Named "Best Barbecue in NY" by both New York Magazine and Time Out New York, "Top 10 Barbecue in the U.S." by the Wall Street Journal and "Best New Restaurants of the Year" by New York Magazine, Hill Country takes its "cue" from legendary Texas barbecue joint Kreuz Market and its distinctive dry-rub style. Hill Country's brisket, sausage, ribs and other meats are smoked low and slow over Texas post oak. The barbecue is served in butcher paper, counter-style by the pound, with traditional trimmings. Hill Country features two full bars with an extensive menu of long neck beers, tequila and bourbon, and a state-of-the-art sound system and stage for live music celebrating the thriving Austin music scene. Signature versions of classic southern sides and sweets include Longhorn Cheddar Mac & Cheese, Campfire Baked Beans with Burnt Ends, and the Original PB&J Cupcake. A marketplace full of Lone Star State favorites includes: Big Red Soda, Blue Bell Ice Cream, Kreuz Market Sausages.

"Something's up (or down?) when you go to a barbecue restaurant and enjoy the sides more than the meat. I think their cafeteria style method is different, but I don't get it, and I think the place is overpriced considering this weird service aspect and that the meat just didn't blow us away. Oddly, when I've had their catered food at a party, the meat was so much better.
Positive note: the sides were great! Sweet potato mash, coleslaw, cucumber salad, and collard greens were delicious. Others at the table enjoyed other sides too. I felt that this is where we got our money's worth on "All You Can Eat" night."

"We had reservations so expected a nice table but were seated right where all the traffic passes by and there were many other tables empty. The food was ok, the ribs were good but very fatty, the sides were so-so (we had mac and cheese, cole slaw (icky), corn pudding (good) and beans (very good)). The place was very, very noisy and the tables are way too close to one another to be enjoyable. The service was fair. There are many other places I would rather go before returning here."

"This was definitely not the Hill Country when Travis was the manager and Dale was working behind the counter. Before having to cancel our drink order, we had waited over 25 minutes without so much as an explanation or apology for the delay. Most places would have had the dignity and the professionalism to bring the drinks anyway and say "They're on the house. Sorry for taking so long." Not the "new and improved" Hill Country. Then after waiting 10 minutes on the line you wait on to order and receive your selection of ribs, chops, pieces of brisket, chicken, sausage or pork....we were told to come back in about 5 or 10 minutes because
the only thing "ready" was the whole hog!!! It was 6:30 for Pete's sake! What's going on, folks?

"Very good BBQ-food, a little difficult to understand the way to order food for a visitor from an another country but very amusing to talk about afterwards!! High music which made it a little difficult to converse.
Would recommend it to friends for the experience of eating Texas-style!

"Hill Country is the very epitome of American waste and excess... and I love it! Generous helpings of meat in all its shapes deliciously barbecued to juicy perfection. This is the place you want to take your annoying vegan cousin with the Liberal Arts degree she never seems to finish. The one thing that holds back the 5th star is the sides that seem a little overworked and could have been better. As of now many of them feel like an interchangeable mush. Just wash down the meat with bear served in mugs instead (no really, they are mugs) and don't bother with letting any greens, beans and slaw take up valuable stomach real estate."

"I went here on the "All you can eat" night which is a good value and allows you the opportunity to try many things. The ribs were really good but I think Neelys has the edge here. The brisket was excellent and all the sides were tasty for the most part. The real downer here was the service. It was all you can eat so going up to get the food wasn't the problem....it was trying to get something to drink or dessert. A major ordeal and I gave up after awhile. I literally had to chase down the waitress to ask for our bill. If the service was at least normal this place would be a 4 star easy. 3 is still probably too good of a rating but I'm assuming service isn't always that bad and the BBQ really was good."

"If you like Texas BBQ...RUN do not walk to Hill Country. I have been here abotu a dozen times and am never disappointed. I have tried alomost everything, but my two favorites are The Short Rib (TRUST ME, you can't even finish one!!) and the Moist Brisket... there is none better!!!) The MAC & ChEEZE could only be made better if the added Bacon. Definitely on my A list!!"

"My husband and I are BBQ fanatics and we were hoping to get at least as good of food as home at HC. Well for the most part that wasn't the case except for one item, the beef short rib which was excellent but also EXTREMELY overpriced. The chicken was tasteless, the pork ribs were OK, the HC links not good and the prime rib was OK at best, a little tough and overpriced. The sides were better than the meats overall, their mashed bourbon sweet potatoes were to die for! The problem with this restaurant is that in addition to the food which is overpriced and overall not very tasty, you have to got on line to get it and by the time you are back at your table it is warm at best and soon after starting eating it is already cold! Would not go back!"

"Hill Country's food is super but the Barbecue portions are so enormous that we have to vote for a special occasion. No service to speak of: food is orderd at a counter in this share-what-you-can menu of beef, pork, chicken, ribs, sausage piled on brown paper sheets, and you can carry it back to the table yourself. Sides are fresh and delicious, all meat is excellent quality, just the quantity is overwhelming. Will definitely be back with a hungry group next time... Also late night live music downstairs, fun, but you'll be too full to dance..."

"We came for AYCE bbq on Mon. Although advertised as being brought right to your table, it was not. We retrieved our meat with no issue. The sides, however, were not as easy. The sides guy seemed confused when we asked for the amount our server told us we shoudl choose and didn't help us navigate the process at all. We had to ask for the same drink refills multiple times. I don't often complaint, but here your only job is drinks; you should be attentive and write it down if you think you'll forget. By far the worst was paying for some reason their system crashed when one in our party used his card and despite making us wait for over 25 minutes, they were rude to my friend, telling him this was his fault, and never apologizing!"

"May be I missed the part where this is not a full-service restaurant. You pick what meats you want to try and how much of it, but you have to get up from your table and stand in line to place your order. They will cut you a piece or two, you tell them if you want more or less. I tried the prime rib, brisket lean and turkey. Prime rib was ok, brisket lean was way too dry and the turkey a little on the dry side too. Then you go over to the sides counter and they give you whatever size you want.
There are no plates and I did not enjoy eating my meat off of a piece of butcher paper. There was no salt or pepper on the table which I guess you have to ask for and the napkins were a roll of paper towels. Hubby liked his but I won't go back"

"Much better than the real thing in Texas' Hill Country, i.e. Austin and surrounding vicinity. Pork (ribs, chops, and belly), beef (ribs,
shoulder or roast beef and prime rib), chicken and brisket served moist or lean (get the "moist") are outstanding as are the sides.
Desserts, especially the Blue Bell ice creams are not to be believed and you may not have room for them anyway. Huge beer, bourbon and tequila selection along with great mixed drinks and a 2-for-1 special on Tuesday nights. A great place with great food and even has live music after 9 PM.

The sides were good but my pork ribs were very salty and unedible.
I was really hankering for the smaller baby back ribs which they don't have -- the larger pork ribs were dry as well as too salty.

"We were a little disappointed with the pork ribs, moist brisket and the coleslaw. The beef ribs and sausage were delicious and the green been casserole was outstanding. The cooking is authentic even if it could have been better executed - this is the closest I've come to the barbecue experience and flavors I have enjoyed in several Austin restaurants."

"I always love going to Hill Country and have been a loyal customer for years, but really don't love the change they have made with regards to the servers now only bringing drinks and desserts. Now, instead of ordering at the table and having your food served to you, you actually have to go stand in a long line to get your own food, destroying the flow of the meal and interrupting the comfortable, relaxed ambiance talking and relaxing with friends which is part of what I looked forward to at Hill Country. Not a positive change for the $27 I spent. Plus, for the first time we had to sit downstairs, which is fine, but they had a live performer - who was great! - but we couldn't really have table conversation."

"I've been to Austin, the actual epicenter of Hill Country in Texas, and at a number of their best pit barbecue restaurants...drum roll...Hill Country in NYC surpasses those places! Hill Country on 26th Street does them all one, two, even three times better with terrific pit barbecue meats; daily specials and incredible desserts that are not to be missed; 2-for-1 cocktails on Tuesdays along with a barbecued whole hog; Wednesday's is mouth-watering chicken wings; Thursday's and weekend nights offer the creme de la creme, pork belly with a chili rub. Often overlooked are slices of prime rib and pork chops. You absolutely do NOT have to order by weight; ordering by slices or by the piece is perfectly acceptable and even preferable."

"Dry BBQ is not really my thing. The is virtually no service here. You have to get up and get your own food with a "meal ticket". Based on the way this meal ticket thing works i am sure that a few people have tried or even succeeded in running out of the restaurant without paying. It was an interesting experience."

"Good solid place for meat. Texas barbecue is dry, a little peppery, and leaves the meat nice and pink. The cuts were a little fatty, but that's not necessarily a bad thing with this style of cooking. It was great for my group of four friends to get together and have some dinner."

"I'm amazed how difficult it is to find good BBQ in NYC. Luckily, my search might be over. I opted for the all you can eat option which is a great value. The Ribs did not disappoint. I've gone through my whole life hating brisket until I had it here (the moist version), it erased the memory of my mom's brisket. Everything was cooked exactly as it should and all the sides were great except for the Pinto Beans (unless you like REALLY salty things). My friend really liked the cole slaw and said it reminded her of her mother's. I think she said it had apple in it. Only 4 Stars because of the Service, staff is friendly but aren't attentive at all. I got tired of waiting so I gave up on ordering another beer and opted for the check instead."

"NEVER AGAIN! Arrived on-time for our reservation and was promptly seated (good thing..or so I thought) 45 min into our meal a manager informs us of an "out-time" because they needed our table to accommodate a larger group and we had to leave..actually we could move to the bar if we wanted, but they needed the table. What's the point of a reservation if another reservation is going to be treated as the priority!? And only 45 min?!...people stay longer at starbucks!! Don't waste your time, there are other palces to go!"

"Another visit to Hill Country and as usual, you're not going for the service or the opportunity to have intimate conversation, you're there for the food. The moist brisket and the corn shoepeg pudding, as usual, were the standouts to our group. The smoked chicken wings were available the night we were there and we liked them a lot as well."

"Moist brisket is best I've ever had... Fantastic smoke aroma in the room mirrors the smoke in the brisket and chicken. Ribs were fine but pork spare ribs were still a bit fatty and not as fully rendered as better ones in Texas... Moist brisket is a MUST for any who like BBQ"

"BBQ was good, but not quite Cooper's or Salt Lick. Really came for the talent, but it was a refreshing taste of home in the middle of a week long stay in NYC. Get some Shiner and you will be good to go, I am from Texas and we make fun of people who drink Lone Star because it is not good beer."

"Hill Country is someplace I like visiting for lunch in the Chelsea/Flatiron area and my visits for lunch were always well regarded. I thought testing it for dinner might be fun for myself and a friend from Florida.
Knowing how crowded places can get in NYC, I wisely booked our visit through Open Table, but my good decisions ended there. Upon arrival at 7pm, we found the place crowded. Once seated in the downstairs section, we had to walk upstairs to a service line. I could see one person working at each counter with 30 people in front of me from counter to stairs. And they were talking instead of working.
We should have walked out then. This was a Culinary Management disaster. Zero oversight.
In the end, the food was good. That's"
