The historic Marshdale Lodge which was built in the 1920's is now home to The Bistro, where traditional European cuisine meets the quaint locale of Evergreen.

"We went here for Mother's Day and my birthday. Server, Aislyn (sp?) was wonderful!! Very knowledgable about the wines and pairing with our entrees, she was great. Food was also wonderful, seared tuna for appetizer, pappardelle with lobster and halibut for dinner, and then creme brulee for dessert. Very nice and by far, the best restaurant we have been to in Evergreen. One nice change would be the parking lot, not paved so got kind of muddy."

"This restaurant was far above my expectations. My wife and I were celebrating our anniversary, and actually, we were one of three couples in our immediate area all doing the same. The food was excellent. The staff was fast and friendly. The atmosphere was superb. I would highly recommend this for a special occasion, or even just a night out."

"First, the food is as good as it gets around Conifer-Evergreen. It's solid, but not memorable. Had the rabbit pate (quite good), the baked brie (similar to Costco's), the beet salad (standard salad, very good) and the lamb chops (which were great, but served 2 for approx $30). Wine list is desperately wanting (hope they have a corkage fee for next time). Decor is mountain-ish (kinda like a diner, no tablecloths). Attire was off the course golf clothes or jeans. It's right around the corner from us so we'll eat there when we don't feel up to a trek to Denver."

"Both steaks ordered (filet and ribeye) were improperly cooked. One ordered medium (i.e. slightly pink) was served twice almost rare. The other was served almost room temp... like it had sat too long while waiting to be served. This restaurant charges premium prices for meals, but doesn't recognize that with higher prices some higher expectations. Save yourself $20 on your meal and head to the nearest Outback.
In all fairness, the manager did comp the meals without prompting... but the entire experience became almost comical."

"Always a delightful experience at The Bistro! And hey, we got the best behaved babies of the year award! Great food. Great service. Very nice pianist for entertainment. "I took clients to dinner at The Bistro. It was perfect. We really enjoyed it. The service was perfect, attentive but not stuffy. The atmosphere was wonderful. We sat on the porch where we could look out on the valley and watch the local foxes run across the field and a family of deer wander right by our windows. The drinks and food were both superb. We tried the duck appetizer special and it was delicious and I don't normally even care for duck. I would highly recommend it."

"Made a special trip from south metro Denver and brought my mom for brunch. We all loved it. This is my third or fourth trip to The Bistro at Marshdale, and have had a great experience each time. "It's difficult to find stupendous sevice and food wrapped up in one package. The Bistro is it. And it's a nice drive through the countryside to get to it.
We found it by accident looking for a place for Easter brunch and hit a homerun. Can't wait to go back and try it out for dinner if the brunch was that good! Everyone there was very courteous and appreciative of our business.
It strikes me as the perfect cozy spot to be "stuck" in during a blizzard while you're seated by the fire having a quiet, romantic, delicious dinner. See you soon!"

"We enjoyed our first dinner at the Bistro for my husband's birthday. I had the special, pheasant stuffed with pork, garlic mashed potatoes, and a steamed vegetable medley. He had the mahi. Both were excellent. Our server, Michael, was excellent as well. We finished our dinner with the bread pudding and it was the best I have ever had. The Bistro is an Evergreen gem."

"I don't feel "nice" about a fair food rating, but the trout was cold, salty and not very tasty. The risotta was lukewarm and ok. The pear salad was delicious. The other salad ok. So I guess "hit and miss" on the food, so fair. All in all, the ambience made the meal. The service was slow, and the food disapointing. I wish the food ratings on Open Table were more accurate for 3 star restaurants. Too often they're rated as 4."

"Went to the Bistro in Evergreen for dinner with a group of 3 friends, who are FIRM in what they like and what they don't like (picky eaters)... the fact that they were extremely pleased with their meals - speaks volumes for this historic treasure. At first, I was aware of the noise level in the area we were seated and craved a quieter place to sit, but the kind and confident server soon enabled me to tune out the noise... and after the food came - I never noticed the 'energy level' again!"

"Great Local spot. The food was excellent. We went for annual "5280" special price night, and the place was packed, but all the staff were smiling, friendly and helpful. As it turned out, my wife ordered one of the specials that night, and after we got home, I thought that the bill total seemed a bit high (even accounting for the wine we ordered that was not included with the "5280" pricing). I contacted the restaurant the next day, and they explained that there was a $10 upcharge for the special, as it wasn't on the "5280" menu. When I explained that we were never notified by our server of the upcharge, the staff immediately offered to credit the difference to our credit card account. No argument! We'll be back."

"We were very surprised to be put at a single table in the bar rather than the restaurant area as anticipated. Whiile the servers did an excellent job swinging by our out of the flow table, there was noisy table of 5 in the bar destroying the ambience of our dinner-what was especially disappointing was that the loudest member of that table was an off duty employee of the restaurant!"

"Beautiful mountain gem with food as good as the setting. Our steaks and salmon entrees were great, but the pear, gorgonzola, arugula salad was to die for! Dessert was good except the creme brûlée, which had not set up."

"The Bistro has an nicely diversified menu. The dining area has the feel of an old lodge dining hall.The staff was attentive and genuinely pleasant. Bridget was our server and she is simply outstanding with her great service and charm! We were there on a Friday night, so it was crowded and extremely noisy. Parking on CO73 is also a thumbs down. Overall, it was a pleasant experience and we plan to visit again during the week when it is hopefully less busy."

"We have been to the Bistro many times previously. Good food; good service; but my complaint is always the same. There are NOT enough parking spaces for the cars. Many cars have to be parked on Highway 73, which means that the patrons have to walk in the snow because there are no sidewalks on Highway 73. Even if you are lucky enough to find a parking space in the restaurant parking lot, you have to walk down an icy, snowy path to go into the restaurant. The owners definitely need to cover the pathway using ice melt to get rid of the snow and ice. The pathway is extremely slippery and dangerous. If someone does slip and breaks a bone, I suspect the restaurant will be in for a hefty lawsuit against them."

"The Bistro in Evergreen is a very unique cozy dining experience. A restaurant tucked away in the pine trees and worth the drive up to Evergreen. "My girlfriend and I picked The Bistro for 5280. We both enjoyed the dining experience very much. Not so much a romantic place, but a nice neighborhood spot. The food was very good ( me the salmon, my gf the brisket ). This was our first time there, but we'll be back."
