With access to an array of outstanding local products as well as ingredients and artisan purveyors from around the world, Cogley and Mendoza focus on incorporating these elements into their ever-changing menus.The intimate 12-table Aubergine restaurant features an underground wine cellar that was constructed beneath the inn's courtyard to house the restaurant's 4,500 bottle collection. "A non-alcoholic beverage was ordered along with a glass of wine, and not brought to the table until the glass of wine had been consumed. When asked if we wanted coffee with our dessert we stated yes, but the coffee was not brought until the dessert had been finished. Japanese beef priced at $32.00 per ounce was not any tastier or less grainy than one would would normally expect at a restaurant of this quality. Overall the food was excellent!! Servers were pleasant, very personable, and explained each course very well."

"The food was exquisite, and that comment comes 48 hours after eating at The French Laundry! The sommelier was fantastic and his wine pairing recommendations were perfect. The restaurant staff could not have been better. We will definitely have dinner (and stay) here during our next trip to Carmel-by-the-sea!"

"Not worth the price, unfortunately. The scallop was cooked perfectly, and the dessert was delicious. But the focus of the meal, in my opinion, was the dungeness crab and ribeye. Both portions were unexecusably small with the crab maybe being 2 ounces and the ribeye being 4 ounces. The crab was basically prepared, as was the steak, with nothing really special about them for a fixed menu. The "dressing" for the crab was original, but not a "cut-above." The only perk of the ribeye plate was the mushroom and the glaze. The ribeye required a supplement without description as to why. It was not filet or a special type of beef such as Kobe. Overall I cannot understand how they justified the portion size and pricing."

"Not reccommended. Very over priced for the quality. Over heard the next table wondering where they could go next, because they were still hungry after dinner. Not the French Laundry!!! Too many great restraurants in Carmel to waste $450.00 (for 2 people) on dinner at Aubergine. We are foodies, and do not mind spending money, but never again here!"

"What a wonderful meal. I chose Aubergine to celebrate my husband's 50th birthday, and I couldn't have made a better choice. He was presented with a customized menu, and the evening unfolded beautifully. My champagne was delicious, his cocktail was a very generous pour. We chose the Aphrodisiac Spontaneous Tasting menu, and each dish was better than the last. There must have been a dozen small courses, maybe more. Classics such as a oyster on a half shell, innovative bites like a ribeye wrapped in nori, each plate was a treat. We were sent home with lemon shortbread-when we thought we had no more room left! We were wrong.....
And they tracked us down when we left our wine tote behind. Awesome!"

"Wow! Some of the the most amazing taste treats and presentations I have ever seen. You have to tip your hat to the Chef here. Dining room is small but intimate UNLESS you have the table in front of the Kitchen and Back Bar. (likely sb removed). All is all however, a dining experience fit for a King & Queen. Bring your credit card as the fare is pricey but, well worth the adventure."

"I took my wife here to celebrate her birthday and because they serve abalone. We were pleasantly surprised both by the service (attentive without being annoying)and the food. We had the "chef's surprise", where you let the chef know what ingredients you wanted, and they prepare your plates.
It's not cheap, but I don't mind paying when the food is this good. They do include the gratuity in the bill, which I found a little off-putting.
All in all, we had a great time, and we'll be going back whenever we're in Carmel. Note, they don't have many tables, so book early."

"Our first visit to Aubergine was outstanding. We recently moved to the Monterey Peninsula and have been looking for a place to celebrate special events to replace Gary Danko. We found it in Aubergine. Our dinners (with the exception of one item) were outstanding as was the wine pairing. The only minor disappointment was the crab appetizer which was too cold to be able to be able to taste the crab. The take away gift of chocolate cookies were without a doubt the best we have ever eaten and a pleasant reminder of our wonderful dinner at Aubergine. We will return often."
