Aureole - Las Vegas
Although it's the largest city founded in the 20th Century, Las Vegas retains the energy of a frontier town where the unexpected is still a daily occurrence. The dining scene is equally as adventurous and Charlie Palmer is one of its trail blazers. Sensing that Vegas was about to undergo a renaissance, Palmer made an early investment, opening Aureole in the Mandalay Bay Resort in 1999.
The show stopping menu under the direction of Executive Chef Vincent Pouessel combines the classic cuisine of Aureole with the theatricality of Las Vegas in dishes like Olive Oil Poached Oregon Petrale Sole with Truffled Brussels Sprouts and Ahi Tuna and Veal Shank "surf and turf", while a four-story, temperature controlled glass and steel wine tower—the largest in the world—houses 10,000 of Palmer's award-winning 50,000 bottle list, made accessible by an elaborate pulley system presided over by "flying wine angels" clad in black spandex Calvin Klein. After all, this is Vegas.

"From checking in to dessert, unbelievable dining experience. Food was phenomenal. Staff was friendly and very attentive. Definitely recommend sitting by swan court. It's like having your own patio to go out and feed swans between courses. It's also much quieter than dining by wine tower. Pricey but worth every penny. Left a very memorable experience for wife's 40th birthday. Definitely will be back."

"If I could do it all again I would sit in the bar to enjoy the wine tower spectacle. Then just order wine and the french onion soup. Save dinner for somewhere else.
The octopus salad was ok. The french onion soup was really good and was presented well. The scallop entree was so-so, not great. The filet was a filet. The wine tower was impressive to look at, but unfortunately I felt like the average meal was being overpriced to pay for it."

"I took my significant other to Aureole for his 30th birthday and the dinner was far more than we could have expected. We had a table with a balcony that we could sit outside and watch the swans swim while sipping our delicious wine in between courses. Each course was a delicious and absolutely amazing. Our server was very hospitable and made us feel very special. This was by far the best meal we have ever had in our entire lives. Thank you."

"We visited Auerole on a Friday night with a reservation and were seated in the rear area of the dining room, near the entrance. As we weren't that hungry we didn't want the tasting menu. Overall impression of the restaurant was mediocre given your other Las Vegas options. My husband's salmon was fine, but my shrimp scampi was not cooked through (they, of course, offered me another option and did not charge us for it), but not what we'd expect of this calibre restaurant. Tasting menu may be your best option here, and request a table in the front of the dining room. Staff was generally welcoming."

"Delicious! Best meal I had in Vegas last week. Got the pear salad and it was very good. But the blue cheese filet was suberb. We both ordered medium plus and the chef nailed it ( this rarely happens) uber juicy slice of meat. Could have cut with a butter knife. Also got the mushrooms on the side which was the perfect accent.
Will definitely be coming back here next time.

"I have been to a few of Palmer's other restaurants in Washington and NYC. They all have consistently good food, excellent staffs and very good wine lists. I had a great meal this time but, the sommelier was rude and unprofessional. He presented the bottle to my guest and when my guest said, "Ask him." and looked at me, he started to walk away and said he would decant it. When I raised my voice to gain his attention so I could confirm the bottle, he rolled his eyes and huffed at me when I asked to try the wine before he decanted it. I have been writing wine reviews for years and have gotten along well with every sommelier I have ever met. This was the first time I have met "that guy"."

"2nd time here. It's the only fine dining place we know that would accept kids, so that's a plus for us. The place is known for wines, but we're not wine drinkers. We didn't feel pressured to purchase wine, but I still felt bad. Nevertheless, we still enjoyed our meals except that they seat us next to a table of most likely businessmen. It would have been a more enjoyable and quiet dinner if they only put more distance between tables."

"This was my second time back at Aureole. And, this time, it was for my engagement dinner. The flower arrangement ordered was equally lovely.It remains an exceptionally fine setting and cuisine. The service is impeccable and the Swan Court just adds to the already air of ambience. The parallel tasting menu was to die for!!! Would definitely return to to Aureole again.If I had to make one negative point, it would not be about the restaurant, food nor service per se. I would be about the "drunkies" in the men's and woman's room as we left. But, than again--it was Friday night in LV.I would not expect that at an award winning 4 diamond restaurant???Chuck Blitzer"

"Condescending and extremely pretentious waiter, food server apparently a mute and food sub standard. We sacrificed lunch so that we would really appreciate our supper at this restaurant which ended up being a very bad mistake on our part. The restaurant was soulless and with the food being pretty much nondescript, giving this review a 1 star is being generous. In the 1.5 hours we were here, the wine rack zip line feature was used once once. This was impressive in the fact that we'd not seen anything like this before. However you can see this from the hotel floor without the need to make a booking or wasting your money - which you will be - by eating here."

"this is our second time to visit and we loved SO much last time. EVERYTHING was perfect last time. I really talked up how great this place was going to be to our friends that we invited this time. Sommelier was amazing and we gave extra cash tip because she was so amazing. Our food was amazing. The atmosphere was amazing. Our service was absolutel horrid. We couldn't get water, we never could find him when we needed him. We spent almost $700 and for that kind of money I would think that we should receive outstanding service and it was terrible! I have had better service at Sonic! Questionable whether we will ever visit there again"

"I was hoping to see more of the "wine angels," but only one showed up during our dinner. The wine rack is very impressive (look it up!), given the extensive wine list. We certainly enjoyed our bottle! The food and service were also excellent.

Steaks were improperly cooked, appetizers generally not terribly interesting, menu choices seemed kind of tired. Some of the very basic things were just... ordinary. "Eating there was an event. Our table was situated near the window with a view of the fountain, sky and tree tops. The dining room itself was very modern and elegant. Once I got past some initial confusion interpreting the menu, I found the selections to be very tempting. My husband ordered the caviar to share with me which was impeccably served. My onion soup had a perfectly browned puffed pastry topping which was beautiful and was filled with little bits of foie gras. The steaks and accompanying wild mushrooms and sauteed vegetables were cooked to perfection. And the wines!!! From sparkling to port with desert….wonderful! My hats off to the chefs and to all of the amazing service staff."

"Amazing wine cellar. Largest on this side of the country. Food was great. I had a reservation and ended up eating at the bar. The receptionist came over 2 hrs after my reservation and asked if I still wanted the reservation. I was done eating. This was a thousand point reservation turned into a 100 point reservation."

"This was one of the best meals I have ever had. Everything tasted delicious and was at the right temperature. The steak was soo juicy and tender. My wine accompanied my food perfectly. I loved the atmosphere and the look of the place. It made for a very romantic and memorable first night in Vegas. We will definitely be coming back."

"had 30th wedding anniversary dinner. we both enjoyed the seasonal tasting menu offering, with a substitution of fois gras from a different tasting menu for our appetizer. the extensive wine list was on a electronic tablet, which was a little cumbersome, but the ability to sort selections by different attributes (grape, price, etc) was nice, and the ability to see a discription of the wine character was also nice and outweighed the tablet's shortcomings. the noise level was not as quiet as I had hoped, but it was typical for this style of restaurant. the food was very good, the service was attentive and excellent. i would go back for a special occasion."

"for a restruant with a unquie atmosphere ( wine tower) it preety much did not meet our expectations. Food was disappointing service was well below average for a place of this caliber. There were 6 people with no view of the wine tower, seated us next to a party of 16 which was very loud. Waiter rushed us to order then disappeared for 30 minutes,

"Everything about our dining experience at Aureole was great... and it would have been wonderful if it wasn't on Valentine's Day. It seemed the staff was in the weeds when we arrived, as we did not get seated for our 8 p.m. reservation until 8:45 p.m. The staff was friendly and professional, but each encounter felt very rushed. My chief complaint was that I called ahead specifically to make sure the Parallel Tasting Menu was offered on Valentine's Day and not replaced by a Prix Fixe menu. I was told it would still be available to order, but when we arrived, we were informed by the wait staff that this was not true. The menu had been removed for the evening which was unfortunate because that is why we made the reservation."
