"Our waitress assumed I was driving, although I was the only woman at the table so when I ordered a third glass of wine she said I shouldn't have one. First of all, we all walked to the restaurant. Secondly, it was offensive and embarrassing. Way out of line."

"I have been to the restaurant twice...............and will continue to return so I can eat my way through the entire menu. Everything so far is outstanding. The Chef is every present; and makes sure all diners are happy and satisfied. I would rate this the best dining experience in Santa Fe."

"Upon arriving I was seated at the bar which overlooks the chef's kitchen, which offers great viewing . Service was swift. As a solo diner I was in and out in 30-minutes; just how I like it. Food was very tasty. I had the mesculin salad to start followed by the pan seared monkfish with lemon pasta, tomatoes, and pork belly. All this was capped off by a glass of Kermit Lunch red."

"It's May 2013 and Bouche seems to be the current hot spot in Santa Fe. That's good and bad; there is lot's of excitement but the service and possibly the food suffer a bit. Don't get me wrong, the food is good but not perfect. Same for service. We have eaten at other Santa Fe restaurants headed by Chef Dale and he is one of the best in the area so his game is off a bit here, at least for now. I can only attribute that to Bouche being new and jam packed. The close quarters and noise level don't help.
We will definately be back but will wait a while until the buzz dies down and the trendsetters get a new favorite."

"This is a perfect restaurant! Great, classic French Bistro, cozy, warm, delicious, flavorful, great service and reasonable. We sampled many of the dishes and were impressed by the finish, flavor and quality of the preparations.

"Our waitress, Andrea, was astounding, knowledgeable, efficient and if I were to open a restaurant I'd steal her away from Bouche! The bread is outstanding too! The desserts were very good.
Our main courses, that's another story, they were good. That is it, good. Not in the least memorable. Actually, I'd say ho hum. There were very few flavors that were anything but bland. The salad dressing was so dull that it tasted like plain buttermilk. Bistro food should be lively, flavorful, enticing. Particularly at these prices.
We'll give them a chance to settle in and we will try them again, stay tuned."

"The food was good - my wife had halibut and I had salmon. Both fish were OK, but lacked a distinctive flavor. For desert, we had profiteroles. They were large, but again simply vanilla (sic) ice cream, with nothing special to recommend. They need to replace the napkins with decent (lint-free) ones. The bad - we had decaf coffee that turned out to be full of caffeine - this is highly inconsiderate and irresponsible. Get your act together, guys!"

"Looking for a place to celebrate a landmark anniversary before a special trip, we settled on Bouche for the food. Good choice! Everything was exceptionally well prepared and fresh. DH's pork special was fork tender and the polenta really good, and my grouper was crispy on the outside moist on the inside. Perfect!
A small nitpick, not terribly impressed with the wine list, but this is typical of new restaurants. The prices were reasonable for a SF restaurant, but the wines are all young. Best bet would be some French Rose', meant to drink young and is good with almost everything. Too bad we can't BYO.
Chef Dale tries for a real French Bistro experience, and he has succeeded. Cozy and raucous, just as it should be."

"This recently opened spot is superbly done. The dining area is small and creates an intimate feeling. Service was attentive and knowledgeable. The spirit of the place is vibrant and thoughtfully executed in every detail. We enjoyed a rich French onion soup and herb ravioli with a crispy frog leg to start. Our delicious entrees were halibut and black mussels with garlic spinach and roasted kale as sides. Every gas a perfect expression of the flavor of fresh ingredients and intelligent preparation. The only off note to the meal were the desserts. These were tasty but much too large. We'd recommend sharing the profitarole dessert among three people. Despite the overstuffed ending, this is a great place for a delicious dinner."

"This restaurant opened approximately two months ago and it has been busy ever since. Although a very small room, with banquets surrounding the freestanding tables in the center of the room, the atmosphere is friendly. The menu is limited to bistro classics with two or three specials each night. A very competent wait staff takes great care in serving. The only problem is the noise level, which can very high during peak dining times. In the summer the small outdoor dining area just adjacent to the main dining room will open, which should help alleviate the noise issue. Otherwise, no complaints, it's a friendly place with wonderful food."

I had two guests unexpectedly added to my evening and Paul (their maitre d') worked hard to accommodate us even though we were first time visitors. Truly a gem and I will go back, repeatedly."

"I am of two minds about Bouche. First I am a chef, so I recognized the care with which the excellent raw materials were prepared. Great food. The room is cheerful and pleasant. The room was a bit empty when we got there but it filled up quickly. The tables are very close and soon we could not hear ourselves talking. We ordered the highest priced item on the menu and a bottle of wine and the waiter said:"are you sure you don't want an appetizer?" I heard him ask the couple next to us if they were going to have something to drink other than water. This sort of blatant up-selling is obnoxious. So I'd say great food but insulting service. Don't pack the diners in so tightly."

"The food was, as promised, a perfect rendition of bistro cooing. We started with oysters which tasted so fresh and briny-- a bit of the ocean to sharpen your appetite. I had the steak frites. the steak was cooked perfectly and so were the frites. the mjssels were wonderful and the tarte tatin was to die for. "Bouche Bistro is a gem. Authentic French bistro food at reasonable prices. The service is friendly and efficient. The Chef went around to each table to meet his guests. The onion soup was the best I've ever had. The bread is crusty and delicious. Coq au Vin, one of the specials, was wonderful. The place is small and a little noisy. That should be eased once the outside patio is opened. We will definitely go back. It's hard to get reservations because the word is out about how great this restaurant is."

"Our first visit to this charming French bistro in Santa Fe & we were delighted. Other people must've thought so, too, because the place was jammed. The dining room is small and maximizes the number of tables so the noise level is up there but the atmosphere is friendly & casual & very cheerful. Service is prompt & helpful. The food is the shining star at Bouche Bistro. Everything from the starters (some of the best escargot I've ever had) to the entrees was delicious. My 2 friends & I shared the large seafood platter: a big metal tray filled with ice and topped by a mountain of oysters, jumbo shrimp and crab legs. Being able to serve excellent fresh seafood in our desert town is quite an accomplishment. Highly recommended!"

"This restaurant is still quite new, so we'll see how it weathers over time. But, it certainly is getting off to a great start. Chef Charles Dale was attentive and engaged at all levels, greeting guests, delivering food to tables, asking questions and seeming genuinely interested in the responses. From the moment we walked in, we felt welcomed, by him and others. There was great energy in the place and the environment quite intimate, bordering on noisy but not so loud that you can't carry on an easy conversation. The service was very efficient and friendly without being intrusive. And, the food was superb. Well prepared with interesting touches. Wine recommendations were excellent, too (be sure to ask the price). Loved the whole experience"

"First of all the wait for a RESERVED (via Open Table) table was 45 minutes! To mollify us they gave us a flute (each) of bubbly and some tater tots a la francaise, and we watched fifty chic Santa Feans ooh and ash over the experience. The olive oil sautéed sole was mushy and tasteless to the extreme. (We both ordered it so didn't have a second entree to check out.) The sole was served on very crisp, tasty asparagus stalks. We shared a mediocre creme caramel, and exited quickly as the noise level was deafening. Why does nobody think of acoustics in restaurants?! We thought Chef Charles Dale batted about .333 at Terra. Good for baseball. Not good for a restaurant. C'mon Charles!!!"

"People shuld try the restaurant and make their own judgements. We may have been there on an off night. It was very noisy - difficult to hold a conversation at a table for four and we all have good hearing. It's new in town and locals are trying it."

"I can't wait to go back. The mussels were the best I ever had--though my friend's Pot au Feu was melt in your mouth and may tempt me when I return. Who knew brussel sprouts were so good? Bouche Bistro is small--it reminds me of bistros in Paris (though the tables there are even closer together). Our party of four enjoyed everything and didn't notice the noise level--though we had early reservations. Yum!"

"A friend and I very much enjoyed dinner at Bouche recently. The onion soup was outstanding and the Caesar salad delicious with a light, but flavorful dressing. The mussels were done perfectly in a light wine and onion broth and the bistro steak was delivered rare, tender, and very tasty. We thought the apple tarte tatin was extra special, but found the flourless chocolate cake and somewhat watery nutella sauce uninteresting. We enjoyed a delicious Russian River Pinot with our meal. The dining room can get quite noisy at times and will benefit from the summer patio. We were asked to move when our allotted time was up, reminding us we were in America and not France."

"So so for the price. The caesar salad dressing lacked anchovies and the salad was served in a small deep bowl that made eating awkward. The potatoes with the short ribs were underdone. Worst of all, it was frigid and felt like the heat was off. Good dessert, good service. The highlight of the evening: they're making the bread in-house, just like the previous restaurant, Aqua Santa. We'll try it again in the summer when we can eat outside."

"My husband and I were looking forward to dining at this new restaurant, which recently replaced our old favorite, Aqua Santa. We were quite disappointed. We found the food to be good, but not outstanding --we ordered the steak frites and the poached sole. The steak was tough, and the sole quite bland. The tarte tatin was over-cooked, and basically turned into applesauce. The chocolate soufflé was good, but not good enough to make up for the generally "so so" dishes that preceded it. And beware: the checkered red napkins that look right for a French bistro will shed all over your clothing!"

"Wow, what a fabulous eatery. I was so jealous. I thought my short ribs were the best, no comparison. The plate was a work of art. An ample lean piece of tender meat, small al dente carrots and potatoes. The clincher was the gravy/sauce. Want to know the secret.
