The food was delicious. Two of us had their vegetarian entree and two had the slowed cooked short ribs. Everything was delicious. The signature dessert was to die for and their bread (with course salt of course), salads, and service were as good as one could expect. We ate on the 1st floor on a cold, snowy night, and the view of the Boulder Street scene added to the ambiance as did the view of their kitchen which I always enjoy. We'll be back. -- Carol Rose"

"Gluten Free Desserts that taste TERRIFIC!!! The hostess is a mess, had a reservation but no table. Waited at bar and we would have waited an hour if we hadn't reminded her after thirty. Cocktails were a little boring, the entrees were are least favorite of 5280 but the Honeycrisp Apple Salad was special. I couldn't have made it at home and it had the perfect balance. The cookie in carmel was the stuff dreams are made of.........."

"We enjoyed a late lunch and the restaurant was not busy so my Noise rating is quiet. I can imagine it would intensify once the place is full. This chef knows how to cook! The dishes are thoughtful and artistic. The flavors don't disappoint either. Quality ingredients and prep. Staff is very friendly."

"This is normally one of my favorite restaurants in Boulder, but the night we went - as part of Denver Restaurant Week - the food was pretty bad. The waitress told us she would have to charge us $2 more for gluten free bread. We said fine. She charged us $3. The bread was totally gritty like sand and stale. The entrees came with a film on a the sauce, as though it had been sitting in the pan for a long time and had cooled and they forgot to stir it when they reheated it. It also was bland and not very flavorful. The dessert - molten lava cake, was cold. Molten lava cake is supposed to be steaming hot from the oven. My piece had just come out of the fridge, had been reheated, but not all the way through. Still delicious, though."

"My wife and I eat at Salt periodically and have never been disappointed. The food is always well prepared and tasty and the wine selection is a good match to the menu. Service, from your first step in the door to the time you leave, is excellent. On this occasion, we had an early reservation (5:30) and enjoyed a leisurely early dinner. Salt never gives you the impression that they are trying to turn the tables quickly, so this is a good restaurant to go to when you want to socialize and enjoy a conversation. We've taken friends and family to Salt and have recommended it to others as a place to go to have a good, friendly and relaxed meal. We particularly enjoy eating at Salt in the summer, when we can sit outside and watch the people go by."

"Salt is a wonderful restaurant. Formerly the restaurant was very noisy and we would not consider it with a large group as conversation was not possible down the table. They have added some sound dampening decorating and we can add back Salt to our preferred list even for groups of 6 or 8."

"I really wanted to like this restaurant. We went during restaurant week and everything listed on the menu sounded right up our alley. The execution however was poor. The service was friendly, but very slow. For our appetizer most of us ordered soup, it took a very long time and it was served luke warm. We had a party of four who all ordered different entrees, only one of the four entrees lived up to expectations (the short rib was delicious). The bouillabaisse was flavorful, but the fish was over cooked, the lasagna was just ok and was served on a very unappealing bed of buttery hot lettuce. The apple tartin had a surprising lack of flavor."

"Food was good but the seating was uncomfortable. There were only two booths, the rest of the seating was at tables with chairs that were not very comfortable. Seating by the front door was chilly - kept our jackets on during dinner. I'd consider possibly going back but would go during warmer weather and request one of the two booths."
