Chef Mark Monette has been responsible for the culinary delights at the Flagstaff House since 1985. His unique style of cooking incorparates French cuisine with Asian accents, brought together by his training in several michelin three star restaurants in France and the Orient. Mark has worked with several master chefs including Bernard Hermman and Thomas Keller. At the Flagstaff House chef Mark has had the pleasure of preparing a special menu for the Emperor and Emperess of Japan as well as the Prime minister of Japan and his foreign ministers. The restaurant has also hosted many dinners for notable culinary dignitarties including Paul Bocuse, Angela Gaja and Robert Mondavi. The Monette family has owned the Flagstaff House since 1971. The restaurant holds many prestigeous awards including Colorado's longest holding Wine Spectator Grand Award. Please note our dress code prohibits shorts, t-shirts and athletic attire.

"The Flagstaff House is one of the best restaurants I have ever been too. Every time I am in Boulder I make sure to dine at Flagstaff House. Everything about the place is 5 star. Food and wine are taken very seriously and the restaurant compares with any New York, Napa area, San Francisco, or New Orleans gem. I only wish this place was in my own neighborhood!"

"The Flagstaff House never dissapoints in service or food. Be sure to ask for a table near the window, because the view cannot be beat. However, it is in desperate need of a makeover! With their prices, pne would think they could afford an update to the 80's decor."

"I've been to the Flagstaff House roughly four times over 20 years. The visit is often very pricey, but well worth it for those special occasions. This was my 10 year wedding anniversary and I mentioned that in the reservation. They went all out. They sent us a free appetizer, put a special note on the menu pages for us, and gave us free chocolate strawberries and a giant lolly pop "Happy Anniversary" sign. The service as great as always and the food is ooohhhh so good (decadent but good). I will definitely go back at my next big promotion or wedding anniversary."

"Overall had a nice time on February 13th, 2010 at the Flagstaff House.

Pros: Pretty broad menu, Great BOTTLE wine list, View is Great, Service Excellent

Cons: Very Small By the GLASS wine list, dining room freezing by the windows, food not as good as expected.

My wife had the Buffalo Tenderloin Wellington and I had Lamb 3-ways. Both entrees were very moist and tasty, but both were slightly overcooked. We both asked for medium rare and both were clearly medium. Had they been dry at all we would have sent them back, but since they were very tasty and still very moist we let it go so we did not have to wait for a second try. At these prices the meat temperature should be perfect.

"In past experiences, restaraunts in this category have always been a let down because they never fully deliver a good experience for the $$ spent. They are usually noisy or crowded and the service "rush you" so they can turn tables over faster. The Flagstaf House service was attentive and the timing of the food was very good--both dishes came out perfectly prepared (filet mignon for my hubby and salmon / prawns for me). The waiter took the liberty of splitting the appetizer, which was an excellent added touch. The atmosphere was quiet,relaxing&warm -- as if there was a fireplace nearby, so we got to enjoy a nice relaxing dinner without feeling like we had to talk in hushed tones. Very cozy --not snobby--and the view was relaxing as well"

"The entire experience was very enjoyable. We were a bit late due to traffic and had to call them to let them know we would arrive about 15 minutes later than our scheduled time. They were very accomodating and understood our problem and said they would have no problem as long as we arrived within 30 minutes of our scheduled time. One of our service people was from Columbia. He spoke to us in our native language (spanish) which made us feel very special. The food was well prepared and presented very beautifully with little waiting time between courses. All in all we will return...it had been over 15 years since our last "date" and will definately wait as long in the future to go there once again."

"I had made a reservation prior to my Doctor putting me on a vegan diet. We had thoughts of cancelling but spoke to someone at Flagstaff House and they said they could easily accommodate my diet. They had prepared a vegan dinner roll, vegan appetizers, prepared a special vegan entre plate, and had fruit over vegan sorbet for desert... It all was incredible. My date had a fantastic filet mignon with amazing potatoes and she said the wine was the best she'd tasted. All in all an amazingly incredible experience; easily among the best I've ever had..."

"We were celebrating our 20th wedding anniversary. A pretty big day.

We had requested a table by the window in advance and when we arrived ahead of our reservation, the maitre d was not available.

They sat us quickly, but no window tables were available. (note, a window table at this restaurant is a must)

After a fabulous amuse bouche, Scott (the maitre d) approached us and said a window table was available. They moved us quickly and efficiently. On one of the busiest nights of the year.

Awesome.

Nothing but professionalism and class at this restaurant.

Something a veteran of the food industry can appreciate.

Highly recommend for food and service.

Thank you for a wonderful anniversary memory."

"This is by far the most amazing dining experience I've had in ages. The food was delicious and so very well presented. The service was impeccable. The chef sent many special treats to our table to tease our palates. The choices on the menu were so incredibly varied - it would easily suit anyone. I'd often read that sea urchin is a delectable tasting seafood. I actually got to taste for myself and thoroughly enjoyed the appetizer!

"We had the 9 course tasting menu and it was mediocre at best. They ran out oysters and substituted two steamed shrimp and a bed of greens. Later in the meal they serve another dish on the same bed of greens. We specifically told them that I the only thing I did not like was salmon - and the first course that came out contained - you guessed it - salmon.

The service was quite poor as well.

WAY over-priced. WAY over-rated. Will not be back. Not recommended."

"Flagstaff House is fine dining at it's best: very professional and sophisticated. We celebrated my granddaughter's 5th birthday (never too early for an introduction to fine dining) at the restaurant at the earliest seating - as the house filled, she was the only guest below the age of 20 something. My grand daughter loved it for the over two hours of the experience and the waits staff fussed over her. A wonderful experience - taylored a simplified entree according to her preferences and provided a "sophisticated (what else)" birthday decor and special Birthday treat (and put her name on the menu !). Very unusual, I'm thinking, for a fine dining restaurant - the waits staff is to be commended for a great evening."

"Service was impeccable. Atmosphere is incredible. And while most of the food was very, very good, some of it was simply so-so. Perhaps I misread the menu descriptions but the dish listed as "foie gras with sweetbreads" tasted like neither. What should have been a fine marriage of two luscious, buttery, organ meats came off as bland and uninspired. Additionally, what was listed as "Duck breast with Crispy Confit" was misleading: The confit was shredded and mixed in with the gnocchi. There wasn't enough confit to dress a wing--much less the tradional leg and thigh. Please don't tease food lovers with the promise of confit and then deliver minute shreds. Either it's confit or it isn't."

"Lovely ambience, good and attentive service, salad very good, dessert outstanding wine list excellent, main course red snapper fair, could not taste the fish, over powering sauce, impossible to taste the crab meat in the sauce. Wifes steak was slightly over cooked.I asked the waiter his impression of the snapper, he thought the sauce was rather good. I could see and hear that there was a lot of thought as to the acoustics which is wonderful."

"Service is always excellent at the Flagstaff House -- the staff is really well trained unlike several other high end restaurants in Boulder. Our party tried the 4-course tasting menu and were pleased with our choice. Just a note -- everyone at the table must order the same tasting menu and there are no choices available which might make the menu difficult for non-meat eaters. The starter courses were excellent, the entree was unremarkable "steak and eggs" although a good try at innovation on rather pedestrian fare, the dessert was okay but no where near as good as the complimentary breakfast pumpkin bread gifted to each couple dining at the FH. The wine list is comprehensive but pricey."

"Flagstaff House is the perfect spot to bring a loved one for that special occasion. The waitstaff were accomodating and professional. The menu choices were unique and delicious. Throughout the night we were not only treated to menu items that we had personally ordered, but were brought special selections from the chef. I placed an order for a flower arrangement to be delivered and it was waiting for us at the table when we were seated. I applaud the expertise involved in our night out for my wife's birthday and would recommend this venue to anyone out there who is looking for a night of splendor. The view of Boulder's lights at night is alone worth the price of admission."

"This is a restaurant we like to go to for special occassions. It is a bit too expensive for regular dining out. The three of us each had differnt entrees that were excellent. My wife expected the pinot noir reduction with the fillet mignon to have a more distinctive pinot noir flavor. The fois gras that accompanied the filet mignon was outstanding as it was in the appetizer that my daughter and I shared. The sommelier made an excellent recommendation of a modestly priced pinot noir from California (Diersberg) that had the distinctive "California Pinot Noir" character."

"My wife and I were married at the Flagstaff House and have been returning annually since. The food has never yet failed to delight, the wine list yields new treasures at every turn of the page, and the service is casual yet synchronized perfectly to the European-paced meal. It's a perfect place for both a romantic meal for two, and to enjoy with friends. The staff never fails to turn dining into an art, both theatrical and gustatory. I can't recommend any restaurant more than this for those moments when you have a few hundred dollars burning a hole in your pocket. My wife and I can't wait until next year when we can return again."

"The overall experience was memorable, from the moment we were greeted at the door, to the door opening for our departure. Service is warm and personable, without being overly familiar. The staff is knowledgeable and efficient but not stuffy. The little touches make the difference here--from complementary appetizers to the offer of a cup of hot water to warm my chilled hands. Staying on top of the note we wrote with our reservation, they personalized our menu with an anniversary greeting and surprised us with a dessert, also emblazoned with "Happy Anniversary."

The food is top-notch, with the butternut squash soup, as the star. Creamy, laced with nutmeg and poured hot over pine nuts and cranberries, it could stand as a meal on its own."

"We had a very good meal, not a great meal. Wine list was impressive. Appetizers were excellent. Tuna tartar was beautifully presented but then "prepared" table side. Which meant a server mashed it together so you felt like someone just man handled your delicate food. Arugala salad was fantastic. Entrees seemed overpriced, the lamb wasn't juicy and was the disappointment of the night. Although it looked medium rare, it didn't taste like much. Chicken dish was rich (risotto was a little too al dente). Dessert was decadent, coffee was nicely presented. We sat by a big glass window, beautiful view but restaurant good use some updating. For the total price of $300: 2 apps, 2 mains, a dessert, coffee, bottle of wine ($95), I would go elsewhere."
