"An extraordinary place. Cocktails only. The staff (I don't have a better word!) determine your mood and then craft something to fit. They did it beautifully!
Finding the place is difficult, entering is difficult. All deliberate and all edgy. Makes you feel that you are doing something a little bit naughty. And well you might!"

"This review is in regards to the bar area (Smyth I believe): We enjoyed our experience and the cocktails that were customized to each of our needs. That being said, there seem to be some kinks that still need to be worked out and it was generally agreed upon by all in our group that a few more bartenders could make a huge difference for a place that is customizing drinks for everyone in the space. That being said, we look forward to going back and giving it another shot - the space itself is awesome!"

"After reading several reviews, we were excited to try it out. Unfortunately, it fell flat on all counts. We had a reservation and arrived a little early. The pompous doorman/hostess told us we'd have to wait until the exact minute of our reservation. While we waited, groups of 7, 4 and a single guy, all w/out reservations were allowed to enter and wait at the bar. Once went in, we had to wait at the bar while the other groups were seated and drinking. We waited at the bar another 30 minutes, with a water and an amuse bouche drink. Nice but we were already ticked. It's a mismatch of grandma's old furniture with zero atmosphere. Its another example of Dallas trying to be NY and missing the mark. Good for 20s crowd who don't know any better."

"We've been before and each time we've ended up with at least one cocktail among our groups that was really quite inventive and blew our minds. Enjoyed our drinks this time as well, with a few standouts as usual. My one complaint is that I spent half the night with my water glass empty, so I think the service could have been a little more attentive on that front."

"The drinks are uniquely prepared for each person according to their likes, which is a very neat approach. There is no drink menu. The drinks are superb, but it is like stepping back in time. The decor is very simple 70s, which is cool and different, but at the same time it lacks anything interesting to look at since the walls are bare. This is a great spot to grab a drink with a small group, but keep it to that only. It is not a spot where you can meet and mingle. It is very relaxed and you can expect about a drink an hour. There is no food at this time."

"The Establishment is not really a restaurant. Not yet at least. Right now it is the OpenTable 'name' for Bar Smythe. Bar Smythe is a speakeasy that only serves cocktails. Hi-quality drinks. Skilled bartenders. Only complaint is that they still have to work to improve efficiency. Takes too long for them to get back around to your table to offer a second round. I would go back though."

"Made a reservation via OpenTable for 9:15 pm. We were not let in the door until about 9:45 pm. And then we were not seated until 10 pm. The scheduling of reservations needs to be changed, and they need to offer some seating outside or in the hallway. The bartenders and the drinks were fabulous. While I loved the drinks and atmosphere, the front of house service (i.e. seating, timing, etc) needs work. Food rating is for the drinks."

"Very interesting concept. Our bartender/ waiter was very attentive and brought my boyfriend and I creative, delicious cocktails. I gave a low rating on food because there is no food on the menu-- wasn't sure how to get around that! Was a great experience for a few drinks. Would go back for a special night out."

"The Establishment was everything I hoped I would find in these boys new gem. The wrap around booths are welcoming and possibly the most comfortable I have ever had. Makes you want to sit and have no name cocktails for days. The guys behind the bar are the best of their craft! Without a menu I was able to ask for a spirit and flavor and they brought it to life! The music selection running through the air is also another reason to enjoy TE. A mix that can not be described and you must experience for yourself! I love this new place and will be recommending it to friends. I say go ahead and get a reservation to not only lock in your spot but to feel warm and fuzzy inside when you arrive and you have a sweet name card placed on your seat"

"As there is no written menu, the bartenders ask you your preferences and prepare something they think you will like. Unfortunately the bartender we had didn't listen to what we told him. Because of this, 3 of the 4 people in our party ended up with drinks that they didn't care for. The drinks were equivalent to what a good home bartender would make."

"Custom cocktails for the discerning palate. Our orders were tailored to our tastes by our server, who also made the drinks. Everything tasted better than expected. Prices were moderate/high (higher than expected based on an online publication's review and specific mention of lower than expected prices), but well worth the quality product. Highly recommended craft cocktail/mixology bar. Make a reservation as it is sure to fill up on weekends. Note: we did not have food, and I'm not sure there was food available. Food is rated "good" so the other numbers are not unfairly skewed."
