"From the appetizers to dessert, we enjoyed the food served at the Chop House. That said, the only negative was being seated in a side room with little air flow. The room was warm enough that it bordered on uncomfortable, even for women in light, sleeveless summer dresses. The single floor fan in the room was inadequate to cool the 6 tables/ 20-30 people in the room and detracted from the dining experience. If you request seating in the main dining room or bar, it will be a delightful experience."

"The food and the service were superb. The ambience is quite nice appearance-wise but unfortunately the noise from the kitchen area, which is open to the dining area, seriously detracts from the ambience. There was a constant, loud, vibration/mechanical sound coming from the kitchen. This sounded like ventilation equipment and indeed when outside the building this could be heard. This sound all but drowned out the music system and the combination of the mechanical sound and the drowned out music resulted in a very unpleasant cacophony which really diminished the dining experience. The Chop House would otherwise be 5 stars hands down."

"This was our first time at the Canyon Chop House. I wanted to take my parents somewhere special for their big anniversary and we normally go to chain restaurants like Outback, Red Lobster and Olive Garden. What a big step up! Our entrees ranged from $28-38 but were worth every penny. Everything was cooked to perfection and plated elegantly. From the first bite, we had all decided we needed to come back on our next special occasion. There were so many delicious sounding menu options it was hard to choose an entree! The wait staff were very attentive and made us feel special - the manager even came and wished them a happy anniversary. We will definitely be back!"

"We knew going in this would be more pricey than our normal Friday date, but there isn't anything that stands out as so extra-special that justifies the premium. The food itself was somewhat better and a little more creative but not particularly exciting. (Plums with lamb was tasty and unique, but orange-currant couscous was nothing to die for.) It was nice to finish our entrees and have room for dessert, but that says something about portion size. The service was just so-so, but it was a pleasant evening. We'll probably stick to Ruby Tuesday and Star of India for weekly dates, and keep to Jay's and Moot House for the special occasions. Of course, we're non-alcoholic and not big foodies so we may have missed things others would see."

"This was the fourth or fifth time I've been, and like always, the food, service, and atmosphere were fantastic. While it may seem expensive to some, when your bill arrives and you look back at what you've gotten, you think the bill is short by at least $100 or so.
I have never had a bad experience or meal here, and is always on the list of "things to do" whenever I'm in Fort Collins.
I also noticed that although a somewhat "fancier" establishment, you won't feel overdressed in a suit (or dress), yet you don't feel under-dressed in a nice pair of jeans and shirt. The guy we saw in short jean shorts was pushing that a bit though...
If you haven't been here - Go. Go now!"

"This has been our special celebration, special visitors and family occasion place for many years now.
It is quietly elegant - staff are all great- food presented beautifully, creative and realistic! It is on the quieter side, at least when we have been there. The quiet in this case is very nice - good for having real conversation. A smart sustainable approach is visible as well. Not over done - without a doubt the most sophisticated dinning experience in Fort Collins specifically because it is so subtle. Everyone we have ever brought there has enjoyed it."

"The appetizers were DELICIOUS! Probably the best scallops I have ever had. The steaks were a bit disappointing though as they were slightly overcooked and dry. However, they made great sandwiches the next day. The service was alright, but our waitress forgot two items, and we had to request that she remove them from our check. Overall, very nice setting and enjoyable experience."

"The food was first-rate -- outstanding, in fact. The restaurant advertises that it prepares all dishes from scratch, and I recognize that that means things take longer -- but even considering that. the wait for our entrees was pretty long. The service, though, was excellent. The one thing that might limit my recommendations to others is the prices. And, again, the food was great, but the prices were certainly on the steep side."

"We had a birthday celebration planned for 6. Took us one hour and forty minutes to get our food!! It was a Sunday nite and the restaurant was empty...absolutely no excuse although the waiter made one. The kitchen lost your order??? Wow, where am I?? After the first 25 minutes one would think that the waiter would get back to the kitchen and find out what was going on. Instead, it took one of us tracking him down- one hour and 20 minutes in- to get things rolling. 20 minutes later we had our food which was very good. We certainly were not in a hurry and had planned on a leisurely dinner but this pushed those bounds to the edge.

"The service left a lot to be desired - but the food was pretty good. My steak was cooked perfectly and the sides were well done - the dessert menu is somewhat lacking and the dining room is crowded and noisy - the lack of sound dampening unfortunately means hearing a lot of other diner's conversations.
This is a good restaurant, that could be great with a few basic improvements. If you're going to be charging like they do - you expect a bit of a classier experience all around."

"They offer a few other menu choices, but this is a house of red meat. The side dishes paired with the non-steak dishes were not a good match, so I chose the 5 oz filet with a side of garlic mashers and grilled asparagus. The wife had the short ribs. Steak was the best I have had in years, priced accordingly ($29 f 5 oz filet, but with two sides and a small salad). The short ribs were very good, also. The waiter did not seem to know his wine all that well, but we chose an OK Napa claret for $45. Desserts were good. but pricey. No comp f birthday dessert. Service fell short of expectations. 25 minutes between when we were clearly through with dinner & when we were approached with a dessert menu. 2 & 1/2 hours to eat, 1 hr too long."

"The food was bad. The casear salad dressing tasted like it was mostly mayonaise. I couldn't eat it. I ordered the asparagus on toasted polenta with a mushroom sauce. Presentation was lovely but after one bite the mushroom sauce soaked into the polenta making it mushy. So much for the "crisp" polenta. I ordered lamb shank which was delicious and falling off the bone. Cooked just right. The brussel sprouts served on the same plate tasted like they were cooked in vinegar making them inedible. The dinner was expensive and I felt ripped off having to pay for a meal that was so poor. Would not recommend this restaurant."

"The ambiance was very pleasant compared to most restaurants we've been to recently - the noise level was perfect for a romantic dinner, but was not so loud as to be distracting or unpleasant. As usual, the food was amazing, and our servers paid so much attention to us that we formed a conspiracy theory that they were trying to get us out of there as fast as possible! Of course, this absolutely was not the case, we were just being goofy over dinner as usual. It was really very nice - no having to wait around or flag down your waiter because they're too busy. Excellent dining experience, would highly recommend."

"Great gem. I have lived in Fort Collins for 20+ years and just went to this place and all I could think was why have I never gone before? The food was outstanding, I had the braised Lamb shank and it melted in my mouth and fell off the bone. My date had a steak and they even accommodated her wanting blue cheese crumbles on top. The service was great too, I like a lot of privacy when I eat so our server picked up on that vibe and gave us our space and still great service. Food was timely and hot, and I was only thrown off by the fact that this really nice restraunt printed their menu's on what seemed to be big paper bag like material that was folded up in your napkin. Espically when the drink list was in a nice leather bound book. Great Find"

"Everything was great. The only downside was the bartender was slow to get our drinks to us. I had to ask our waiter if he forgot about them. He gave some lame excuse about how th bartender was backed up but I observed that the restaurant wasonly half full and in somemtables, people were only drinking water.."

"We came in for Great Plates last Friday and had a great time. I'm not going to say the food blew me away, but I know we were only there for Great Plates so we were only getting a few options to choose from. The salad was something I could have make at home and our dessert was a bit burnt but I loved the steak and ate every bit of it. Overall it was a good time with great friends."

"Excellent food and atmosphere. We were looking for a place with a nice quiet setting for a leisurely meal and of course good food. Our second visit to the chop house and it fit the bill perfectly! What I especially like about the Chop House is that although it is a high end restaurant you can go there dressed as casually as you'd like."
