Through the innovative mind of the Top Chef Master comes Fleur by Hubert Keller, his latest fashionable epicurean experience. The restaurant features rejuvenating décor spotlighting an expanded patio, sociable bar, and lounge seating. The modernized menu offers an array of small plates inspired by cuisine from Chef Keller's travels around the globe. Enjoy old favorites including Truffled Onion Soup, Lobster Mac & Cheese and Foie Gras mousse with huckleberry gelee among other classic Keller dishes consistently cooked with a light hand and an eye on health. Chef Keller takes a contemporary application introducing such items as Veal Schnitzel, Skirt Steak-Chimichurri, and Meatballs with orange zest, Hamachi with soy-ginger foam, Brick Dough wrapped prawns and Braised Thai Duck. Young-at-heart desserts, such as a trio of Signature Milkshakes and Cotton Candy accompanied by caramelized popcorn, marshmallow and mini cupcakes, and our favorite Homemade Beignets are offered as well.

"My wife and I asked for suggestions on places to eat before we went to Las Vegas. A friend who used to live there referred us to Fleur because as a local it was a place where he would eat for a special occasion--when we arrived, we could see why. The service was spot-on and the food was amazing. We asked for both chef and server recommendations and wound up with one of the best meals either of us had ever eaten. This included ahi tacos, duck, meatballs, and lavender cake. The food was delicious and presented well. The timing of the food was perfect. The only downside was that we ate here the first night we were in town and every other meal paled in comparison--we would recommend that others eat here the last night of their trip instead."

"It was great to have such a beautiful place happily accommodate a vegan. The farro salad was very delish and they even offer a gardein cutlet. Arugala salad was yummy. Vegans so appreciate delicious food!"

"Food was fantastic as always. Still disappointed they did away with the bread plate. Not sure I like the new menu. I liked it better when the restaurant was mostly small plates without segregation by country. But the food is always delicious and every year we have the same server. I believe her name is Kat. She is excellent and we are always happy when we see that she is still there."

"My friends and I ordered 6 different dishes to share and not one was noteworthy. The ahi tuna tacos had no flavour profile to speak of and the shells were soggy. The French tart had a great crust but that was all that was great about it. Each dish after it was OK - but not as good as I'd expect from a Keller restaurant or for the prices they charge. We wanted dessert too, but went to a different restaurant."

"I had a mixed experience at this restaurant - we showed up early, and were still seated immediately (plus). The waiter told us that this was mostly a "small plates" restaurant (which isn't obvious from the menu) - not a big negative, but a slight one. My wife and I ordered a filet (not a small plates portion) that the waiter switched the doneness (easily fixed) but my wife's was still undercooked - when the manager came over to inquire about our meal, she gladly sent it back, but then it was overdone (big negative). It was my wife's birthday, and I noted that on the reservation - and they brought a complimentary birthday dessert (that had someone else's name on it) - mixed bag.. Overall, this place was a disappointment."

"Had a great dinner. Bone in New York was yummy and garlic fries with home made mayo was perfect. Staff was right there for you if you needed a question answered. Band started playing in the bar area which is near the restaurant and were kinda loud, but they were really good so we went out and watched them after we ate. This could be a problem if you don't like the music they are playing or if you want a really quiet setting."

"The food is superb, the service excellent.

"We were very excited to finally get to try Fleur as we are fans of Hubert Keller and lived in Alsace for 2 years. The service was attentive and ambiance lovely if not a bit loud with the music from other restaurants. Unfortunately, the food did not live up to our expectations. The tuna tacos were unremarkable, lacked seasoning and were comically small. The Tarte Flambe was the size of a large sub roll and nothing like those in Alsace. Sadly, no one in our party was impressed with the food."

"What's happened to this restaurant over the last two years?
Ever since they changed from their more traditional yet updated French cuisine to the newest GLOBAL TAPAS menu, things have really gone downhill for me.
I've been twice since the name & format change and I don't plan on returning anytime soon.
While I realize that the recession hitting Vegas hardest in 2009-2010 forced them to reinvent themselves, I don't think the new equally expensive tapas format is working very well either.
We were there at peak dinner time last Sat. evening and the main dining room was only half full. This certainly wasn't the case prior to 2011. I must not be alone in thinking that Chef Keller is missing the mark more often than he's hitting it l"

"My friend had been to Fleur a few years ago prior to the change over. He was raving about the food saying it was one of the better french restaurants that he had been to. When we arrived, it was towards the later part of the evening (9pm). Though I had made an online reservation, I was not seated until 20 minutes later - though there were plenty of open tables. We ordered the onion soup (absolutely fantastic and great presentation), the tuna tacos (were tasty, but I expected more - the jalopeno was a good touch), the duck confit (WAAAAAAAY too salty we had to send back). The highlight was the creme brulee which was absolutely delish, the best I have ever had. The overall experience was slightly disapointing."

"We went on a Sunday night, early, and it was pretty empty. Our food came out very quickly, service was attentive without being intrusive. Especially loved the foie gras and short ribs. The diver scallop presentation was really something - presented under a smoke filled glass dome. Overall, a pricey meal, but worth it for a special occassion - we'll most likely go back next time we're in Vegas."

"We were very surprised and pleased when they took our party of 8 to the private wine room upstairs overlooking the restaurant. They had a round table in the room which is excellent for a big party. The atmosphere and food were outstanding and the service was great concidering those poor servers had to climb all those stairs for every order delivered.
I would definetly recommend this restaurant to others and I know our other friends were equally impressed and will be bragging of the great experience as well.

"extremely well prepared meal. They have a small plates dinner menu which had enough variety to appeal to our differing palates. On the down side, and this may have been more in our choices, the food wasn't as experimental or didn't push my palate as much as I would have expected for a restaurant of this quality (my dining partner leans to the traditional). On the cocktail side, the Paris in Bloom was really nice, though a bit strong in flavors for a drink to stimulate your appetite. The apple/absinthe cocktail was like nyquil and didn't work at all (we sent it back). Would absolutely recommend the place, however, next time I'll venture into other options to see if they fill in those gaps. Service and ambience were phenomenal."

"Regretably, my dining experience was a grave disappointment. I am a fan of Hubert Keller, watch his shows and have made his dishes so I was really looking forward to this dinner. The staff was helpful and friendly but the noise was really unbearable. The casino music blasts loudly into the restaurant and combines with the restaurant's in a terrible cacophony. Unfortunately, this ruined the meal for me and my husband. We will never go back."

"So enjoyable! Quite private table for six. Great fun discussing the menu and deciding on the small plates to share and review. Staff was informative, offered the perfect level of attention and very pleasant. Wine list included both easily recognizable, want-to-try, as well as over-the-top choices. Food was creatively and beautifully presented. From the sliders to the scallops, the duck to the chocolate souffle, every plate was pleasure. Highly recommend this restaurant. A great place for a client dinner or group of friends.Enjoy!"

"The food was delicious. Service was good, but our waiter was very busy and was not able to check up on us as often as he should have. As we were waiting for our meal, Huber Keller, himself, walked out of the kitchen. Nice to know that the all star chef was in the kitchen peeking in on the meal preparation. The wagyu burger was delicious and my wife really enjoyed her short rib lasagna."

"This was my first visit to this restaurant having watched Hubert Keller on my local PBS station. The menu is arranged by country and you can mix and match. The portions are like tapas so it was fun to sample multiple items. Presentation of the food is exquisite. The service was impeccable. Hubert himself was there and stopped to talk to us. He posed for photos for anyone who asked. He was very gracious and gave us the update on upcoming tapings of his PBS show. A true delight all the way around! Do NOT skip dessert."

"The food was exquisite, service was good. However, the ambiance wasn't very comfortable as the arrangement/construction of the restaurant allowed for all the sounds of the neighboring casino in...indeed it seemed almost as if the noise were amplified. That said, it's still a worthwhile venture for anyone who really wants to treat their taste buds to something special."

"I had very high expectations for Fleur, so that might account for some of my disappointment in our dining experience. It is a tasting menu, as the portions are very small, but that allows a variety of menu items to be tried. Half of what we ordered was excellent, the other half rather pedestrian. Having watched Keller cook on various tv programs, I had high expectations for everything, but that was not the case. I think it is worth trying, just pick carefully what you order, though with all the many restaurants in Vegas, I would probably not go back there."

"The food was good although not exceptional, the service equally good and acceptable, the "Wine Guy" (can't spell the real name) was especially nice and accommodating.
However, you probably guessed something was coming, the ambiance was spoiled by where we were seated, initially right next to a loud and animated party with at least 12 + people and a constant flow of waiters and patrons on both sides of our table. We requested to be moved to and were seated at another table a few feet away which reduced the noise level but didn't change the traffic pattern much...The flowers, ordered through Open Tables recommended supplier, arrived several courses into the meal, forgivable as it was Valentines Day. There is more but I've run out of space.."

"I love the relaxed feel of this place - small and cozy – like a comfortable living room. I definitely would return to try more dishes. The Ceviche was amazing and the waygu burger was juicy and very flavorful. The special anniversary desert was totally over the top and made our tastebuds dance.
