Here is the background on the makeup of our Restaurant.The Bistro was born in September of 2002.Owned and operated by Declan & Maria Hoctor, Executive Chef: Paul Hughes, and John & Angela O’Sullivan of Roly’s Bistro of Dublin (Ireland). Our Fare is American with a European flair. Executive Chef, Paul Hughes trained in the Savoy Hotel in London for 9 years as well as Roly’s Bistro in Dublin, two of the most respected hostelries in Europe. Roly’s in Dublin was just voted Restaurant of the year for 2010, also voted Chef of the year.
