"Had been to this restaurant before for wine and appetizers. However, first time for dinner. Speciality drink list is extensive and cretively pleasing. The chef came ot our table and asked if he could filet the pork chop because the thickness would take 35-40 minutes to cook. The pork chop was nicely prepared. Flavor combinations for dessert were also unique. Enjoyed it overall. Not a quiet date night place, but a great place for great food and conversation."

"We've been in Castle Rock for a year and just discovered this wonderful gem! The calamari small plate and salmon large plate were fantastic!! Both had amazing sauces that complimented both dishes perfectly. Our server, Chuck, was attentive but not overbearing. He offered great suggestions and was prompt and very professional. We can wait to return here soon!"

"The food was terrific! Our server Kayla went out of her way to accommodate us. The only thing we found a little disconcerting was when we had finished our meat and dessert, we were asked to move to another table so they could sit a table of 10. That being said, although a little irritating at the time, will not stop us from returning to the restaurant or recommending it to friends."

"If you want to go to a great little neighborhood restaurant, Union is perfect. It's small but not loud except in the bar area. Happy hours are really great there. We went to dinner on Friday evening at 5:30 and sat in the dining room away from the bar scene. Service was great and drinks and food came out promptly. I would definitely recommend this restaurant to eveyone. We have been going there for many years and it's truly a Neighborhood Jem."

"This was our first visit to the restaurant we have meaning to go to for some time. We found atmosphere warm and cozy, the wait staff to be friendly and accommodating, the food to be different from the usual american restaurant offerings and very good in every way. We happened to go on a Wednesday night and were delighted to find it was 'half price bottle wine' making the experience even more pleasurable."

"We enjoy this restaurant. It's very classy but cheaper than some of the other area restaurants. I do wish it was less noisy - I don't know if it's because the brick interior doesn't absorb sound or what, but it can be pretty hard to hear. Once it's warmer and we can eat on the patio we'll probably go more often."

"They have returned to their pre-recession glory. The food is outstanding, ambiance is exciting, service is good, but not invasive. Altogether, eating at Union is a delightful experience.
When we moved to Castle Rock in 2007, Union was our favorite restaurant, bar none. However, we stopped eating there altogether after super invasive service experiences and only mediocre food on several occasions around 2009-2010. A few months ago, our friends suggested we meet there and we went along with it.
We are SO happy that we did. It is better than it ever was. I don't know what's changed, but it is our favorite restaurant in Castle Rock, once again."

"My husband and I went there for our anniversary, and we had never been there before. We went on a Thursday night and it was pretty noisy. For the money for the food it could have been a little better. My filet could have used a little more seasoning it was good but just didnt get the wow factor. The salad was tasty but it was just lettuce and dressing nothing fancy. I didnt like that the salad was ala cart. I feel it should have went with dinner. My husband had the pork chop it was good, but not amazing, the sauce and apple chutney that went with it was yummy. We had calamari for the first time, it was cut into pretty big strips or fingers, and was pretty rubbery. I was expecting a little more amazing from this restaurant."

"I have been to the Union American Bistro about 4 time and everytime it has been perfect. I had requested an item the use to be on the menu and because they had miso salmon cakes on the app menu I was able to get the salmon burger which I LOVE. Great service EVERYTIME!!! I have had people in from CA on business and had taken them there for lunch, They live in the LA area of CA and loved your food and service!! I also choose the Union as the place to go for my 50th Birthday!! Thats how much I love this place."

"We had out-of-town guests for the weekend and dined at The Union. Were they impressed - absolutely. We had the tenderloin and the salmon entrees. Both were prepared perfectly and the taste was wonderful - everyone agreed on that account. The $5 martini special on Saturdays is a perfect way to enhance the experience. Service was great - our waitperson had several tables and she attended to all of them with sterling service. Food and drink were delivered quickly and glasses were never empty. Our guests were really impressed with a restaurant of this calibre in a small town atmosphere. Great evening."

"Union wasn't crowded, so I'm not sure why the service was almost non-existent. We started with one server who completely disappeared. Then we had another server who gave us our food and drinks. She never came back to ask if we needed anything, no drink refills either. We had to ask for more water and iced tea, way after our glasses had remained empty for most of our lunch. We hadn't been there for quite awhile (due to a similar experience before), but decided to give it another chance. Not sure we'll be back."

"This was our second time dinning at Union and we were more impressed than the first. We got stuck in traffic and were running a bit late to our reservation. As always I called to let them know. When we got there they said "great were glad your hear and thanks for the phone call!" That tickled me pink and the service was excellent from then on out. We also had huge portions for Restaurant Week, and the food was wonderful."

"Great place. Did the 5280 week and had the roasted peppers (very good - make sure to get the salt on them from the bowl as it doesn't cling to the pepper very well), the calamari (also very good. It's cut wider and cooked flat, rather than the tubes they usually are). Had the double cut pork chop and my wife had the salmon. Both were good but a touch overcooked. The sauce on each was a bit sweet for our tastes, but still good. The salted caramel ice cream desert was fantastic and the coconut cream pie was good although not very memorable. Not sure how'd you'd make it more than what it was.
Overall, a great little place. Parking's a bit tough as we didn't see a lot - just street parking on a Friday night - a little tricky. Would return."

"Union is a great neighborhood restaurant, especially if you don't want to go to a food chain for dinner. The food is unique and well prepared, and the prices run the gamut so you can find something good in every price range. The happy hour is terrific (3-6p) with lots of low priced appetizers to choose from. The bar is like a Cheers bar and usually has lots of people arount it. TV too in the bar."

"Staff were awesome and very attentive. Went there for a first date and was a hit! Food is excellent and not like everywhere else. Also, since this was our first time there, they offered a free dessert which was wonderfully unexpected. Was really loud when we arrived, but was due to a large group that was celebrating. Really died down after they left which was nice. They did have a nice wine menu, but we didn't drink that night. Will definitely return and highly recommend!"

"We went here for valentines day and took the kids with us (I travel a lot and it was a great opportunity to celebrate the evening with the family). We were seated promptly even though they were obviously busy (nice that they keep seating available to match their reservations). The wait staff were all very prompt and courteous. The menu was a delight with unique fusion creations prepared by the chef. Everything we ordered was great including the wine. As I was driving, we did not go for a bottle but chose a Pinot by the glass. Our waitress brought a new bottle over as though we had purchased it, prepared a sampling and then offered very generous pours. We will definitely return"

"The chocolate bread pudding is amazing. One of the things I love about Union Bistro is the price range on the menu - the small plates and sandwiches are about $6-12 while the dinner menu runs $18-24. There's something on the menu for everyone - some of the small plates are a little more adventurous for the curious foodie, but the sandwiches are all basic (and delicious!). You can definitely get a full-sized meal here for an affordable price, or, if you're looking for something a little more extravagant, I would recommend the tenderloin. The service is good. The ambiance is nice and laidback though it does bustle during lunch and dinner hours."
