"This place is fantastic. The variety is incredible and the food was outstanding. Carlos greets everyone and the service is outstanding. The wine list is great and the wines are 50% of the listed prices on Sunday and Monday. This is, by far, the best restaurant in Colorado Springs and it rivals may places in Denver. I wished I lived in Colorado Springs so that I could dine at Carlos' more often."

"We celebrated our son's college graduation at Carlos' Bistro. It was fantastic. The food and service were spectacual. The college graduates were talking about the meal all weekend. It is obvious that Carlos give care and attention to the food and the wine list. We recommend Carlos' Bistro without hesitation."

"We just had another great meal here. Carlos told us they will be open 7 days a week from May through August with half price wine on Sundays and Mondays. We're going back next Sunday!"

"The food was exquisite both in presentation and taste. The wine menu was truly fun and the $50 dollar wine page offers a fun and extensive selection beyond the main wine list. The owner is very actively involved in all aspects of the dining and the energy he puts into the restaurant clearly elevates the restaurant to a top-notch level."

"I've been to Carlo's many times and have always been completely satisified. The owner is friendly and always tries to meet arriving customers in the parking lot (a real nice touch).

I've never been disappointed with the food and even though the restaurant is expensive it's well worth it. There's nothing equal to it in the Colorado Springs area.

Carlo's has instituted an additional "early bird" menu which is the same as his regular menu but at half price (and of course smaller portions). The smaller portions didn't bother us because with a shared appertizer and shared salad we were both stuffed. The bread pudding was fantastic and the portion was more than enough for sharing."

"Carlos' Bistro is phenomenal. Love everything about this place. The food is so carefully planned and paired with just the right sides and toppings. Carlos spends time with everyone who dines here, he comes out and greats you personally and checks on you throughout the evening. I would recommend this place to anyone and everyone. Can't go wrong with a meal here. Will be returning for another flawless meal very soon!"

"My wife and I think Carlos' Bistro is the best restaurant in Colorado Springs. We have been going there since it opened and have never had a bad or sub-par meal. Our out of town visitors always ask if we can go to Carlos'.

Carlos is a great host, very amicable and he works the room well. He truly cares about his customers. He is a pleasure!
