Chimney Park Restaurant and Bar has a warm and inviting atmosphere combined with a straight forward approach to cuisine. The menu reflects seasonality and items produced within the region. Exceptional service and an award winning wine program will assure you an outstanding dining experience. Menus include an a la carte and 4 course chef's tasting. Chef and owner, Jason Shaeffer, embraces a refined but casual style in cuisine and dining. Shaeffer trained under renowned chefs Thomas Keller (Per Se) and Terrance Brennan (Artisanal) in New York City. He most recently opened 1500 Ocean at the Hotel del Coronado in San Diego gaining local and national accolades. Chef Shaeffer's vision is to create a destination dining spot in Northern Colorado. Chimney Park Restaurant and Bar is conveniently located between Fort Collins, Loveland and Greeley; Chimney Park is a short drive from I-25 to historic downtown Windsor.

"We were a party of 5 and we did the tasting menu, which was different for each guest. The food was very good/excellent-good preparation and good portion sizes (easy to over stuff guests with a multi-course dinner) It was fun to see the variety. There were a few misses-I was served farrow twice and arugula twice-perhaps the server got confused. I also got an olive pit in one of my dishes. There were moderate gaps between guest getting the same course. My expectations were higher in regards to the service-for the price point I expected a higher attention to detail-the wine tasting progression was a bit scattered. Wine glasses were cupped in the servers hands instead of served from a tray.
We will be back-overall we had a great experience"

"I dined at Chimney Park this park week with some customers and was impressed, as always, with the food. I think over the years they have gotten better and better. They recently took out the back wall of the main dining room and added a small outdoor dining area, and the view really improves the ambiance of that part of the restaurant. Highlights of this week's meal were the stone fruit salads, hamachi crudo, scallops, and mushrooms (oh those local mushrooms!). We didn't even have room for dessert. I highly recommend this place, they remember you and always make you feel like a special guest."

"Chimney Park never fails to provide a wonderful dining experience. The food is artfully prepared...the presentation is beautiful and everything is prepared to perfection. CP uses mostly local produce, beef and buffalo for their meat entrees. The fish is always fresh and delightfully paired with vegetables and sauces.
It is hard to say enough good things about this restaurant. If I could, I would be there every night! Bravo to James, Jason and the whole staff at Chimney Park."

"We went to Chimney Park for their Mother's Day brunch and weren't disappointed! The beignets, pork belly, smoke salmon, steak and dessert were outstanding. They even had a nice menu for our 6 year old son. We love Chimney Park and it is by far our favorite restaurant in Colorado."

"We visited on a wet Tuesday night for our anniversary dinner. The service and ambience were perfect and the locally sourced food was delicious. Jason did an excellent job in the kitchen and James, who is obviously an experience sommelier, provided the perfect combination of friendliness and knowledge in the dining room. "My wife and I enjoyed dinner on a quiet Tuesday evening (her birthday). The restaurant was fairly empty due to the weather. In any case, we enjoyed Happy Hour wine and apps at the bar prior to dinner. The meatballs and truffle chips were outstanding. For dinner, we shared a Caesar salad (different presentation and very good), my wife had the lamb, and I had the New York Steak. Both prepared very well.
Although, they did not have a bottle of wine I requested from their wine list, James, our host and server recommended a comparably priced bottle that was excellent. Dessert was just ok.
This continues to be a great (and classy) neighborhood restaurant. Chef Jason prepares each item on the limited menu very well. We will return."

"We have been going to Chimney Park since it was run by the previous owner/chef. Under Jason, the current proprietor, it continues to evolve ever upward in quality and refinement. "The food was excellent as always, we did the chef tasting menu, and the server was very knowledgable on the dishes he was serving us. We went on a Tuesday night with a reservation, but I guess it was unusually busy night because there was only 1 server, which definitley made the service suffer. We had to wait 10 minutes from the time we sat down to get drinks and then when the server did help us he seemed rushed and stressed, this is defintely not the service I would expect for the prices they charge for food. Had this been my first time here I would not return."

"Wow! My wife and I found this gem about a year ago after moving to the area. Don't waste your time looking at the menu. Just do the Chef's Tasting with the wife paring. They ask you what you can't have and then they choose your meal and pare it with a wine that complements the dish. It is amazing. We've been here 3 times and haven't had a less than outstanding dish yet. We love this place!"

"I just love this place! They just added a patio overlooking Windsor Lake so it will be great for summer patio dining.
We were the only ones in the place on a Tuesday night (an hour before close) so we had the place to ourselves. Last time I was there was on Valentines day and it was a bit louder than quiet, but still very mellow!!"

"Food, service and atmosphere were absolutely great. We had not visited Chimney Park for a while, and were impressed with the changes to the menu. The wine list was particularly interesting, with a wide variety of choices. All of the food was very well prepared - our server asked a few extra questions to make sure my steak was cooked exactly as I wanted. I particularly enjoyed my appetizer - the "bacon and eggs" were so good, I will be sure to return and order it again. I hope it stays on the menu!"

"Four of us had dinner tonight. As always, Chimney Park has reliable, beautifully prepared food of perfect portion size. I had the tasting menu of the chefs choice, and this was where they got 4 instead of 5 stars....the first 3 courses involved cheese which I thought an overabundance; the main was a perfect beef melt in your mouth creation, and then a chocolate dessert. I would have more appreciated a fish dish as the appetizer. Having said that, the arugula/beet/chevre salad was the bigger letdown, because this type of salad is now so overused. Time for CP to pioneer a new salad. Belly pork is another item I am seeing on everyone's menu including CP. I think CP could use a new infusion of originality while retaining their quality."

"Though it was not on the menu, they recreated a dish I had there about a year ago for me and it was simply amazing. My wife and I have specific recollections of each and every time we have been there which says something when so many meals pass without leaving a mark. The food is incredible and it's a great dining experience. The food is incredible, creative, and from vegetarian dishes to the best cuts of meat they will not disappointment. A little expensive but worth every penny!"

"Our meal was on a Sunday for drinks and appetizers, I had called the previous two days and left messages asking if a reservation was needed for the bar area, I did not receive a returned call for over 24hrs. Their voicemail also indicated reservations were needed as they were booked for three days. Upon our arrival there were two tables filled, very quiet. Staff was not put together, our primary server was very difficult to understand, and we listened to the hostess make numerous phone calls. We started with a moscow mule and wine, the moscow mule was not made properly; tasted of lemon water. Ordered 3 apps, which were served very promptly, the food was amazing though small in portions but great flavor. I would order carryout if returned."

"My wife and I had a wonderful Valentine's Day dinner. The restaurant had a fixed menu with limited choices that night, with the menu posted on line so that any diners knew what to expect.
It was a big night for Chimney Park, and the team was clearly ready and up to the task. In my opinion, the best restaurant in northern Colorado.
We'll certainly be back."

Service: Our waitress was inexperienced and she didn't know the food or the wine: Monbaziac is NOT "off-dry"
Food: The food was flawed. The "French Toast" preparation ruined the foie gras ($15 surcharge) by covering it with an extremely sweet syrup--so sweet that the wine pairing, a Monbaziac(!), was overwhelmed. My wife's filet was raw--she was not asked for her preference. The other wine pairings were nothing special, and the ruby port with the flourless chocolate cake was terrible.
Overall: We'll probably try again, but not on a Holiday--seems many restaurants don't do well."

"The chef did a remarkable job with the food presentation and the wait staff seemed quite knowledgeable with all the menu items. Al the food was very tasty and the recommended wine pairings were perfect. I would recommend this to anyone that enjoys fine dining."
