Guardado's
Guardado's serves up authentic, flavorful dishes from Spain and Latin America, in a casual and inviting atmosphere, in the heart of Bethesda, Maryland. We now offer Brunch on Sundays
Chef Nicolas Guardado and his wife Reyna opened Guardado's Restaurant in 2007. Guardado brought with him a wealth of experience, rising through the ranks at local-area tapas restaurant Jaleo to a seasoned head chef.
Now, he is infusing that knowledge into his own restaurant, as well as adding some popular Latin American entrees and some traditional dishes from his native Salvadorean background to Guardado's extensive menu.
The menu ranges from robust entrees to tasty tapas to delectable desserts. Notable recommendations include Gambas al Ajillo, Papas Fritas, Pimientos del Piquillo, Tilapia y Camarones, and Paella Valenciana, to name only a few.
Daily specials for lunch and dinner let you sample the mouth-watering cuisine from Spain to countries in Central and South America, at affordable.

"We've been a couple times, you need to order the paella right away because it takes about 40 minutes. There was some hard, undercooked rice in the paella but the flavors and presentation were great. The Calamares Fritos, Endivias Rellenas and Papas Fritas were all delicious. The Vieiras special (seared scallops) were slightly undercooked."

"Mother's Day brunch. It seems like they have never offered a brunch before, did not have enough wait staff, and had no idea what they were doing. The menu offered an all-you-can-eat brunch items menu, but instead of a buffet, they allowed diners to order what they wanted off the menu. This model only works in a well-staffed restaurant. Service was terrible. I could tell that the waiter was doing his best, and was very harried, but he just couldn't keep track of who wanted what. The food runners had no idea what items were supposed to go where. We ordered a few things that simply never arrived at the table. The manager was micro-managing the waitstaff. I would not go back there for brunch. The food was good, but overshadowed by bad service."

"We saw Guardado's Mother's Day All You can Eat Brunch Special from Open Table so I decided to venture and take my family there. The food was decent. The kids liked the entrees and definitely liked the dessert. However, two things were really noticeable that prompted me to only give two stars. 1) It was evident that there was a communication issue between the back of the resto and the front of the resto. 2) I got a Medium Rare Grilled Steak Tapa when I requested Well-done. That's a no-no. I told the waiter and showed him, and he understood, so I requested to switch to the any style eggs with tomato sauce, serrano ham, and homefries. That order also got messed up. "The mussels were small, stringy, and flavorless. However, the sauce was good. The endivias rellenas was very good, but the sauteed shrimp were only fair. The selection of wines by the glass is very limited and grossly overpriced considering their poor quality and lack of proper storage. The Terrasola sauvignon blanc was priced at $8.50 despite the fact that It is a available from moy wine merchant for $9.00 an entire bottle when I buy a mixed case of wine. The somewhat better Dolium malbec was priced at $9.00--strange since it is available from my wine merchant at only $8.25 a bottle when I buy a mixed case of wine. Finally, the coffee was weak."

"Easter brunch was decent. They offered a buffet with some typical breakfast items plus better items such as ceviche, salmon and tilapia (with the latter two cooked upon request, much better than being on the buffet line.) They also offered their regular menu (which is quite good), with one crucial exception: the one and only thing my son REALLY wanted was a pupusa (or four) and those were not available since the kitchen was using the griddle to make French toast instead."

"This is my third time going here the food is very good.
We thought we would give it another try food is very good.
The second time we went the staff forgot out tapas till it was too late.
It was ceviche . We were with our friends.
This time we thought we would give it another try. Well it was worse my food arrived way ahead of my husband. I waited to see if his food would arrive. Finally he had to talk to
the second waitress who brought my food. She thought it was the wrong order and it got cold. Our waitress was by herself for Sunday dinner and the second ( hostess) helped?.

"Great food - whether you stick to the Tapas or go for the paella - made with a risotto type rice that would shame most Italian restaurants. It does get crowded so make a reservation - obviously with Open Table. The service was fantastic - taking care of us without being overbearing. We'll be back."

"This restaurant is too small. The seating is not comfortable. The service is slow. Comparing the lomo saltado with other restaurants in Rockville, Gaithersburg, Cleveland Ohio, and Chicago the two of us who ate it agree it was on a scale of 1 to 5, a 3 at best. The meat was lean but lacked flavor and it was not hot by the time we were served. We would not go there again for lomo and we cannot think of any reason to go there again."

"Guardado's tapas was better than Jaleo's - we loved all the ones we ordered! It's a cosy little restaurant that looks deceptively small from the street and deceptively large on the website - so it's about right for couples looking for a quiet relaxing time. My only complaint was the service - too slow and very long before your server makes an appearance to ask how things are going? But the food was too good, so we might have forgiven the slow service, but they even missed a dish that we had ordered and had to wait way too long to get!"

"We love Guardado's! Great ambience, casual and fun. The food is fab, just enough variety of wonderful tapas to choose, great portion sizes, good prices. Pimentos with goat cheese, chicken with olives, shrimp, beef, pork tenderloin, mushrooms, veggies ... the list goes on."

"I was looking for a tapas place in Bethesda that was different. Based on the reviews of the food, I figured I would give it a try. The food was so good and worth going out in the snow. The wait staff was helpful and gave good recommendations on what to try. I can't wait to go back."

"Guardado's is an excellent restaurant. It fit our needs perfectly. We ordered the seafood Paella. They waiter said 1/2 hour wait time for Paella and it was exactly that. We enjoyed a salad and wine and then the Paella. Gave us time to talk, and we could talk because the noise level was normal. The food was well prepared, looked good and tasted good.
We recommend this restaurant."
