David Burke's Primehouse in the James Hotel

The first chef to own his own bull, Chef David Burke's commitment to quality is evident in the USDA prime grade, hand-selected beef served in David Burke's Primehouse. The restaurant dry-ages its meats in a Himalayan salt-tiled aging room on premise. The result is perfectly marble-ized, tender beef with a rich depth of flavor. Tours of this unique facility can be arranged upon reservation.

David Burke's Primehouse continues to redefine modern American cuisine by pushing the envelope of culinary creativity, marked by notable dishes, such as Surf and Turf Dumplings, Wagyu Beef Sashimi on Himalayan rock salt with mushroom chips and truffle sauce, the award-winning 55-Day Aged Bone-In Ribeye and the "South Side" Bone-In Filet Mignon.

"I am a steak house snob and this is a really good one! The dry aging of the meat (only rib eyes and strip steaks) was the highlight. I also was able to taste a dining companions bone in filet and it was phenomenal! The crab mashed potatoes were very good but not a lot of crab flavor. The mac and cheese was weird and got mixed reviews. The appetizers and desserts were innovative, fun and extremely memorable. The ambiance is classic steak house; close, crowded and noisy. Go now...hurry!"

"Ordered the rib eye aged 55 days medium rare - I even clarified qualifications for medium rare at this place - was reassured "warm red center." 1st attempt came well done to medium well, although I will say the two bites I had had excellent flavor. 2nd attempt came really rare - so rare that the flavor was lacking, at which point I gave up - oh well, if I have to choose between under/over cooked, I'll take undercooked, but at $65/steak, do I have to choose? My friend had the KC Strip - they got his right. Really wanted to like this place given the great reviews but no excuse for a steakhouse in this price range to over/under cook a steak, especially in this City. Just use a meat thermometer to check the temp. before sending it out!"

"The dry aged 55 day Rib Eye is amazing
and the Red Velvet Cake in a can is unbelievably
rich, yet airy and perfect for 4-6pple.
Love the place one of best steaks ever.
Must visit for anyone that is a lover of fine steaks.

"The whole experience was fantastic from the service to the food to the tour of the meat room. If there is anything that might have been a little disappointing might be the side dish (macaroni) we ordered. The rest was fantastic and the service was extremely attentive and pleasant. We will definitely be back when back in Chicago."

"Waiter's explanation of what to expect from the different levels of aging was very helpful. Te steak lived up to our expectations and the service was great. Amazing how all the service staff maneuvers the tight spaces. The popup bread in the can was a very nice touch."

"Nothing special. The bread and desserts were the best part of the meal. Steaks were good....not great, nothing special. The side dishes were okay at best. I went with a large party and as we were drinking our wine they kept pouring more in everyone's glass even if they didn't need it. So naturally it would empty a bottle quickly. So the wine drinkers would end up with an empty glass and the sippers would have a glass 3/4 full.
Being a foodie, I wouldn't recommend it."

"This restaurant calls itself a steakhouse, but actually it has a very fine repertoire of non-steak items. This is fortunate as neither my wife nor I really enjoy steak. It is located downtown, and generally it is not so incredibly busy that you have to reserve weeks in advance. There is a reasonable selection of raw oysters. Wines are nice, and the staff seem to be having fun and are very nice ! A new menu items -- halibut, was basically just a chunk of steamed fish with some colorful stuff on the side. The "peruvian chocolate dessert" also seem like the usual block of chocolate with a spoonful of strange ice cream favored here in Chicago (i.e. nothing special). We would prefer something more decadent. We do plan to go back."

"The restaurant exceeded our expectations. I expected the dry aged beef to be fabulous. A special treat was a visit to the meat locker after my husband, a rancher, expressed interest. What was shocking was the absolutely over the top desserts offered. The "Banana split", prepared at the table, featured ice cream mixed with carmel on a block of their Himalayan salt, compressed pineapple, sugared pecans, whipped cream and so forth. Unbelievable! My dessert, heavenly chocolate something divine with sides of delicious,, was equally outstanding .
I want to go back for the sliced prime rib burger and more dessert! Pricey but worth it.

"Bacon sticks are a must as much is the ceaser salad prepared table side. The steaks are great but this is Chicago and I'm paying over $50 for it so great is expected at that point. Though they don't disappoint the spinach gnocchi and the cheese popover bread are the real stars. Overall great dinner out"

"The $20.13 special was not only a good deal, but simply scrumptious, from the Beefeater martini, the big green salad, to the petite filet, which was NOT small and the perfect mashed potatoes. The relatively inexpensive wine from their list was very good, The hamburger the other member of our party had came with a mountain of delicious, cheesy fries and his vanilla ice cream was one of the best he's had. As ever, the popovers were wonderful.
We were able to linger over our lunch as long as we wanted. Again, a most enjoyable experience at the Primehouse.
The only reason I gave only 4 stars to ambience is because the bar is under construction, but soon to be completed.

"Brian was a wonderful and knowledgeable server! He recommended aged steaks that matched each of our four different taste preferences and was right on the mark! We ordered Caesar salad to start, three sides and an aged steak each. Brian recommended that we split two Caesar salads instead of ordering a salad each. I'm thankful we did because the steaks were generously portioned! Amazing food and service! A must-go!"

"David Burke's Primehouse was recommended to me three years ago by the Concierge at the hotel I was staying at. The restaurant is hidden in the James Hotel and took me a couple minutes to find. I visit Chicago once a year and I make it my business to have dinner at this wonderful restaurant. Last year I even asked my server if i could take a tour of the meat aging rooms in the basement. If you are a die hard steak person they just melt in your mouth. Plenty on the menu to choose from. Don't miss out on an total food experience."

"Some servers were a bit underdressed...e.g. torn jeans but maybe thats the atmosphere you are trying to create...?
We both had steaks...both cooked propely and had good flavor.
Our sides were good...did not care for the egg with the asparagus...Peas were good....Fries were tasty!
The upside down/ turnover rolls were very good...(sorry if the name is wrong)
The 2 little extras were a nice touch...(salmon on cucumber and the mini rasberry muffin...again sorry if the names are wrong)
Our server was good but not up to par as the server in the lounge area. Our server in the lounge area was very good. She was energetic about the restaurant, showed strong competency in the menu and food.

"The best steak I have eaten to date... I say that because I will be going back for the 75 day dry aged rib eye! I had the 55 and it was cooked to perfection and tasted superb. The sides were great. We started with Kobe Carpaccio and the Smoked apple wood bacon sticks (I am a hog fan and these were great). We tried the spicy Caesar salad with the crab croutons. The salad was great skip the croutons. Deserts were also fantastic. If you can afford it this place is definitely a don't miss. If you can't afford put it on the CC and enjoy life you deserve it and it is well worth it for steak lovers. Oh and don't forget to take home some of the dry aged burgers. I just ate one of my ten and I am regretting not getting more."

"This was my first time dinning at David Burke's, the restaurant was very nice, the food was very tasty. The only thing I didn't like was that we had reservations at 9:15 pm and we didn't get seated until roughly 10:00 pm. I'm not a big fan of waiting especially when reservations were made in advance."

"We ate here multiple times, while staying at The James. Each meal was outstanding, a gastronomical adventure. The food is as beautiful as it is delicious to eat. A favorite bite was Bacon, carmelized with maple syrup and served with black pepper. It should be on the dessert menu! So decadent! We also enjoyed breakfast very much. Best fried potatoes ever and in-house jams. The desserts are designed to be enjoyed by one, not shared, and are absolute works of art. From pistachio foams to sour cherry bubbles on South American chocolate. Oh my! While the food may be the star here, the service shines, too! Attentive, friendly, and extremely pleasant. The wait staff actually functions as a team, something rarely seen these days."

"Great steaks. Sides yummy, except I wasn't a fan of the basil whipped mashed potatoes. Must ordered the Caesar salad with the crab crouton - scrumptious. Eaten here twice, both times impeccable service."

"Terrible experience. We got the worst table right next to the entrance ( in the hallway) even tough I made a reservation. The food was disappointing. I had to ask for salt ( and I watch my sodium!). The asparagus were raw and had no taste. I had seared tuna. It was a really small portion of fish and again, no taste. The waiter was terrible. he dud not even tell us about the specials or about the steaks. It was really expensive ( 2 entrees, 2 salads, 2 glasses of wine $180.00)! We were really disappointed and we will never go back."

"We were very pleased with our entire meal from appetizers to dessert. Those Kickin Donuts are to die for. I couldn't help but occasionally peak over at the tables near us to see what food gems they ordered. Next time I go to David Burke's I will be preordering their red velvet cake!"

"A superb all around experience, with prices you would expect at a steakhouse like this. While the menu doesn't say the size of the steaks, they are generous. We thought the potato pierogies were not very good, and the broccoli was bland, but the steaks and Caesar salads were superb. Overall, a wonderful meal."

"Had rezos for 9 pm. We were about 45 minutes early, planned on having a drink in lounge beforehand. Had to ask 3 different servers waiting on other guests in lounge before someone finally brought us a round, which took 15 minutes. Server never came back to see if we wanted another round, which we did since we didn't get sat until 9:30!! At least 1/2 of restaurant was empty, so why were we sat so late? Ordered a round of drinks before we ordered crab cakes (which was the best part of our experience), but got the food 1st. My salmon was cold, but my dates steak was fine. Ordered the carrot cake dessert (was 2nd best part of experience) and coffee/espressos. We didn't get the coffee/espresso until after we were almost done w/ the dessert!!"

"While you might not consider David Burke your favorite burger joint, if you're around for lunch and feel the craving for a top notch beef patty, Primehouse is your place. Reasonably priced, the burger is an amazing blend of different cuts, with very little to distract from the flavor: just some spinach and cheese of your choice.
I cam for dinner as well, would go back any time. And probably order another burger given the chance. I substituted the fries with the tempura broccoli, and they didn't even charge me extra!
Enjoy

"We appreciated that they accommodated our request for a table on the perimeter of the restaurant. The food was excellent, the service very good (it was Easter, it was busy).
It felt like the tables were really close together, although we were in a booth. That's the only complaint I could have."

"The bacon sticks (thick bacon cubes on skewers) and foie gras (first time I ever tried this) were amazing starters. We had outstanding Caesar salad that was prepared right at our table. Our main course included a bone-in filet, a 45 day dry aged rib eye, mac and cheese and crab whipped potatoes. That was all very good. A tremendous amount of food (doggy bags came in handy), but we also ordered the desert of the day that was delightful. The service was truly outstanding. This was our first visit to this restaurant and Matt, our waiter, provided suggestions that were much needed and greatly appreciated. I am looking forward to returning here to enjoy some other menu items."

"The food was very good. I had the seared ahi tuna it was pretty standard what you would expect from any restuarant the offers ahi tuna. The 55 day dry salt aged steak was a hit with my boyfriend. He got it rare and it had intense beef flavor. We got the asparagus which was a little spicy, truffle mashed potatoes, and onion rings with bacon mustard sauce, both were very good. It was a great place and a good meal, but I have to be honest I wasn't blown away by any of it! It was a $200+ dinner I would have liked it to be more exotic and flavorful. We may go back but mostly for the 75 day aged steak."

"The steak here is better than anything else I've had in Chicago. I eat steak at least once or twice a week... I'm usually a rib-eye guy, but was told to go for the Kansas City Sirloin, 35 days aged. I've had it twice, and both times was beyond astounded.
The dessert. What can I say? Creme brulee, a simple dessert? Not here. Mind-bogglingly good. From start to finish, our meal and overall experience was one to remember.
Lastly, I should mention that our server was really on point. I could tell she knew who she was dealing with (a couple of guys, ready to eat, last table sat). Normally one might expect to receive a hurried service given these factors, but she was AWESOME. Friendly, not hurried, DEEP knowledge of the food. Very happy."

"Went there to try the aged beef. Went on a Sunday night which usually means your getting the back end of the staff. Reservations were at eight thirty and the place was empty. Lack of people may had something to do with our experience. Music was a little prominent for the lack of people and sometimes tencho pop and steakhouse don't mix. Here they didn't. Food was interesting but not over the top. Sealed fois was great however the sauce on the plate seemed over reduced. Table side Ceasar was done well, nice floor worker however it was seemingly rote. Floor manager was friendly and got to see the meat cooler. For 250.00 two people with one glass of wine a piece, I wasn't blown away. 55 day steak was sinewy. Wall had visible dings"

"They should have noted that the James Hotel/David Burke's was under construction. As a result, the construction was a distraction during our meal and it felt like the staff was thrown off a bit as well. Service was minimal and it seemed like we waited much longer than we should have for our food. I'm sure this is a top notch place if we were to visit after the construction was completed, but as it is right now, I can't recommend it."
