Per Se
Per Se, the much-anticipated restaurant from renowned chef Thomas Keller, debuted in February 2004 in the Time Warner Center complex at Columbus Circle. With striking views of Columbus Circle and Central Park, the dining room is a rare blend of open space and easy intimacy, discreet drama and understated luxury. Offering a 64-seat dining room, a 10-seat private dining room, a lounge, a bar and wine cellar, all presented in a palette of warm neutrals and natural elements, Per Se will refine and redefine the dining experience.
For dinner, Per Se offers two prix fixe tasting menus for $295; a 9 course Tasting of Seasonal Vegetables or the 9 course Chef’s Tasting Menu, which changes daily. We also offer a five, seven and nine-course menu during lunch on Friday, Saturday and Sunday for $185, $235 and $295 respectively.

"My mother and I decided to combine the celebration of my birthday and Mother's Day at Per se, it was an excellent experience from start to end.
We were very pampered by the wait staff, and they were very knowledgeable, we had a few questions about the food, they were able to answer on spot without having to check with the kitchen.
The one thing I wish I had known before I went was that the Tasting Menu came with petit fours and chocolates and a lot of other delicate desserts. By the end of it we even have to turn down a few wonderful offers since there is such thing as too many good things. Next time I'd go at lunch hour and opt for fewer dishes in order to sample the desserts properly."

"When we arrive we where told that in that section of the restaurant you need to consume a 9 course menu each person , although my nine year old daughter could not eat that much food , we ask them to seat us at the open meu card section they said it was full, after a while we realized that section was allmust empty , so the lied to us , the reazon the outreagous check of each 5 course menu as they allow us at the end 250 dlls each x 4 persons food was 1000 its self plus wine. I tjink thas not fair because some of us wanted tontry some dishes from the menu ."

"Per Se did not disappoint. The food was exquisite, the service exceptional and the atmosphere was lovely. The only problem is getting a reservation. 30 days in advance, if you are lucky. Also, you may have to mortgage your house when the bill comes."

"Had a lovely time! Maybe all of the hype made our expectations too high, but we expected a more inspirational and unique assembly of dishes. While nothing was a major down fall, there wasn't a dish that was incredible. Expected this to be the best meal of our lives, but while it was good, others have been better. At least it was all about the food and not about the performance/showmanship of delivering the food"

"The bar was set high - maybe that's why we were a bit disappointed. The food was mostly interesting in terms of elaborate preparation techniques, very few dishes truly stood out for taste. The most 3-star restaurant worthy dish for us was a cheese dish "Cavatina", the least - the chicken rillette. The service was very good rather than exceptional. The "tour of the kitchen" was a perfunctory supervised entry into the front (dessert) area for a couple of minutes. The parting fireworks of different candies - little cookies, chocolates, etc were too much at the end of a 9-course meal and not of standout quality. The cheese dish or the "Rhubarb and Custard" dish immediately following it would have been a nobler end to the dining marathon."

"I expected a lot from a Thomas Keller Restaurant and Per Se did not disappoint. Every course was picture perfece and extremely tasty. It was pure theater! I loved the baby veggies (radish, carrot). My sister, who is not a "foodie," said it was the best meal she EVER had (in her life!). You can't get any better than that. The service was impeccable. I thought we had a person server with all the attention "Bobby" gave us. All of the other staff (who shall remain nameless) were very attentive, too. We even got a tour of the kitchen and a copy of the menu. Wine pairings were excellent, too. Thanks you so much for a great mid-day meal."

"From the greeting at the entry to the final words of departure, the service at Per Se is simply stunning. Someone there to help and advise all the way but without being intrusive and over bearing Very very genuine.
The food is wonderful. Some unorthodox sounding compilations of flavours on the menu turned into an amazing sensory experience on the palate. This is a Three Michelin Star restaurant and it is easy to see why. Each plate presented perfectly, and the interesting little morsels served here and there in the meal made for great taste surprises.
An extremely comprehensive wine list was well cataloged and easy to understand."

"The food here lived up to all the hype. We did the lunch pre-fix tasting menu for $185/pp. Worth every penny and then some. Compared to the dinner menu this is a steal, at 5-plates it was the perfect pre-theater amount of food and we couldn't imagine having another 4. The service was outstanding, they make you feel like you are the only one in the restaurant. Incredible views of Central Park from the Time Warner Building. When we were there it was snowing outside and they had the fireplace inside on. I can't wait to go back."

"Sadly I lost a pill box which was v dear to me @ it was not found. There just was no other place I opened my bag so I had to hv lost it at per se. Other than that the evening was superlative although we found the food much heavier than the French Laundry experienced 3 weeks earlier. The desserts and extra sweet dishes were SO lovely that it seemed a crime not to be able to eat them as we were SO full. So only criticism is perhaps too many dessert additions and some courses needed to be a bit lighter."

"Per Se Exceeded my high expectations. This was the most delicious meal with the most sincere and attentive service. James was a psychic, he knew what he needed before asking, such as my obsession with ice and little ottomans for our purses. Alexandra and Theresa were so sweet in answering all of our questions.A couple in our group were late and the staff was so nice about it. It is supposed to be 9 courses but they bring you other goodies. There aren't enough characters for me to get into the chocolates, just wow. Per Se is not a gem but a treasure. The flowers, the decor, the ambiance were all supreme. It is worth the time, travel and money. The only down side, how can we ever eat anywhere else?"

"I was unhappy with the experience because of the following reasons:
1. There is no wine pairing for the gourmet tasting menu. It is very difficult if not impossible to match a nine course menu with 1-2 bottles of wine. Also they dont have any good wines that are below 600$ mark.
2. Time we waited between some courses was way too long, especially between rabbit sirloin and miyazaki wagyu
3. Staff are attentive but there are areas to improve. Before the desserts were served the waiter asked us about coffee claiming that because everybody asks for the coffee in the same time, they prefer to take the orders beforehand. This is not even funny for a 3star restaurant."

"Of the 9 dishes on the tasting menu only one was worth the 3 star Michelin rating and the score of 28 in Zagat. As for the rest they were mediocre at best, it was difficult to distinguish the flavour of the duck from that of the veal. It is also something of a rip-off when you are asked to choose between different dishes for some of the courses and the waiter does not point out that there is a supplement. If one chose the caviar, the foie gras and the wagyu beef the supplement would total $245 over and above the fixed price of $295, which in itself is way ovderpriced for the quality and quantity of the dishes. I found the whole experience extremely disappointing."

"From the warm cheese gougeres through the traditional salmon cones and a wonderful smoked yam soup, this meal did not disappoint. An herb roasted abalone was just right and the bobwhite quail breast so tender it almost didn't need the foie gras under the skin, BUT it made it even more delicious! Perfect service, attentive without being overbearing and very friendly. If only the gorgeous wine list had more reasonable prices, the experience would be even better."

"I've only had one other meal that can compare with my dinner at Perse the other night and that was at Guy Savoy in Paris..another 3 star restaurant. The Chef's tasting menu actually was 15 items counting the amuse bouche and desserts. The wine list is extensive and the service is exceptional but not stuffy. Count on 3 1/2 hours to get through it all. You'll enjoy every minute.
The only downside is the price. Expensive but worth it."

"Frustrating. Not a par with Noma, eleven madison park, carlo cracco, el bulli. This is soul less cooking. Business oriented inside of a mall serving predictable dishes without any creativity. The best dish was caviar. That tells everything about a chef. If the best he can do is caviar then there is not much that he can invent. The place is arrogant, overrated, and the food lacks meaning creativity, roots or soul, wines were either predictable or ridiculously expensive. A meal for two for a 1000 dollars.
The only thing i will remember in a year would be the price. Do not reccommend it at all.

"I've been to Per Se twice before and I've noticed a drop in both the quality of the service and the food. One expected to be wow'ed here but the restaurant didn't deliver. The service used to be of military precision but no longer - time between courses varied from too long or too quick. The least successful dishes were clearly the seafood courses. The mackerel with lentils was too fishy and the lobster boudin was a bit tough. Of all the seafood courses this 3-starred restaurant can conjure, did it have to be mackerel with lentils? The meat dishes were duck and beef short ribs. The ribs were fantastic but it's a bit old hat. Overall, compared to its glory days, there was a sense of lackluster and fatigue. The menu needs inspiration."

"I was a little concerned after reading all these recent articles of Vanity Fair and NYT about the tyranny of chefs that "force" you to eat what they want and an increasing number of courses...

"The place and ambianceare are beautiful.The service is extremely good with a staff that is very knowlegeable and professional. My wife is lactose intolerant and they were very acomodating. we were four at the table andwe did not like 2 out of the 9 dishes as they were very salty and informed our waiter about it. When comparing the prix fixe of other favorite restaurants in the city, we found that this one is overpriced. We still prefer Le Bernardine, Daniel or Jean Georges over this one."
